The process is easy and fun! Sample wines from our menu, pick your favorite and get hands-on experience with the wine-making process. You get to do the initial mixing of the grape must and and all the bottling for your 28 bottles of custom wine!

Heres how it works:

Step 1: Call us to set up an appointment to select your wine and get your batch started. When you come in, you can taste the wines and choose one from over 40 varietals with wines ranging from sweet wines to dry red blends.

Once youve found the wine you want to make, well bring out all the ingredients including the grape must and yeast.

Next, well take you into our Mixing Area and let you combine all the ingredients together to start the fermentation. Along the way well explain each part of the making process.

Plan on 30 minutes for your Tasting and 45 minutes for the Making. We recommend no more than 2 4 people for this part of the process.

Step 2: Once youve mixed your wine, well take it into our production area and our wine-making team will take care of your wine as it goes through the magic of secondary fermentation and stabilization.

While the wine is transforming, you can start gathering ideas for your custom wine label that well help you design.

Step 2: In 6-8 weeks, call us to set up your Corking Party and bottle your batch of wine.

This process generally takes about 1.5 hours, depending on how much wine you drink while you bottle!

Instructions: Making Wine The Easy Way

  • Wash everything thoroughly in hot water. This is basically the only thing you can do wrong. If your brew gets contaminated, you can’t drink it.
  • Pour out between 3/4 and 1 cup of the grape juice. I know it sounds counter-intuitive, but trust me it must be done to make room for the ingredients you’ll be adding.
  • Add 1.5 cups of sugar into the grape juice. If you want the wine to be less alcoholic, add 1 cup and if you want the wine to be more alcoholic, add 2 cups. Then screw the cap back on tight and shake that bottle like you’re doing some crazy dance from the ’80s and you really want to impress your date. Do this for about a minute, or until you think the sugar is pretty well dissolved.
  • Add one yeast packet. You don’t need to use the funnel for this but you can if you want. There’s no need to be stingy with yeastit’s the cheapest part of this whole project so don’t try to make it last.
  • Wait 5 minutes. Give the yeast time to moisten. After that do another vigorous shake for 10 or 15 seconds and be excited that you’re almost done with the hard part.
  • Place the balloon over the top of the bottle. The bottle should be uncapped and it should look like the picture below. Then poke 12 pin-sized holes in the bottom third of the balloon .

    Different Approaches To Making Wine For The Beginner

    There are a couple of different approaches that you can take as a beginner winemaker. One of the easiest methods is to purchase a winemaking kit. These kits can be purchased for about $50-150 dollars and generally produce 6 gallons of wine. Thats enough wine for 30 bottles. There are also one-gallon kits available that will make 5 bottles of wine but they are less popular. These kits include the concentrated juice, yeast, and all of the additives that you need to create your wine. They come with easy to follow instructions to ensure you produce high-quality wine every time. You can find more information about specific winemaking kits on our site here.

    There is nothing wrong with taking the wine kit approach. In fact, I might recommend it for the first batch of wine you make. However, there is nothing quite as satisfying as creating your own wine from fresh fruits. There is much more involved in making wine from fresh grapes or fruit. First, you need to source the fruits. For wine grapes that is not as easy as it seems. There are places online where you can purchase wine grapes and/or juice frozen and have it shipped to your house. For other types of fruit, you can get them from a local farmers market or grocery store. You need a good quality winemaking yeast, that can be purchased from your favorite wine supply store. and youll need some equipment to get started.

    How To Make Wine From Grapes

    Step 1: Remove the grapes from the stalks.

    Step 2: Press the grapes to remove all the juice.

    Step 3: Measure the specific gravity of the juice. Pour some juice through a sieve and pour the juice into a testing jar. Test the specific gravity using a hydrometer, it will tell you how much sugar is in the juice and how much you will need to add to get the required alcohol content.

    Step 4: Put the crushed grapes into a brewing bucket.

    Step 5: Add one crushed campden tablet per gallon of wine.

    Step 6: Add the campden tablet to the brewing bucket. The campden tablet will kill any harmful bacteria that is on the grape skins.

    Step 7: Cover the brewing bucket and leave for 24 hours for the bacteria to be killed.

    Step 8: Make a yeast starter. Pour some boiled water into a glass jar and place the jar into cool water and allow the boiled water to cool. Add a tablespoon of sugar and stir until it is fully dissolved. Next, take wine yeast and add to the sugar solution. Cover to prevent bacteria getting into the yeast and after about an hour or so the yeast will start reacting with the sugar, producing alcohol.

    Step 9: Dissolve sugar in boiling water. The exact amount of sugar depends on the specific gravity measured earlier. Stir the sugar until it is fully dissolved in the water. Allow to cool, then add to brewing bucket.

    Step 10: Add the yeast starter to the brewing bucket,

    Step 13: After six days sterilize a second brewing bucket with a campden tablet.

    Add Sachet 2 Stabiliser

    Add sachet number two or one and a half teaspoons of potassium sorbate and stir with your sterilised stirrer. Some methods say to stir or shake the CO2 out of the wine at this stage, others say you don’t need to do this, particularly if you are planning to allow the wine to mature for some time. CO2 is added to the wine when it is fermented by the yeast. It increases the acidity as it is dissolved as carbonic acid in water. It easily leaves the solution into the air when stirred or shaken. However, if you remove all of it you can end up with a flat tasting wine. I decided to leave mine to stand so the CO2 left left slowly of it’s own volition.

    A: Fermenting For White Wine

    Start with at least 5.25 gallons of white grape juice to end up with five gallons of wine. Pour the juice into a carboy or other closeable container larger than the volume you will ferment, as the wine can foam or expand and ooze out the top.

    White grape juice is actually green or golden at first, but it will turn a brown color after its pressed and as it starts to ferment. Dont worry, it will lighten to pale yellow or gold later. Use an airlock to keep oxygen out and allow the carbon dioxide produced by fermentation to escape.

    Add wine yeast, according to the instructions on the packet. Keep the juice at a comfortable room temperature, as advised on the yeast instructions. It should begin to emit a light foam of carbon dioxide within a day or two, which signals the start of fermentation.

    Remove the stopper once a day, or as needed, to stir the juice and the lees that will begin to settle to the bottom. If the fermentation speeds up and the wine foams out of your vessel, just mop it up and cool the container slightly.

    How Do You Make A Dry Wine Versus A Sweet Wine

    The final sweetness of your wine is determined mostly by two factors: how much sugar you add and how much sugar your yeast can eat. Different strains of yeast can consume different amounts of sugar before they peter out and die in the alcohol that theyve made.

    For an example, lets walk through two different kinds of yeast in a wine batch.

    • Yeast A can survive to 12% alcohol content. This yeast will eat some of the sugar you add, die off once the wine reaches 12% alcohol, and then the rest of the sugar will be leftover for the wine to taste sweet.
    • Yeast B can survive to 18% alcohol content. It eats all three pounds of that sugar before dying off , and you end up with a dry wine.

    How To Store And Bottle Homemade Wine The Right Way

    Now that you know how to make wine at home, lets talk about how you should store it, a process just as important.

    Great taste is all in storage, many wine experts and enthusiasts say. And theyre right. Theres a lot more to the ritual than filling your wine bottles and stashing them away at a dark corner.

    Just a little warning, youll need lots of patience. The process can be long and might take you nothing short of 6 months. But, trust us, its worth the wait!

    Optional Step : Back Sweetening

    When your secondary fermentation is over, its time to taste that wine! In general, fruit wines need time to age before they are really delicious, so dont be too concerned about the flavor profile yet. What you are concerned about right now is sweetness. If you taste the wine and are happy with the sweetness, you can move onto Step #5!

    If you taste the wine and its too dry, no worries, we can now rack the wine and back sweeten it. There are multiple ways to do this:

  • Use a non-caloric sweetener. Non-caloric sweeteners like stevia, monk fruit, and erythritol can be added to to sweeten the wine without reactivating the wine. The drawback is that these natural sugar alternatives often have funky aftertastes that turn some folks off.
  • Sterilize and back-sweeten. You can use Campden tablets to kill off the yeast in your wine, and then add simple syrup to the wine to sweeten to taste.
  • Back-sweeten with sugar and referment until the yeast hits its alcohol max. This is what I do!

    This is simply a big ole glass jug! We brew almost exclusively in one gallon batches at our house, so we have an entire fleet of one gallon carboys. You can purchase them in a bundle with an airlock and cork. They also come in much larger sizes if you want to do big batchesfive gallon is a common carboy size. The shape of the carboy is importantthe narrow neck reduces the surface area of wine exposed to oxygen during secondary fermentation, which is good!

    Watch The Fermentation Magic

    Test the sugar levels of the fermenting juice periodically with a basic hydrometer in a graduated cylinder. Its measured in degrees Brix, which equals sugar percentage. Your juice will start out between 1826 degrees Brix, and it will reduce to minus-2 Brix once fermentation is complete.

    White wine fermentation lasts several days to several weeks, and it depends a lot on temperature. The cooler the room, the longer it takes. Red wine that reaches a good, warm temperature during fermentation should be done in a week or two.

    Once fermentation is complete, separate the new wine from the gross lees of fermentation. Pour the wine into a five-gallon carboy to mature.

    For white wine, use tubing to siphon off the juice and leave most of the lees behind to dump out. Elevate the fermentation container at least two feet above the carboy in which you will age it. Start the flow using your mouth for suction, and gravity will do the rest.

    For a red, transfer the juice to a carboy and then press the skins to squeeze out any remaining juice. Add this to the carboy as well, and top it with an airlock.
