Stags’ Leap Winery ‘the Leap’ Cabernet Sauvignon Stags Leap District

“Stags Leap Wine Cellars is unquestionably one of Napa Valleys benchmark producers. At the now legendary Spurrier Tasting of 76, this operation topped the worlds best most notably the Bordeaux first growths and sent shock waves through the wine world. It was the first time that an American winery had ever gone toe-to-toe with the Old World and delivered a haymaker, and the fact that the judges were French only made it sweeter. It was a turning point for the entire California wine industry. Now in their fifth decade, Stags Leap Wine Cellars has expanded their portfolio to include some fabulous whites to accompany their muscular Cabs. We wouldnt expect anything less from the winery that changed it all. Theyve made a few changes internally as well… a partnership between Ste. Michelle Wine Estates and Marchesi Antinori proudly accepted the stewardship of Stags Leap Wine Cellars and its legacy in 2007, cinching their success for years to come.”

Napa Valley Cabernet Sauvignon

One of the most prestigious wines of the world capable of great power and grace, Napa Valley Cabernet is a leading force in the world of fine, famous, collectible red wine. Today the Napa Valley and Cabernet Sauvignon are so intrinsically linked that it is difficult to discuss one without the other. But it wasnt until the 1970s that this marriage came to light sudden international recognition rained upon Napa with the victory of the Stags Leap Wine Cellars 1973 Cabernet Sauvignon in the 1976 Judgement of Paris.

Cabernet Sauvignon undoubtedly dominates Napa Valley today, covering half of the land under vine, commanding the highest prices per ton and earning the most critical acclaim. Cabernet Sauvignons structure, acidity, capacity to thrive in multiple environs and ability to express nuances of vintage make it perfect for Napa Valley where incredible soil and geographical diversity are found and the climate is perfect for grape growing. Within the Napa Valley lie many smaller sub-AVAs that express specific characteristics based on situation, slope and soilas a perfect example, Rutherfords famous dust or Stags Leap District‘s tart cherry flavors.

What Goes Into Making Stags Leap Winery Cabernet Sauvignon

Were very traditional, Paubert says, a theme he will return to several times during our interview, always stressing the simplicity of vinification. The 2018 anniversary bottling is a blend of 80 percent Cabernet Sauvignon, with Merlot, Malbec, Tannat and Petit Verdot. The Cabernet comes from grapes from the southern part of Napa where its cooler, Paubert says. He uses innoculated yeast for a fresh, quick, pure fermentation and then its just fruit and yeast in the tank. I dont add anything. The wine is aged in 35 percent new oak for 20 months. Its very simple and straightforward: dont overdo anything, just show the terroir and the fruit and make it elegant.

Paubert, who grew up in Sauternes and has worked at Chateau dYquem as well as in Chile, Spain and Washington state, has been at Stags Leap for 12 years. I represent ten per cent of the winerys history, he says with a laugh. His predecessors included Robert Brittan who was also a lover of expression Paubert sees his role as a continuation of the work that has gone on before. There has been a strong style through the years the wine is not an expression of the winemaker but of the land.

This is important because it underpins everything Paubert does or doesnt do. He insists that very little has changed over the years of his tenure, and what changes he has made are slight reducing the proportion of new oak, for example.

How Did The Design Come About

The history of Stags Leap is long, and there are many aspects of it that are lost in the mists of time. The leaping stag is part of local legend: as the story goes, it jumped between the peaks of the palisades, the rocky outcrop that looms over the district, to escape its pursuers. The earliest-known use of it on a label was on the 1893 Mataro . It shows just how far back this great winery goes: it can trace its history almost as far as Charles Krug , or Buena Vista , and it makes its near-namesake down the road look like a recent arrival. The famous stag has become stylised over the years, of course. We refined a bit, Paubert says. It looked like a dog with antlers so we updated it.

Stags’ Leap Napa Valley Cabernet Sauvignon 125th Anniversary

A tribute to our 125th anniversary, this 2018 vintage Napa Valley Cabernet Sauvignon is specially labeled to honor and commemorate this significant milestone. The Napa Valley region enjoyed a stunning, near picture-perfect 2018 growing season including good winter rains, mild spring weather and steady temperatures throughout that allowed for even flowering and bud break. These ideal growing conditions were followed by a cool, even and slow-paced harvest which allowed the winery to vinify wines at a gentle pace. The resulting 2018 wines are of very high quality with lower alcohol, concentrated flavors, color and excellent acidity.

The 2018 Napa Valley Cabernet Sauvignon is exuberant and expressive, with a bounty of wild bramble berry fruits alongside lifted floral notes of lavender and violet. There are also warmer spiced notes of Crème brûlée, allspice and black pepper, a nod from the seamless oak integration. On the palate, juicy cassis, black currant and blackberry are supported by hints of delicate red rose, brown butter and bittersweet chocolate, giving this Cabernet a rich depth and complexity. Cocoa-powdery tannins provide a pleasurable mouthcoating texture, all enfolding into a lengthy mouthwatering finish. Very approachable and pleasing upon release, this wine is sure to impress and pair well alongside many culinary dishes. –Christophe Paubert Winemaker
