In Europe and Canada, organic wine is defined as a wine made from organically grown grapes that may contain added sulfites. In the U.S., winemakers must not add sulfites if they want to label their wines as organic. Further, naturally occurring sulfites must not exceed 10 ppm.
Lets back up a moment: sulfites are preservatives and antioxidants that keep bacteria from ruining the wine, significantly increasing shelf life. Sulfur dioxide is natural byproduct of the fermentation process and has been used in winemaking for centuries.

With organic wine, the only tool you have is the fruit you bring in, your cellar team and your creativity. A lot more planning goes into it at the vineyard level too. For example, if there is a Riesling site that is high temperature and low pH, he might plan to combine it with a lot from a cooler site to bring the chemistry to a combination suitable for successful fermentations.

Headaches are more likely caused by the phenolics in wine or it could quite easily be the case of consuming too much alcohol in one sitting, drinking too quickly or not eating or drinking water while consuming alcohol.

How Is Organic Wine Produced
Organic wines and natural wines are produced with minimal intervention in the winery. Winemakers who are producing organic wine and natural sulphite free wines encourage natural processes in the winery. They follow organic certification rules and organic farming practices which are strict about what is happening in the vineyard. Organic farming is farming which uses no synthetic chemical products no artificial chemicals or harmful pesticides.
Organically certified wine is wine that is produced from 100% organically grown grapes and the wine is manufactured without the use of any chemicals.
So, sulphites arent added to organic wine or natural wines. It stands to reason therefore, that organic wine must be sulphite free wine.
This is where things can get a little murky.
Why Add Preservatives To Wine
Sulphur dioxide is a good thing in winemaking it helps the wine get to your palate in the best condition possible. It defends the grapes & wine against nasty bacterias and oxidisation. Just like we consume vitamins to keep us healthier for longer, we add SO2 to wine for longevity. I will touch on this more below, however, unless you suffer a reaction from sulphur dioxide there is really no health benefits to drinking only preservative free tipples.
This brings me to the point mentioned above having the best quality grapes in pristine condition means a lot less sulphur dioxide needs to be added. Just prior to vintage and during vintage, you may drive past vineyards which have netting covering their vines these nets are to help stop birds and pests damaging the grapes. The more damaged the grapes are at harvest, the more sulphur dioxide will be needed to produce an enjoyable and drinkable wine.
As you may also know, oxygen isnt a good friend to wine as soon as the wine has a large exposure to oxygen it will slowly start to deteriorate. The sulphur dioxide during the winemaking stage will help neutralise any oxygen that may get near the wine so it can be bottled and sealed up for your delicious consumption.

Is Organic Wine Healthier For You
Ok, so organic farming + organic winemaking = organic wine. But why should we care and why are more and more people drinking organic wines?
This lack of manipulation in both the field and cellar leads to a wine that is arguably more real, and definitely more natural. Organic wine is most often the best expression of both the grape and also the terroir, the land and environment in which it is grown.
Additionally, the saying goes, you are what you eat . So theres definitely a peace of mind that comes with knowing that no pesticides or additives are going into your wine. But what does that really mean? Are organic wines healthier? The short answer is yes.
In general, organic wine grapes are much healthier and therefore produce heartier skins and higher concentrations of all of those good for you anthocyanins and antioxidants, including polyphenols and cardio-friendly resveratrol. One Last Thing: What About Hangovers
Youll often hear that natural wine causes fewer hangovers. A lot of people think this is true, that the sulfites in conventional wine can exacerbate wines morning-after effects. A lot of people think its bullshit.
I think not drinking water hangovers, Scruggs says. I dont think its related to sulfur because its a naturally occurring byproduct already. Yes, there are producers pushing an extreme amount of it but usually its bulk wine and its the additives that dont have to be listed. So drink responsibly, and dont be an idiot.

Where It Came From And Where Its Going
Most people agree that the modern natural wine movement began in rural France, where a handful of low-intervention winemakers who had been toiling in their own organic bubbles found out about each other and began growing a community. These were natural winemakers who were isolated in their appellations , maybe the only ones there working organically in the vines with little to no additives in the cellar, Lefcourt remembers.
One of the first organized, formal natural wine tastings was La Dive Bouteille in 1999, which started with 15 winemakers and around 100 attendees, Lefcourt says. Now, La Dive boasts hundreds of winemakers and thousands of attendees and has become a much-anticipated, hype-filled annual event for the natural wine world.
In the 2000s, natural wine importers like Lefcourt and Louis/Dressner grew and gained traction in the United States. In the early days, Lefcourt remembers, there was a lot of talking to deaf ears, trying to communicate and build understanding.
