How Is Sauvignon Blanc Made

Sauvignon Blanc is produced like all dry winethe grapes are harvested and then selected for quality before being crushed. The juice is then fermented into wine. However, Sauvignon Blanc is a key component in the great French sweet wine called Sauternes, which is made by allowing the grapes to become covered with a beneficial fungus called Botrytis. Botrytis makes the resulting wineoften blended with a grape variety called Semillonrich, honeyed, and kissed with notes of mushroom. Sparkling Sauvignon Blanc is also increasingly popular in New Zealand, and each producer follows either a classic Champagne method of production, where the secondary fermentation occurs in the bottle or one called Charmat, where the secondary fermentation that makes the wine sparkling occurs in a large pressurized stainless-steel tank. When people ask are there different styles of Sauvignon Blanc, the answer is a hearty yes.

In the tasting room, Bryans wife, Lisa, has created a wine savoring atmosphere that is difficult to capture in words. What used to be a warehouse full of barrels, is like a 5,000 square foot canvas where Lisa is simply testing the limits of soul. All Sauvignon Blanc wine comes from the Sauvignon Blanc grape variety. In terms of where the grapes are grown, its all over the map. New Zealand Sauvignon Blanc is among the most popular, as is California Sauvignon Blanc, but phenomenal Sauvignon Blanc is also produced in Chile, Italy, France, and beyond.

Company email “No, I really dont use any gel or isinglass these days. Used to on occasion, but not anymore. I fine whites with Benotnite for cold stability. Benonite is an earth material, like a clay.”

Company Email “I rarely use fining agents of these kinds in conjunction with filtration. I used to use more of them, but over time simply found them to be unnecessary.

As far as ingredients go, really the only ingredient is grapes, unless we need to hydrate a must with water to avoid an inordinately high alcohol. I dont consider yeast to be an ingredient per se, and even if it were, its there naturally in every juice what ever is added beyond that is done so to bolster whats already there. We will fortify a must now and then with nutrients for the yeast, which is like giving the juice vitamins. There is some nitrogen in that yeast food, and I am not sure what the source of it is. I can contact the supplier if like to ask them.

We do use bentonite in fining of the whites to stabilize the surplus of proteins that they precipitate out otherwise.

And, of course, we do employ some sulfite as a preservative.”

    While wine tasting with a group of friends recently, on a beautiful day in the Funk Zone at the Santa Barbara Wine Collective, I discovered a new favorite. The Santa Barbara Wine Collective is a fun place with a great deli that offers wines and wine tasting from a variety of local sources including some relatively unknown boutique wineries.

    My pourer treated me to a taste of a sensational 2013 Cabernet Sauvignon. The moment that this liquid sensation hit my lips, Babcock Winery and Vineyards gained a huge fan.

    It wasnt long before a trip to Lompoc was on the agenda and let me tell you, it is well worth the drive. Babcock Winery and Vineyard is located up on a hill on 110-acres right off Highway 246. If you exit Highway 101 in Buellton and go west on Highway 246 aka Mission Drive, you cant miss it.
