Cheers! Youve almost made it to the end of the year! If you ask me, you deserve a drink! Dust off those champagne flutes and ring in 2017 with a little bubbly.

Something thats extra special, a little fruity, floral and tingly to the senses and just the way to say goodbye to another year.

This year has had its high points and low points. We could sit and discuss the merits of each, but instead lets look to the future and clink our glasses for whats to come.

Theres enough to fuss about during the holidays and what Im drinking is not going to be one of them. As simple as it is to pop open a bottle of champagne, its just as easy to mix up this St. Germain and Pomegranate Champagne Cocktail.

All it takes is three ingredients – technically four – but thats after you make the pomegranate syrup for a cocktail that makes your evening just a little more special.

If you arent familiar with St. Germain, its a French liqueur made up from elderflower buds with a bright, floral and fragrant flavor. While it can be used in a variety of cocktails, it is beautifully paired with sparkling wine or champagne.

In a champagne flute, combine St. Germain and lemon juice with club soda. Pour a few drops of champagne at a time as you go to top off your day with this. Toasted Rosemary is an option. To aromatically heat the rosemary stems, gently torch some of them with a kitchen torch.

Here are my tips for making the best version of this elderflower champagne cocktail:

Choose a floral gin. I like Hendricks for its floral and botanical notes. I would stay away from flavors of pine and juniper that might not pair as well with the delicate floral taste of St. Germain.

Choose a bottle of dry champagne. St. Germain is a sweet liqueur, so you dont want to add more sweetness to this cocktail. Stick with a bottle that says brut on the label for the ultimate flavor magic.

Use a pretty garnish. I used a lemon twist, but you can use a cocktail pick or lemon wedge if you like.

Can You Make A Non

Yes! Making mocktails or 0 proof cocktails are great for including people who dont drink alcohol, pregnant women, or kids. You can make a non-alcoholic version of this St Germain champagne cocktail with a few simple substitutes. Here they are:

What Kind Of Champagne Should I Use

For the best balance of flavor, use brut champagne. Brut champagne is slightly less sweet than extra dry champagne, and much less sweet than dry champagne. Since you will be using a sweet St. Germain liqueur, you dont want the champagne to be too sweet, otherwise the cocktail will taste far too sugary.

If you dont have the option to use champagne, use dry prosecco. Prosecco is usually less sweet than champagne, and it also has fruity and floral hints of flavor as a delicious bonus!

Gin And St Germain: Which Gin To Use

If you know anyone who has traditionally shied away from gin , this Elderflower French 75 is the perfect cocktail to show them that gin really isnt scary at all.

As I discussed in my gin guide, gin is flavored with juniper and other botanicals, so it pairs extremely well with other botanical liqueurs.

In this elderflower cocktail, the St. Germain brings out the floral notes of the gin. I recommend using a gin with fewer juniper notes and more floral or herbaceous notes.

I personally reach for Hendricks when Im making a gin-elderflower cocktail, as its flavors of rose and cucumber pair quite well with St. Germain.

And if you still cant get into gin? Feel free to use vodka instead in this Elderflower French 75.

If you dont love champagne , feel free to substitute your favorite sparkling wine, such as prosecco or cava, instead.
