Ok let me preface by saying I grew up in California. So for me a Sauvignon Blanc from California is one of the most refreshing, consistent, and reasonably priced white wines. And they have very versatile with fruit-forward examples to more complex and nuanced versions. From citrus notes to tropical fruit flavors, this dry wine always delivers.

There are many wine regions in California that produce Sauvignon Blanc and Pinot Grigio, but Sonoma and Napa still make my favorite Sauvignon Blancs. They also make a good white wine for cooking.

This is because the wine in the oak barrels goes through a malolactic fermentation, which gives the Chardonnay the semi-sweet flavor that has hints of vanilla, caramel, and sometimes baking spices. This type of Chardonnay can be of desert quality, even though its a dry wine.

How Chardonnay Is Made

Like all wines, Chardonnay winemaking starts in the vineyard with grape harvesting. Next, the grapes are pressed and fermented. If the wine is interrupted before the fermentation process is complete, there will be more residual sugar, resulting in a sweeter wine. If the fermentation runs its full course, like Chardonnay, the result is lower sugar and a drier wine.

When making Chardonnay, winemakers also determine whether or not to include oak as a part of the equation.
