In 1937, Moët & Chandon bought the brand name Dom Pérignon for their prestige cuvée. Today, Dom Pérignon is part of the Moët Hennessy Louis Vuitton empire owned by Frances richest man, Bernard Arnault. It is one of the most highly prized champagnes in the world and frequently breaks bidding records when sold at auction.
The remains of the Abbey of Hautvillers where Dom Pérignon spent his adult life is now the property of Moët & Chandon.
How Are They Similar
Both brands use the same grapes as their base ingredients, Pinot Noir and Chardonnay grapes. Similarly, both champagnes are produced using a similar composition of a blend of 40% Chardonnay and 60% Pinot Noir.
However, Dom Pérignon does at times create blends that contain more Chardonnay than Pinot Noir. Another difference between the champagne brands is the length of aging.
Cristal ages its champagnes for a period of 6 years in a cellar, while Dom Pérignon is aged for a period of 7 to 10 years.
The brand aims to release champagnes that have been aged for 9 years minimum which is why there are years that it does not release a vintage.

Many of the myths surrounding Pérignon are likely because of one of his successors at the Abbey of Hautvillers, Dom Groussard, who wrote an account of Pérignon in 1821. In it, he stated that Pérignon invented champagne and also invented other grossly exaggerated stories in order to generate interest in and prestige for the church.

Dom Prignon Is Aged For A Minimum Of 7 Years Some Are Aged Much Longer
Dom Pérignon releases each of its vintages three times. The first release is typically aged around nine years, the second around 18, and the third around 25. This time-aging on lees gives the wine complexity and richness. Most bottles of Dom Pérignon are first-release bottles, but if a bottle has P2 or P3 on the foil, youll know that its a second or third plénitude release, respectively. Approximately 5 million bottles of Dom Pérignon are produced each year, and the brand has indicated that it is reserving more bottles for long-term aging to meet demand.

A season with plenty of sun and light, warm rain make the grapes grow well with the ideal amount of sugar content for winemaking. Grapes from the same harvest year are always used together under each years named release. This lends every vintage its own unique flavor profile. All blends of Dom Pérignon are produced using pinot noir and chardonnay grapes.

Influence On Champagne Production
In Perignon’s era, the in-bottle refermentation was an enormous problem for winemakers. When the weather cooled off in the autumn, fermentation would sometimes stop before all the fermentable sugars had been converted to alcohol. If the wine was bottled in this state, it became a literal time bomb. When the weather warmed in the spring, dormant yeast roused themselves and began generating carbon dioxide that would at best push the cork out of the bottle, and at worst explode, starting a chain reaction. Nearby bottles, also under pressure, would break from the shock of the first breakage, and so on, which was a hazard to employees and to that year’s production. Dom Pérignon thus tried to avoid refermentation. He did introduce some features that are hallmarks of Champagne today, particularly extensive blending of grapes from multiple vineyards.
Pérignon was also an early advocate of wine-making using only natural processes, without the addition of foreign substances.
