Again the wine can be drunk immediately but we recommend ageing it 4 weeks but you can leave it up to 12 months. The time you will leave it will depend very much on your stocks. So get plenty built up. The reds benefit more than the whites with ageing. Certain kits are suited more to the experienced wine maker and take around 4 weeks to ferment and then left for a further 2 weeks. These products does really benefit from ageing. All the kits we list in this section require little ageing.

What If Something Goes Wrong

All is not lost if air got in somewhere along the line, or you simply don’t like the taste. Simply remove the airlocks and bungs from the demijohns . Put a small piece of muslin over the top of the vessel and secure with a rubber band. Pop it in the airing cupboard and forget about it. 6-12 months later: et voila. Your very own homemade wine vinegar. And yes, we have been known to do that – see evidence below. So your efforts will not have been wasted!

B: Fermenting For Red Wine

Red must doesnt need a tightly closed top or airlock during fermentation. It can ferment in a large open container with just a towel or a piece of thin plywood on top to keep dust and fruit flies out. Add wine yeast, and give it a good stir. It may begin to ferment in as little as 12 hours.

Red wines need to be stirred, or punched down, at least twice per day when fermentation is going strong. Youll see a cap of skins that floated to the top. This needs to be submerged back into the wine regularly to keep the skins wet. This allows the juice to extract the key color and flavor compounds from the skins.

Its good for red wines to warm to 80°F or more during fermentation to aid this extraction. You can check this with an old-fashioned weather thermometer.

Stage 3 Fill The Demijohn

Now that the yeast has gained a strong hold over your must, we need to seal it away from dangerous oxygen that which once fed your yeast could now ruin your wine. Removing oxygen forces yeast to produce alcohol and stops bacteria from turning that alcohol into acetic acid, or vinegar. Transfer your must to a sterile demijohn using a large funnel and an old but clean tea-towel to filter out the fruit pulp.

Once you’ve filtered it, have a taste. Hopefully you have a sweet fruity liquid with a hint of alcohol. If there is any space left in the demijohn, fill it up to just below the neck with clean water. When the demijohn is full put an airlock in the top this will let the carbon dioxide escape but keep the oxygen out.

    Secondary Fermentation And Bulk Aging

    During the secondary fermentation and aging process, which takes three to six months, the fermentation continues very slowly. The wine is kept under an airlock to protect the wine from oxidation. Proteins from the grape are broken down and the remaining yeast cells and other fine particles from the grapes are allowed to settle. Potassium bitartrate will also precipitate, a process which can be enhanced by cold stabilization to prevent the appearance of tartrate crystals after bottling. The result of these processes is that the originally cloudy wine becomes clear. The wine can be racked during this process to remove the lees.

    The secondary fermentation usually takes place in large stainless steel vessels with a volume of several cubic meters, oak barrels or glass demijohns , depending on the goals of the winemakers. Unoaked wine is fermented in a barrel made of stainless steel or other material having no influence on the final taste of the wine.
