The answer lies in the wines residual sugar. Residual sugar is a term in the wine world that refers to the amount of sugar present in a bottle of wine, once the wine is finished and ready for consumption.
As we know grapes have a high sugar content, meaning all wine, no matter how dry, contains some naturally occurring sugars. However, during fermentation, winemakers add yeast, which converts these natural sugars into ethanol, aka alcohol.
While the yeast will convert the majority of the grape sugar into alcohol, sometimes the sugar in the grapes is much higher, or winemakers choose to add additional sugar. This means the yeast cannot convert all of the sugar to alcohol, resulting in a wine thats higher in residual sugar.

Very sweet red wines will have a sugar content of up to 220g/L . Sweet to semi-sweet red wines can be anything between 20g/L t0 120g/L. Bone dry wines have residual sugar of below 1g/L. Dry-tasting wines can have up to 10 grams of sugar per liter!
Wine producers are not legally required to show the residual sugar content on their bottles. However, some wineries do share this information on their packaging. Here are some examples of red wines and their residual sugar levels:
- Gnarly Head Old Vine Zinfandel: A sweet wine produced in the wine estate of Lodi, Central Valley, California, it contains a residual sugar level of 3.4g/L but its flavors and aromas make it seem sweeter than its actually is.
- Yellow Tail Shiraz: An Australian wine, this sweet red wine is made with a blend of red grape varietals and has a residual sugar level of 12g/L.
- Jam Jar Shiraz: This South African wine is one of the sweetest shiraz type wines on the market with a residual sugar level of 54g/L.

How Are Dessert Wines Made
Dessert wines are made from grapes that have so much sugar, that as well as fermenting and producing enough alcohol to make the wine stable, there is still residual sugar left over to give the wine its luscious sweetness.
New Zealand wine producers use three techniques to enhance the sweetness of their grapes, and they all happen naturally in the vineyard.

New Zealand winemakers can allow the fungus Botrytis Cinerea, also known as Noble Rot to grow on the grape bunches. Lets say you buy a bottle of , and the winemaker says its 100% dry. Yet, when you take it home and give it a taste, it tastes sweet! Whats going on?
The confusion around sweet and dry is caused by aromas, i.e. what our nose tells us about a wine. When youre smelling aromas found in very ripe wines, like, for example, blackberry jam or banana yogurt, its because youre used to associating these smells with actual sweet foods. Your brain links the aroma with its usual related taste sensation, outside of the context of wine, and so you say a wine is sweet, when you havent yet even taken a sip!
