Some of the most popular pasta sauces are tomato-based. Tomato-based pasta sauces, like bolognese , typically have high acidity and should be paired with wines that have equal or higher acidity levels to create the perfect balance. If the wine doesnt have a similar acidity level as the tomato-based sauce, it will dominate the wine and make it taste bland.

We recommend pairing red wine with your tomato-based pasta. A complex, layered wine that contains high tannin will make it perfect for pasta prepared with thick tomato-based contentgiving the entire meal a perfect balance. What Wine Pairs With Orechiette Alla Cime Di Rapa

Puglia is known for 2 red grapes, Negroamaro and Primitivo. Neither is a great match with this dish. Primitivo is essentially the same grape as Zinfandel and Negroamaro is quite big and bold, too. However, Puglia makes amazing roses and this is what I would chose over a red. The whites Fiano and Verdeca are less common in Puglia but delicious. Try a Verdeca. Its got a great green character thatll match with the broccoli rabe, as would a Sauvignon Blanc.

The Best Wine Pairings For Spaghetti Alle Vongole

The ideal pairing does of course depend on how you make your spaghetti alle vongole – the classic Italian dish of spaghetti with white wine and clams – but in my book, the answer is simple: a young, unoaked, Italian white wine.

Goodness, there are enough to chose from! A simple Soave, Bianco di Custoza, Frascati, Falanghina, Vermentino, Vernaccia or Verdichio dei Castelli de Jesi, basic Sicilian whites – even a Pinot Grigio though be prepared to pay more than the lowest cut price offer for it.

Italian grape varieties grown elsewhere such as Vermentino and Pinot Grigio would do the trick but make sure its the classic Italian style rather than the off-dry Pinot Gris one.

You could of course drink any crisp dry white from elsewhere. Muscadet would be fine as would Chablis, Picpoul de Pinet or Albarino. Sauvignon Blanc I personally think is too powerfully aromatic for this simple dish.

A genuinely dry rosé – such as a Côtes de Provence or a Bardolino would also be a good pairing.

Including more tomato in the dish might mean you want a wine of greater intensity – say a late harvest Vermentino or a Greco di Tufo from Campania, but I personally dont think you can better this version from the Guardians excellent Felicity Cloake who assiduously road tests a range of recipes in her weekly How to Cook The Perfect . . . column.

What Wine Goes With Carbonara

Cream sauces need some weight and acid to balance them out. The saltiness of the cheese and bacon also benefit from acidity too. The local grapes in Lazio are Trebbiano and Malvasia, both white. Trebbiano is the better match especially in the Orvieto DOC when its blended with Grechetto. This would also be a good match with oaked Chardonnay. For red, a simple light red from the region is quite tasty, mostly based on the Cesanese grape.
