Do you remember the blue wine, Gïk, that came out last year? With cerulean hues that came from a grape skin pigment known as anthocyanin and indigo extracted from a plant, the wine was only available in select European countries. You can pre-order Gïk through their website, but if youre planning to try and get it for the Fourth of July , youre out of luck. The wine wont ship until later this year, in October. You can order one bottle for $16, two bottles for $28, six bottles for $66 or 12 bottles for $124 if you really cant get enough of the stuff.

As far as Blumond goes, you can buy it for $21.99 per bottle via Saracenis online store, which isnt quite as good a deal as Gïk. Its also not technically wine. Blumond is a blend of peachy-tasting Prosecco grapes from the Italian winery Fratelli Saraceni that has been mixed with blue curaçao, according to a review of the wine by VinePair. And because it only has 7 percent alcohol by volume, Italy doesnt even consider it to be real wine . Its a sweet wine, so if Moscato and Riesling are your go-to wines, you might like it.

What Blue Wine Tastes Like

We tried Gik’s blue-hued beverage that’s hitting the U.S. this fall.

When we first heard about Gik‘s blue-tinted wine last year, needless to say, we had many questions. Why is it blue? How is it blue? What does blue wine taste like? Now we know. And soon, so will the rest of the country.

Gik answered the first two questions on its website early on. With regard to “why” the brand makes a blue wine, the response was “why not?” Fair enough, though as one staffer here at Food & Wine pointed out, there’s a very salient quote from Jurassic Park’s Dr. Ian Malcom that could easily be retorted: “Your scientists were so preoccupied with whether or not they could that they didn’t stop to think if they should.”

The “how” question is answered with two, perhaps surprisingly, natural ingredients. Blue indigo dye and a compound derived from the skin of red grapes called anthocyanin give Gik its mouthwash-y hue. To that end, if you’re looking for a blue wine, this one is certainly blue and certainly a pleasant enough shade of the color. The 11.5 percent ABV beverage is otherwise made from red and white grapes grown mostly in Spain’s La Rioja and Zaragoza regions, and France’s Courthézon region.

Okay, enough backstory: How does it taste?

In the end, the best reason we could surmise to try Gik’s blue wine is, well, because it’s blue. For that novelty alone, it might be worth the price of a bottle.

Five years ago, a group of university students in Spain’s Basque Country decided they wanted to shake up a sector – any sector – but preferably one to do with food or drink.

So Imanol, Inigo, Gorka, Aritz and Taig picked the most traditional of them all and created blue wine, one of several innovations in a deeply conservative industry.

After two years of research at the University of the Basque Country with the help of in-house, professional chemical engineers and an outside centre for food innovation, they launched their company Gik Live! in 2015.

It sold 30,000 bottles in its first year and close to 500,000 in 2017.

The young company now exports to 21 countries, the United States being its main market and wine-loving France its second.

From five rookie entrepreneurs, the company has grown to 12 employees.

We understand that for many people wine is something sacred that mustn’t be changed, says Irish-Basque co-founder Taig Mac Carthy, standing at a bar in the company office in Portugalete, a northern town near Bilbao.

But we like to change things and we’re not afraid to try, he adds, as employees type at their computers in the room next door where a drum kit and guitars stand ready for use in true hipster startup tradition.

One such producer is Alma Azul and was quickly scooped up by the international market at a time when blue wine was very rare. It’s really, really blue. Mouthwash blue. Smurf blue – those little guys probably get hammered on this stuff. It’s a blue that you’d think wouldn’t be found in nature, except it is: The wine gets its color from anthocyanin, a pigment found in grape skins, and indigotine, a dye extracted from plants.

Gik hails from Spain, where the company’s co-founders – none of whom had any experience in the wine industry – decided they wanted to create something. They worked with a team of chemical engineers at the University of the Basque Country to develop the wine’s unusual color.

“Thanks to them, we discovered that the best way to create it was to go back to the beginning and merge nature and technology: we mix different varieties of grapes and after that, we use two organic pigments to turn it blue,” Aritz López, one of the wine’s creators, said in an email. “Then, we improve the flavor and make it easy to drink.”

In 2015, the world was introduced to Gik, Spains first blue wine. Unsurprisingly, the pool-colored product, developed by a group of students at the University of the Basque Country, raised some eyebrows . Critics called Gik a gimmick.

Turns out, Gik is not a gag. The blue wine sold 30,000 bottles in its first year close 500,000 in 2017 and is now exported to 21 countries. Its primary market? The U.S., where it debuted last year. Its second biggest market is France.

We understand that for many people wine is something sacred that mustnt be changed, Taig Mac Carthy, Gik co-founder, told the Local Spain. But we like to change things and were not afraid to try.

Skeptics can have their wine and drink it blue. Blue wine is, allegedly, all-natural. The color comes from two pigments, one thats found in red grape skins, called anthocyanin, and another called indigo carmine. Gik, whose wine is produced at several wineries in Spain, says its color is an industrial secret resulting from a mashup of nature and technology.

Apparently, Bacardi picked up on the trend: its Bombay Sapphire gin brand announced a range of edible paints to enhance the flavor of gin and tonic, the Spirits Business reports. Its debut color? Blue.
