There was a time that grape-juice masqueraded as alcohol-free wine, but thankfully those days are behind us. Non-alcoholic wine started it’s life as real wine. The grapes are chosen and harvested by the winery, crushed and fermented. At this stage, the sugar in the grape juice is converted into alcohol and the result is alcoholic wine.
The next stage is ageing, a process that ranges from from months to years, and determines the intensity of flavour. Wine is aged in big steel tanks or oak barrels.
When the wine has been aged to perfection, the alcohol is gently removed via distillation or filtration.
The distillation process uses very low heat in a vacuum which removes alcohol via steam, while the filtration process gently moves the wine through a super fine membrane that separates the alcohol from the rest of the wine. The Australian made Newblood wine incorporates uniquely triple distilled process.
One the alcohol has been removed, it can be bottled, labeled and shipped off to sellers.
Grape juice, on the other hand, is made in a juice factory like orange and apple juice. Grapes are crushed and pressed into juice which is pasteurised and bottled.
No Alcohol Wine: How Its Made
Fermentation is a transformative process. It doesnt just produce alcohol but also myriad aromas, flavours and textures. The real challenge of making low- and no-alcohol wine is thus about how to remove the alcohol from a fermented juice without impairing mouthfeel, balance, typicity and quality. Its not easy.
There are three main methods currently in use. Vacuum distillation sees alcohol and other volatiles removed at a relatively low temperature , with aromatics blended back in afterwards. Spinning cone columns are not dissimilar, but involve repeated low-temperature evaporation and condensation using inverted cones and centrifugal forces. They are swift and highly efficient in separating constituent elements, which are then blended back together. Both of these methods use expensive equipment. More affordable and mobile kit is available for reverse osmosis, a sophisticated cross-flow filtration system that separates out constituent elements based on different molecular sizes before blending back.
Sugar is generally added to replace the mouthfeel of alcohol. Some tinker with techniques to add texture or blend in other flavours or ingredients . Other techniques are currently being trialled, including those adapted from cider-making processes.

I was kindly sent a bottle of this newly release Marlborough Rosé to taste in November 2021 and I thoroughly enjoyed it from its pretty peach colour in the glass to its palate cleansing finish. Its light, filled with red berries, peach, apple and its bloody smashable if you ask me. Definitely on the dry side of the spectrum and has some nice citrus notes that make it super refreshing.
Like the 0% Sauvignon Blanc mentioned in this post, its made just like full-strength wine and then undergoes the special Giesen spinning cone distillation which gently removes the alcohol.

Other Effects Of Removing The Alcohol
Another impact that most people notice when first drinking a non-alcoholic wine is the lack of warmth in the mouth feel. This sensation comes from the alcohol in wine, like a watered down feeling of the burn from drinking strong spirits. Its absence is more noticeable in alcohol-free wine than alcohol-free beers because wine is normally 10-15% instead of beers 3-5%.
Another difference some wine drinkers notice is a lighter body in the wine, which again can be lost during the alcohol removal stage. One trick some alcohol-free winemakers use to replace the missing body is to add sugar at the blending stage after the alcohol is removed. Whilst this adds back some of the body, it can lead to some alcohol-free wines being high in sugar.

I am so impressed with this booze free red wine! And I think this would top my list currently for the best sans alcohol red wine that actually tastes like wine! Id say the oak aging of the wine definitely helps give it that real wine taste.

The Challenges And Advancements In Nonalcoholic Wine
Historically, there have been three main complaints about nonalcoholic wine.
But, again, technological improvements are changing the game and makers are taking the time to understand the alcohol removal process.
In the past, we have not done a great job of getting high-quality nonalcoholic wines to U.S.-based consumers, says Kayla Winter, head winemaker at BevZero and a Sonoma County native who studied enology and viticulture at Cornell University. Removing Alcohol To Make Non
Alcohol is removed from wine using one of three different methods:
- Spinning Cone the wine is gently spun in a tower of upside-down cones that allow the alcohol to be separated from the aroma and body of the wine.
- Reverse osmosis filtration done on the molecular level that separates the wine so the alcohol can be removed before the elements are blended back together.
- Vacuum Distillation by using a vacuum chamber, wine is boiled far lower temperature to evaporate off the alcohol.
Once the alcohol has been removed the wine is ready, although in some wine makers will take this opportunity to blend the wine to further perfect its flavour.

How To Make Easy Citrus Mulled Wine
In a stockpot, add the wine, brandy, brown sugar, and orange juice. Turn the heat to medium-low and allow the mixture to warm. Dissolve the sugar, but keep the temperature low to not boil the liquid.
Once the sugar is dissolved, add the oranges, grapefruit, and lemon slices along with the cinnamon sticks.

What Is Non Alcoholic Mulled Wine
Traditionally, a mulled wine recipe is made with an alcoholic red wine, mulling spices and fruit such as oranges and . The spices usually consist of cinnamon, cloves, cardamom, and star anise. Often brandy is added for an extra kick.
Alcohol free mulled wine omits the alcohol and uses something else in its place, often juice. For this recipe I have come up with 2 variations. One with juice, which is perfect for both kids and adults. Then one with alcohol free red wine, which is more for adults and a touch closer to the real thing. Both are equally delicious!

This one really surprised me! Its less than $10 and its made from two white wine grapes that I absolutely adore. I seriously thought I was going to be pouring this one down the sink along with many other zero alcohol wines I have tried over the last few years.
But no, it completely surprised me and I ended up having a couple of glasses and finished the rest of the bottle the next day! The tropical and citrus flavours really enticed my palate back for more. Ill be buying this one again.

I was recently sent a sample of the just released new vintage of the Giesen non-alcoholic wine and in all honesty, I was impressed!
Like its predecessor, it smells exactly like what youd expect of a Kiwi Sauvignon Blanc vibrant, passionfruit-y and crisp. In the mouth, its lighter than its alcohol driven cousin, yet it still tastes like a Sauv and is full of citrus and passionfruit. Its dry, crisp and refreshing. One I would definitely buy again.

How To Choose The Best Non
Choosing the best non-alcoholic wine depends on why you are opting for alcohol-free.
Those wanting to ditch the booze completely need to be mindful of the small amounts of alcohol lurking in alcohol-free wine. Instead, its probably better to seek out delicious adult sodas, get experimental with mocktails, or order a cranberry juice with seltzer.

What Is Grape Juice
Grape juice is exactly what you think it is – the juice from crushed grapes. There are many different ways to get juice from grapes but most common involves crushing the grapes and heating them to extract the most flavour before cooling down and storing. Commercially available grape juices can often go through clips a process of pasteurisation. This removes the naturally occurring yeasts and moulds within the grapes before the juice is packaged for sale.
You can even make your own at home relatively easily if you start with a lot of grapes and some patience.
Whether its commercially available or homemade grape juice, the goal of these different processes is always the same to capture the natural flavour of the grapes within a juice.

How Should I Best Enjoy Alcohol
Alcohol-free wine is best enjoyed in any situation where alcoholic wine would be served. Simply pop a bottle after work for a refreshing happy hour at home or pair with your favorite meals.

No Alcohol Wine Legal Labelling
Legally, there is no such thing as low- or no-alcohol wine. Wine needs to have a minimum alcohol level of 8%, unless a specific exemption exists . Otherwise it must be called a wine-based drink or words akin.
There are currently four terms that can be used for wine-based drinks of 1.2% and under. These are low alcohol , non-alcoholic, de-alcoholised and alcohol free .
