Do You Chill Red Wine
It depends on the wine and the room temperature. Generally, red wine should be in the range of 55 F to 65 F. If the wine is warmer, it needs chilling. Lighter-bodied wines are better on the cooler end, so keep them in the fridge for about 90 minutes. Fuller-bodied, high-tannin wines such as Bordeaux can reach the target temperature range in 45 minutes. To get an accurate temperature, use an instant-read thermometer.
Cooper & Thief Red Wine Review
As Americas fascination with bourbon continues to thrive, companies look for ways to creatively and successfully incorporate Americas native spirit. We know of whiskies that age in wine barrels. One new trend in the wine world is resting wine in ex-whiskey barrels. Cooper & Thief does just that. Their red wine blend, comprised of 38% Merlot, 37% Syrah, 11% Zinfandel, 7% Petite Sirah, 4% Cabernet Sauvignon and 3% other varietals, rests in ex-bourbon barrels for three months and bottled at 17% abv. Maybe the bourbon barrel contributes slightly to this higher-than-average proof?
On the nose, hints of dark fruit jam, vanilla bean and sweet oak are most dominant. I pick up typical red wine hints of raspberries and burnt orange peel on the palate, as well as a healthy undercurrent of dark caramel with some light oak tannins on the backend. The velvety mouthfeel make this red wine a pleasure to sip.
I really like this one. The wine characteristics balance nicely with the bourbon barrel contributions. In other words, the wine is still the star here, while the caramel, vanilla and oak notes simply help elevate the fruit notes found in the wine. At about $25 a bottle, Cooper & Thief offers great value for whats in the bottle. This is one to bring to that holiday dinner party this holiday season. Recommended!
Thanks to Cooper & Thief for the sample. As always, all thoughts and opinions are my own.

How Do You Pair Red Blend Wines
Red blends tend to be bold on the palate, though some are more full-bodied than others. For this reason, red blends can be difficult to pair. But as a good rule of thumb, red blends tend to go well with rich meat dishes like our Easy Oven Baby Backed Ribs or vegetarian meals like Pizza Napoletana.
Another approach is to pair red blends with traditional dishes from the region which they come from. If youre having a Super Tuscan or Chianti, you can have Bistecca Fiorentina, suggests Gordon. Or if youre having a red Bordeaux, something like a grilled lamb chop is hard to beat.
Pairing a red blend wine with regional dishes is a way to elevate its terroir, as well as enhance a cultures flavors in a way that can transport you to another place.

Zeni Fef Collection Corvina Veronese 2018/2020
Lively and bright, with savory flavors of dried fig and wild herbs, this delicious red is a pick-me-up for your palate. Each sip is a refreshing invitation for a mouthful of braised or roasted meats, or hearty pasta. Caution though if you pour yourself a glass to enjoy while cooking, you may find theres not enough left for dinner. When I reviewed this wine in February, the distributor was on the 2018 vintage. The 2020 is now on the market. It is also tasty, but if you have patience and some storage space, buy a few bottles and let them age for several months. ABV: 13.5 percent.

Best Organic: Larkmead Napa Valley Cabernet Sauvignon
Region: Napa Valley, California | ABV: 14.7% | Tasting Notes: Dark fruit, Tobacco, Fresh-turned earth, Dark chocolate
This winery, under the watch of winemaker Dan Petroski, doesn’t just focus on making world-class wine. Petroski helps shed light on the necessary work for studying climate change, and in 2015, Larkmead converted to organic farming practices.
Cabernet collectors should stockpile wines from the 2016 vintage, which are high in naturally vibrant acidity due to a moderate growing season. Hallmark signifiers are deep, dark fruit and a distinct freshness, all of which the 2016 Larkmead has in spades. Adding to that are incredibly alluring brown spices, fresh-turned earth and tobacco wrapped in dark chocolate, with mouthwatering purple violet notes and firm, dusty tannins.
This is a wine to contemplate over many hoursand, ideally, over the next decade, with a bottle or two every year.

Determining The Best Red Wine Brand To Add To Your Collection
Choosing the best red wine vintage to drink typically involves two considerations: knowing what you like and knowing which professional reviewers have tastes similar to your own. By writing your own tasting noteseven if they are for your eyes onlyyou can keep track of the wines and brands you consistently enjoy. You can also compare your notes against professional reviews to evaluate whether a brand or wine you havent tried before is likely to live up to your expectations.
Choosing the best red wine brand to add to your investment portfolio, on the other hand, will mean focusing more on trends. Youll want to examine the rate at which older wines from the same brand appreciated, as well as similar wines from other brands. Likewise, youll need to know the aging potential of your wine, as its best to sell close to, or at, peak maturity. And youll need to weigh the cost of long-term professional storage against the potential gains of buying wine youngwhen its typically less expensiveand watching it gain value over time.
In either case, if you wish to settle for nothing less than the best, any of the brands and vintages listed above will meet the standard of excellence you demand.
