WHAT’S ON THE SHELF WEDNESDAY | I.W. Cabernet Cask Reserve Bourbon Review!

May 19, 2021 – My second tasting of this wine and vintage for CellarTracker didn’t show much change after an additional year of cellaring there was still little evidence in the tasting of the label’s report of aging in bourbon barrels the cork had an aroma of hay, alcohol, and cork the major difference in the conditions of the second tasting was the much warmer temperature of the wine the warmer temperature, which I heartily recommend, seems to have improved the finish by suppressing the terminal bitterness and enhancing the wallop of the tannins with an accompanying integrated shell of stone fruit I have raised my rating from 83 to 87
