I’d go with a typical one, since you are mixing it with juice. A lot of restaurants will use cheaper ones in mimosas. You could always buy a selection and if people are self pouring , they can choose the nicer one.

LaMarca prosecco or Cupcake prosecco is really good, but honestly if its for a mimosa bar- no one will be able to tell.. so I’d go with the & dollar 6 bottles of Andre lol. Barefoot also makes decent & well priced champagne/sparkling wines that are easy to find- we’ve done mimosas with sparkling barefoot moscato and they were good!

Pro tip: If you add chambord to them they are absolutely amazing.
