Cms Vs Wset: Whats The Difference

How to Become a Sommelier (Or How I Did)

These two programs seemingly offer the same education in wine , but their differences help to define them. A few to note:

  • At its core, Court of Masters is service oriented. This path is great for wine professionals in the service industry working as a sommelier.
  • The WSET program is communications oriented. The program is great for sales representatives, other wine trade, and educators.
  • CMS plays to the strengths of the independent learner, requiring self study and self education, followed by a 1-3 day course and exam.
  • WSET is great for learners who like the structure of a formal class with time in between to absorb and reflect.
  • CMS requires students to pass each course before moving to the next. WSET is a multi-level program that doesnt require prerequisites.

Training To Be A Sommelier And The Sommelier Levels

There is no one way to gain the skills needed to be a competent and successful sommelier. While many sommeliers have no formal training, increasing numbers are turning to accredited qualifications as part of their development. The two main providers of certifications for sommeliers are the Court of Master Sommeliers and the Wine & Spirit Education Trust, with sommeliers often choosing to pursue both paths of study.

The Court of Master Sommeliers is the main educational organisation for wine service professionals, established in 1977 to encourage quality standards for beverage service in hotels and restaurants. Their programmes place an emphasis on technical service skills, significant producers and vintage ratings in addition to product and tasting knowledge.

For CMS programmes students mostly self-study with some face-to-face instruction for selected levels prior to examination.

The Sommelier Levels

Sommelier Levels refer to the four sommelier certifications which can be completed with the Court of Master Sommeliers. The four certifications must be completed sequentially.

Level numbers dont form part of the certification names, but rather denote the sequence in which they are completed. We break them down for you:

Alternative Path To Becoming A Sommelier

Since there are no legal certification requirements to becoming a sommelier, you have some alternatives to taking a course of study and passing an examination. In some cases, extensive experience may go farther toward getting you a job than an official certificate or diploma.

  • The most important thing you can do is build your resume.
  • In addition to serving wine at a fine dining restaurant, get experience working at a winery or vineyard.
  • It’s also good to spend time working in a specialized wine shop.
  • Additionally, less intensive courses can also lend credibility to your career path. Consider taking short courses at your local community college or culinary institute. Even an online wine class can help you learn more about wine.

The idea of becoming a sommelier is romantic to many, even if youve watched the documentary Somm series and know how hard it is to become a certified master. But whether you want to make the leap to professional wine taster or just expand your knowledge, many of the same tricks and tips that pros use can help you on your journey, and not all involve expensive wine classes.

Before you immerse yourself in the world of wine, its important to know how the process works. The Court of Master Sommeliers, established as one of the foremost bodies for the profession, conducts four levels of tests: introductory sommelier, certified sommelier, advanced sommelier and master sommelier. Only 269 professionals have earned the Level Four distinction since the Courts inception in 1969.

Some sommeliers pass the first level and stop there. Tests become more intense as levels increase. The Level Two certified sommelier examination involves a blind tasting, a written theory test and a live service demonstration of knowledge and tasks for the judges like flawlessly opening and pouring a bottle of wine.

Levels Three and Four are amplified versions of that test. They go into far greater depth on grape varieties and overall wine knowledge, as well as other spirits and cigars.

A master sommelier must know much more than how to serve or recommend wines to go with a meal. This level of sommelier needs to be an expert in wine history, wine-making and salesmanship, be able to identify wine vintages, qualities or flaws by taste, and be knowledgeable about other alcoholic beverages, spirits, and even cigar production. To gain this knowledge and service experience, a series of courses and exams can be taken. Follow these steps to become a master sommelier.

    What Is A Sommelier

According to one definition, a sommelier is: A waiter in a restaurant in charge of serving wine.

Hmmm, a wine waiter. I am happy to be aligned with the wait staff sommeliers have a lot to learn from waiters, and we are all in it together waiting tables, getting food and wine from the kitchen and cellar to the guest. But it does seem to oversimplify what I have found to be rather diverse, challenging work.

I asked sommelier and 2010 ASI Best Sommelier in the World winner Gerard Basset MS MW to define the role:

The role of the Sommelier encompasses so many aspects. They must be hospitable – welcoming, warm, a good listener. They must understand restaurant service and have good technical skills. They must be business-minded when buying and cellaring wine. They must be a great salesperson to understand what the customer needs and sell it to them. They must also be a wine ambassador and represent well all the wineries on the list. They need to be a leader, to train and motivate staff. And, above all, must never take themselves too seriously.

The CMS offers four certification levels, but three educational opportunities. The Certified and Master Sommelier certifications are given after exams. There are no courses involved with those levels.

The Introductory Sommelier course is a two-day, in-classroom overview of the foundations of wine theory , along with an introduction to the Deductive Tasting Method and CMS wine service standards.

The Deductive Tasting Method workshop is an intense, one-day workshop that goes over the CMSâs Deductive Tasting Method. Itâs not required for any certification, but itâs darn helpful for all of them. And, finally, the Advanced Sommelier course, the course associated with the level 3 certification, is a three-day, in-depth, classroom exploration of wine theory, tasting, and service.

Sommelier Training: How to Become a Wine Expert

While working your way up, there are many ways to enhance your sommelier skills. Staying informed on the industry trends by reading publications, annual wine guides, blogs and connoisseur magazines, is an imperative as this industry sees globalization shift the way it operates.Attending wine tastings and even blind tastings should be an important commitment as well. As Paolo Basso, best Sommelier of the World 2013, explained to EHL students during his last conference:

Human beings are no longer used to taste! We do not use our nose or palate anymore and therefore our brain does not perform sensory analysis but relies mainly on preconceptions. It is an exercise that requires discipline but allows one to efficiently develop its sensitivity and unbiased assessment skills.

You may also want to attend one of the many oenology courses offered to wine enthusiasts. These require less time and money investment than the more advanced wine education programs and certifications.
