Last Word: Taste The Difference
Many producers are proud of their native yeast wines and will often indicate native yeast fermentation on the bottle. Taste the difference for yourself and seek out wines from the same region/producer with both native and commercial yeasts. Youll be surprised by the remarkable difference between the two.

Where To Find Prepackaged Nutritional Yeast In The Store
If you dont feel like messing with the bulk bins, you can also often find nutritional yeast in a shaker, big tin, or bag, too. For this, youll just have to look through the natural foods section of the store.
Here is the aisle I found in Wegmans with the prepackaged nutritional yeast:
This was just in a random aisle in the natural foods section, kind of near the gluten-free foods. Youll see there are other health-food products here, such as dressings, toppings, taco filling mix, and vegan mac and cheese.
Nutritional yeast is most commonly used as a toppingso it may be near the other healthy toppings. But since its most well-known among health food fanatics and vegans, I would look in the health/natural food section before looking by normal toppings.
Heres the shaker of nutritional yeast that is most common in most U.S. stores, in my experience. Ive found this same Bragg shaker at a bunch of different stores over the years:
Braggs Nutritional Yeast Seasoning shaker
If you look closely, youll see that the per pound price is actually a lot worse for this shaker compared to the bulk bin. Its $21.30/lb for the shaker, while it was $12.99/lb from the bulk bin.
Actually, since I recognized the Bragg shaker right away, I didnt even realize there were more nutritional yeast options to the left!
There was a prepackaged bag of nutritional yeast from Bobs Red Mill. And there was also an empty spot where it looks like Red Star nutritional yeast is usually stocked.

What Happens If You Bottle Your Wine Before Its Done Fermenting
You might make little wine bombs! If the wine is still fermenting when you bottle, itll keep producing carbon dioxide, which will eventually build up to a point in the bottle where it needs to escape. When it gets there, the bottle might pop its cork, pop off its flip-topor in the worst case scenario, break the glass of the bottle. You can prevent this by making sure the wine is still and finished fermenting before bottling or by sterilizing the wine with Campden tablets before bottling. I personally like to live on the edge, so I never sterilize my wine , and occasionally, I open up a nice carbonated bottle!
A Primary Fermentation Container:
This should be a big bucket, a large jar, a crock, or specifically designed fermenterwhich is what we use and will be showing in this post.
The size is important. I recommend it be at least 40% bigger in volume than what youd like your final amount of wine to be. Why? Because your primary fermentation will have fresh fruit in it, which well later filter out. Also: during the initial fermentation, the yeast can get quite overzealous, and youll need room for all the bubblesplus, extra room gives the yeast extra oxygen to work with! The strawberry wine recipe below is for a one gallon batch, so your primary fermentation container needs to be at least 1.4 gallons in size.

What Is The Future Of Yeast
Scientists are working to improve commercial yeasts due to an ever-increasing need for complexity and differentiation in wine. Microbiologists are trying to create cultured non-Saccharomyces yeasts that mimic the population diversity of wild ferments.
As science learns of the metabolic processes of certain grape constituents and how they behave during fermentation, yeasts can be engineered for specific purposes. One might convert some sugars into glycerol rather than alcohol, which can be handy in hot regions with high-alcohol wines. Or a yeast can be bred to reveal more of the varietal character of grapes through its aroma compounds.
Buying Nutritional Yeast Online
Ill also mention that you can buy nutritional yeast flakes online. I have done this once or twice before. I once ordered this big container of KAL nutritional yeast that lasted quite a while. I loved it.
The first big advantage of buying nutritional yeast online is that you can compare prices and try to get a better deal. Since you can buy big containers online, you may be able to find a real bargain.
In fact, see my complete guide to finding the cheapest nutritional yeast.
The other advantage of buying nutritional yeast online is that you can choose which specific brand you want to buy. When Im buying nutritional yeast from bulk bins in a grocery store, I dont know usually which brand they stocked it with.
Why would the brand of nutritional yeast even matter? Well, honestly, its probably not actually a big deal, but

Whats A General Formula For Making Fruit Wine From Any Kind Of Fruit
Making wine is more of an art than a science, which means it takes some experimentation to nail down exactly what works for you and your tastebuds, but as a general rule of thumb, you can use this formula for a one gallon batch of fruit wine:
3 pounds of fresh or frozen fruit + 2-3 pounds of cane sugar + 1 gallon of water + Yeast and desired additives
How Do You Make A Dry Wine Versus A Sweet Wine
The final sweetness of your wine is determined mostly by two factors: how much sugar you add and how much sugar your yeast can eat. Different strains of yeast can consume different amounts of sugar before they peter out and die in the alcohol that theyve made.
For an example, lets walk through two different kinds of yeast in a wine batch.
- Yeast A can survive to 12% alcohol content. This yeast will eat some of the sugar you add, die off once the wine reaches 12% alcohol, and then the rest of the sugar will be leftover for the wine to taste sweet.
- Yeast B can survive to 18% alcohol content. It eats all three pounds of that sugar before dying off , and you end up with a dry wine.

What Kind Of Airlock Should I Buy
Youll see two different kinds of airlocks out therethe 3-piece airlock and the twin S-bubbler. Both work just fine for making wine. The only real advantage here is that its slightly easier to see bubbles moving on the S-bubbler. I have and use both kinds.
You will need a stopper or cap with a hole to affix the airlock to the top of your carboy or fermentation container, so make sure to grab that, too. They are often sold together in sets.

Where To Buy Wine Yeast
Wine is one of the;oldest alcoholic beverages;known to man. Recorded history shows that, as far back as;12,000 years ago, man had discovered the art of winemaking. Early Egyptians are known to have enjoyed wine. In fact, wine gained such prominence in this time that it almost developed into an industry of its own. Even though wine was already being made as far back as 2,000 B.C,;wine yeast was only discovered in the 1850s;by French scientist Louis Pasteur. He suggested that the fermenting of wine was due to the presence of a living organism.
Thanks to this discovery so many years back, now we; wine yeast for winemaking. Yeast has an important role when it comes to making wine. It is the element that;turns grape juice to wine. Wine yeast is a;unicellular type of fungi;that can be;found on the skin of wine-making grapes.;The organisms are fermentative and can consume a number of sugars. Some of the common yeast varieties that occur naturally on grapes include genera like;Hanseula, Kloeckera, Saccharomyces, Hanseniaspora, Candida, Brettanomyces and Pichia.

Can I Use Local Yeast To Brew Beer
I am from Kathmandu, Nepal and I was wondering if I could use local yeast to brew beer.
The yeast I want to use is generally used to make local rice beer called chhaang.
- I would expect it to turn out slightly sour. This is just a guess, I haven’t been able to get serious information about the yeast used in chhaang. But be prepared for that. Not everyone likes sour beer
You can use any yeast and it will make “beer”. Whether this beer is tasty is a whole different issue. If it’s your only option, try it! I’ll be curious to see how it turns out!
You should definitely consider making a starter, especially if the source of the yeast is questionable.
Baker’s yeast and brewers yeast are all Saccharomyces cerevisiae and can all be used interchangeably. I have made bread with wine yeast and beer with wine yeast and wine with bread yeast. They will all work to ferment whatever you are trying to do. There shouldn’t be any off flavors if you keep everything clean.
I read up on Chhaang and it appears they just use regular yeast to make it so whatever they are using to make that, I would use that first if it’s easy to get.
The Difference Between Wine Yeast And Bread
You may be wondering whether you can do it with normal bread baking yeast for your homemade wine. The answer is that the two are quite distinct. Some of the main differences have to do with their purpose of being bred. Here are some of the main differences;
- Wine yeast is mainly;intended for the production of high levels of alcohol,;thus lower carbon dioxide levels.
- The packaging for;bread yeast is at food-grade level. Wine yeast on the other hand is packaged in;sterile conditions;since it is associated with long-term fermentation periods.
- Wine yeasts are high tolerance strains that have the special ability to remain active up to levels as high as;17% alcohol.
- More often, it can;stay stable in environments;with sodium metabisulfite, a staple in wine making.
- Compared to bread yeast, this clears must quicker and;does not foam as much;when fermenting.

Blending Wine Made With Different Yeast Strains
Not all yeast strains can produce a well-rounded, interesting wine. Some yeasts, in fact, arent recommended unless you blend the resulting wine with that of another strain. This is because it may offer one very strong characteristic but nearly nothing else. So you may get great aromas but weak flavor and no mouthfeel.
Thus you can blend wine from this yeast with another from a strain that produces better mouthfeel and a good flavor profile. The first yeast will intensify the aroma without sacrificing the mouthfeel and flavors produced by the second.
This is how you turn wine into a work of art!;As the winemaker you get to pick and choose what you want your finished wine to taste, smell, and feel like. This is one of many brushes you can paint with.
For my Riesling experiment Ill be fermenting W-15 and R-HST separately and aging them about six months. At that point Ill likely bottle 3-5 bottles of each wine individually to see how they develop.
With the remaining wine Ill be blending in varying proportions. So perhaps a few bottles of 50/50, 25/75, and 75/25 the other way. The main objective is to understand the impact yeast has on wine.
