What Are Sulfites In Wine

Just because wine is made from delicious healthy grapes doesnt mean your favorite vino is preservative-free! Sulfites are made up of a group of sulfur compounds that naturally occur during the fermentation process. The most prominent of these is sulfur dioxide .

They are primarily a preservative against bacteria and yeast. The sulfites that occur naturally in your wine arent enough to prevent the bacteria at bay, so winemakers add additional sulfites. This allows your wine to be preserved for months or even years.

Wine Sulfites Are They Fine

Sulfites comprise a range of sulfur compoundsparticularly sulfur dioxide that are a natural by-product of the fermentation process that work as a preservative against certain yeast and bacteria . But fermentation alone doesnt produce enough sulfite to preserve a wine for more than a few weeks or months in the bottle, so winemakers add extra in order to keep microbes at bay. Sulfites arent just in wine. Many, many foods ranging from crackers to coconut contain sulfites. Anything thats at all processed is likely to contain at least some level of sulfites.

In 1986, the FDA identified sulfites as an allergen, following a rash of asthma cases reported around that time. Sulfites were promptly banned from raw fruits and vegetables, and as part of the warning label push in the late 1980s the feds required that sulfites be disclosed on wine labels if they could be detected at a level of 10 mg/L or higher. If you prove your wine has less than that, you can apply for an exemptionthus so-called sulfite-free wines exist. Though many foreign producers include US warning labels, technically the rules only apply to domestic wines. Either way, sulfites are a regular part of winemaking around the world as a matter of necessity. Just because your bottle of Chateauneuf-du-Pape doesnt have the warning doesnt mean it isnt full of sulfites.

Is there a way to remove sulphites from wine?

The answer

There are two ways, though I would only recommend one.

I’ll mention the first and most effective way merely for trivia’s sake you probably don’t want to try it at home. It involves adding a drop or two of hydrogen peroxide the stuff sold in drugstores for disinfecting wounds to a glass of wine.

As you may know, sulphites are commonly used in making wine to curb microbial growth and guard against spoilage due to oxidation. People who are sensitive to the compounds may experience respiratory distress in the form of coughing or wheezing , though this affects a small minority of the population. Sulphites react quickly to oxygen when exposed to air and tend to dissipate over time.

Hydrogen peroxide, a strong oxidizing agent, quickly reacts with sulphites to neutralize them. There was a time when some wine producers actually added hydrogen peroxide to their juice to reduce sulphite levels, but it’s now frowned upon, if not illegal in many jurisdictions. Hydrogen peroxide solutions sold for medical use are very low in concentration, but they’re not meant to be ingested. At high concentrations, the substance can be corrosive.

What Are Sulfites And Tannins

“Tannins are a group of chemical compounds found in the skins, stalks and seeds of grapes. They make your wine feel astringent and bitter and leave a drying sensation in your mouth,” explains Brianne Cohen, a Los Angeles-based certified sommelier, wine educator, judge and writer.

The concept that these drops would reduce tannins is the first thing that made Cohen raise a red flag, as these are generally only present in red wines .

Tannins are also potent in coffee, tea, walnuts, dark chocolate and other foods, explains Linda Shiue, MD, chef and author of Spicebox Kitchen:Eat Well and Be Healthy with Globally Inspired, Vegetable-Forward Recipes.

“People who are sensitive to tannins find the taste to be bitter or astringentthat mouth puckering feeling of biting into an unripe persimmon or plum,” Dr. Shiue says. That doesn’t mean it will trigger a headache.

If you do think that tannins are the cause of your headaches, drink a cup of black tea to test your sensitivity, Cohen suggests. Or if you like, try white wine, which naturally has low to no tannins.

“Tannin levels in dried tea leaves are sky high. If you can drink black tea, then you likely do not have any sort of tannin allergy or sensitivity,” Cohen says.

No wonder one reviewer chimes in, “I wish there were a way to test how many of the sulfites and tannins it actually removed. If it removes ALL of them, I’m guessing some of those sulfites and tannins must be the very things making my vino taste goooooood. LOL!”

How To Use Purewine Products

How to Measure Sulfites in Wine

The Phoenix® is a revolutionary reusable wine purifier that utilizes the same patented purification resin technology used in all PureWine® products. The resin beads are contained in a disposable BioPod cartridge to filter wine as you pour. Each BioPod is intended to be used with a single 750 ML bottle of wine. The Phoenix® should not be used with 1.5 Liter or larger bottles or with effervescent wines such as champagnes or Prosecco. Prior to using The Phoenix® for the first time, carefully hand wash all parts with soap and water. Do not expose BioPods to water.

Start using The Phoenix® by first placing the BioPod cartridge into The Phoenix® Base. Carefully allign the three tabs on the Cap with the 3 slots in the base. Turn Cap clockwise and tightly secure to the Base. After firmly inserting the Air Tube into The Phoenix® Base, insert The Phoenix® into the mouth of the wine bottle and twist securely. Your wine is now ready to serve. There may be a slight 3-5 second delay before wine comes out of the mouth of the bottle. More rapid filtration flow of wine can be achieved by tipping the bottle at a steeper angle.

To clean The Phoenix®, rinse thoroughly under hot tap water and use mild detergent if necessary to clean stains. Do not place The Phoenix® in a dishwasher! It is now ready to be used with a new BioPod to purify your next bottle of wine!
