Wine is grape juice that has been fermented, and fermentation requires yeast and a temperature around 90-100 degreesFahrenheit. Temperatures hotter than 140 degrees will kill the yeast, and if the water is much colder than 70 degrees it may not be warm enough to activate it.
Basically, youre trying to create an environment for the yeast to thrive, so it turns the sugars into alcohol, and the yogurt function does just that, since making yogurt relies on the growth of bacteria.

How Do You Sanitize All The Tools
Level of sanitization is one of those things that falls on a wide spectrum. Some folks prefer to absolutely blast their tools with synthetic chemical sanitizers before making wine to kill any yeast or bacteria that might impact the flavor of their wine. On the other end of the spectrum, some people dont even wash the spoon they use to stir so itll keep the same yeast on it from batch to batch!
Like most things in my life, I stick to the middle path. We make sure all of our tools are cleaned very well with soap and hot water. Plus we use an oxygen wash as an extra layer of sanitization before making our wine.

When there arent bubbles moving through the airlock or at the top of the wine, you can siphon the clear wine into the glass bottles, just in time for your anniversary or date night.

I got my start in homebrewing in the middle of the desert. I was stationed in Saudi Arabia during Operation Desert Storm, and alcohol of any form was prohibited. Preparing Supplies And Ingredients
A Primary Fermentation Container:
The size is important. I recommend it be at least 40% bigger in volume than what youd like your final amount of wine to be. Why? Because your primary fermentation will have fresh fruit in it, which well later filter out. Also: during the initial fermentation, the yeast can get quite overzealous, and youll need room for all the bubblesplus, extra room gives the yeast extra oxygen to work with! The strawberry wine recipe below is for a one gallon batch, so your primary fermentation container needs to be at least 1.4 gallons in size.

Pour And Combine The Juice
Pour half of your juice and granulated sugar in a separate container. While fruit juices will contain natural sugars, some juices may require more to let the wine ferment fully. Once the sugar is dissolved, add the yeast nutrient and mix thoroughly.
Once mixed, add this combination to your fermenter. Insert the hydrometer into your mixture and take note of the reading. If the value displayed is less than 1.010, add more sugar. This will help bolster the low alcohol levels that your wine may end up with.

How To Make Wine At Home From Bottled Juice
There are basically two methods of making your own wine at homeyou can either buy the individual tools and ingredients you need, either online or from your local homebrewing store, or you can buy a simple kit that contains everything you need.
First lets look at a kit by Spike Your Juice.
The kit comes with a fermentation lock and stopper that should fit almost any bottle of juice, six packets of yeast , and six labels for your newly-spiked juice bottlesyou dont want the kids confusing their grape juice with your grownup version!
The manufacturer recommends any 64 ounce bottle of juice that doesnt contain any preservatives. Just like making hard cider or grape soda, the preservatives in juice would kill off the yeast. Also, the juice needs to have at least 20 grams of sugar per servingyou have to give the yeast enough to eat to produce alcohol!
I started with a 48 ounce bottle of Welchs Farmers Pick Grape Juice at room temperature the same juice I had made grape soda with previously.
The instructions say to just pour in the packet of yeast, but as you can see the yeast just kind of sits on the top, so I gave the bottle a bit of shake as well to mix things up.
Then you simply insert the stopper with the airlock, fill the airlock with water, and let the fermentation begin.
To start, I took a measurement of the pure grape juice, before the yeast package was added. The specific gravity was 1.066.
Then, I measured the juice after 48 hours of fermenting, and got 1.062.
How Do You Know The Alcohol Content Of The Wine
This is an arena of winemaking where I lean more toward the heritage winemakersI do not take alcohol readings on my wines. I never set a goal for how much alcohol I want my wine to haveI just like to let the wine develop into what it wants to develop into. I honestly have no idea how boozy my wines are other than to be able to take a sip and say, Yup, thats a strong one!
Many people who make wine at home take specific gravity readings using a hydrometer throughout the winemaking process to determine the fermentation levels and alcohol content. Ive done it in the past with batches, and its definitely interesting information to have, especially when you are starting out! However, my goal with learning how to make strawberry wine was to keep the process fun, simple, and light, and doing specific gravity calculations is not my brains idea of carefree.

A: Fermenting For White Wine
Start with at least 5.25 gallons of white grape juice to end up with five gallons of wine. Pour the juice into a carboy or other closeable container larger than the volume you will ferment, as the wine can foam or expand and ooze out the top.
White grape juice is actually green or golden at first, but it will turn a brown color after its pressed and as it starts to ferment. Dont worry, it will lighten to pale yellow or gold later. Use an airlock to keep oxygen out and allow the carbon dioxide produced by fermentation to escape.
Add wine yeast, according to the instructions on the packet. Keep the juice at a comfortable room temperature, as advised on the yeast instructions. It should begin to emit a light foam of carbon dioxide within a day or two, which signals the start of fermentation.
Remove the stopper once a day, or as needed, to stir the juice and the lees that will begin to settle to the bottom. If the fermentation speeds up and the wine foams out of your vessel, just mop it up and cool the container slightly.
