How To Make Fresh Fig Wine
Heat water on stove in stock pot until simmering. While you are waiting for that, fill up a large container and begin sanitizing all of your tools according to the directions on the StarSan label.
When water is simmering, add sugar and allow it to dissolve. Pour sugar water into the fermentation bucket. Add coarsely chopped fruit to mesh bag, close securely and put bag into the sugar water. Mash the fruit with a potato masher to extract as much of the fruit juice as possible. Stir around a bit to incorporate everything together well.
Measure original gravity with the sterilized hydrometer. Crush one campden tablet and stir it in with a long-handled spoon. Put lid on top tightly. Add water up to the line on the airlock, then put the airlock into the hole in the top of the lid. Wait 24 hours while fruit is sterilized.
After 24 hours, add a packet of yeast and stir vigorously with a sterilized long-handled spoon along with the yeast nutrient, tannin, acid blend, and pectic enzyme. You are looking for the new ingredients to be mixed in well, and at the same time you are aerating the brew.
Snap the lid back onto the bucket, and add the freshly sanitized airlock back to the lid. Within a few hours, you should see some bubbling activity in the airlock. This means its brewing! Allow it to brew for a week.
After 30 days, siphon the brew again, dumping the sediment and washing and sanitizing the bucket. Return the brew to the bucket, replacing the lid and airlock.

Blackberry is my favorite homemade wine, so let’s start with that one. you’ll need:
15 pounds of blackberries1/2 teaspoon of ascorbic acid 5 gallons of water1 tablespoon of acid blend 10 pounds of sugar1 package of dry wine yeastIf your fruit has been sprayed, wash it. Otherwise, don’t. Then crush the berries to release their juice. I like to squash mine by filling a two-gallon flat-bottomed bowl or pot half full of berries and then mashing them firmly with my knuckles . If you prefer, of course, you can squeeze the fruit by the handful … but I find the knuckle method faster. Either way, if you use rubber gloves you’re missing half the fun.
Once you’ve turned your berries to mush, empty them into the nylon sack while you hold the bag over your eight gallon plastic can. Squeeze the sack gently against the side of the can to force the free juice from the pulp … then fill the two-gallon bowl half full of berries again, mash them, add the new pulp to the mass already in the sack, and so on. Repeat until all the fruit has been crushed and all the pulp is in the bag. Then dump in the raisins, tie the top of the sack closed, and leave it in the can with the fruit juice.
Add the ascorbic acid next. The purpose of the ascorbic acid, by the way, is to prevent the wine from oxidizing and changing color when it’s later exposed to air and light.
OK. Now you’re ready to heat five gallons of water almost to boiling and add it to the fruit juice in the eight-gallon can.

Start with at least 5.25 gallons of white grape juice to end up with five gallons of wine. Pour the juice into a carboy or other closeable container larger than the volume you will ferment, as the wine can foam or expand and ooze out the top.
White grape juice is actually green or golden at first, but it will turn a brown color after its pressed and as it starts to ferment. Dont worry, it will lighten to pale yellow or gold later. Use an airlock to keep oxygen out and allow the carbon dioxide produced by fermentation to escape.
Add wine yeast, according to the instructions on the packet. Keep the juice at a comfortable room temperature, as advised on the yeast instructions. It should begin to emit a light foam of carbon dioxide within a day or two, which signals the start of fermentation.
Remove the stopper once a day, or as needed, to stir the juice and the lees that will begin to settle to the bottom. If the fermentation speeds up and the wine foams out of your vessel, just mop it up and cool the container slightly.
