Contrary to popular belief that fresh fruit is the best when it comes to making wine, this recipe comes out much better if you use frozen berries. There are two main reasons for that:

Can I Use Yeast Nutrient Instead Of Yeast

Unfortunately, no.

Despite their names being only one word apart, these two yeast products are different from one another.

For starters, a yeast nutrient is more like a supplement or helper to yeast than a complete substitute.

Its also not exactly necessary in your wine, but it helps the yeast make a better wine all-around. You can choose to throw in just a pinch for peace of mind!

Two Extracting The Juice

Give your berries a quick rinse and pick out any leaves and stems that float to the surface. You dont have to be too thorough washing them at this point because were going to sterilize the juice later with the Campden tablets.

Extract the juice any way you can. I used a Breville Juicer, but go ahead and use what ever juicing device you have in your kitchen. If youre looking to make more than a one gallon batch I recommend investing in a Fruit Press, it saves you the hassle of constantly unloading fruit pulp from your home juicer multiple times.

Once your fruit is juiced, retrieve the pulp and add it into your straining bag.

Tie off the straining bag and add it, along with your fruit juice, to your primary fermenter.

Straining With Muslin Cloth Or Mesh Bag

This is the point where your equipment will get the most use so make sure everything is sterilised and maybe have some old cloths on standby, just in case!

The first task is to strain your liquid using a muslin cloth or a mesh bag. Try to remove as much residue as possible.

This step may require you to phone a friend to prevent you from some small, but always costly, spillages.

Get your friend to hold the bag securely while you pour your liquid, or vice versa.

Squeeze the bag when you are done and you will be surprised at how much delicious juice you nearly threw away. Repeat this process until you are happy that you have removed most, if not all, of the sediment.

Follow this up by transferring your liquid into a clean demijohn using a sterilised funnel. At this point you may realise that you cannot fill the demijohn. Do not panic and top it up using a mixture of water and sugar .

When complete, secure with a bung and attach the airlock. Leave your liquid in a dark and cool environment for 1 month.

Twenty-four hours after adding the enzyme, you can add the yeast to the wine.

Apply the bung and air lock again and let it sit for another 5-7 days. Check on it daily to see whether the fermentation is happening quickly enough.

Make sure to stir it once or twice a day. Dont forget to sterilize your stirring spoon!

Place your primary fermentation container in an area thats away from direct light but where you can still get to it.

We recommend storing it in an area thats a little cooler than room temperature!

Youll also start seeing a floating cap of fruit pulp in your primary fermentation container during this stage. Remember to keep breaking it up during your daily stirring sessions.

  • The specific steps will depend on the stabilizer you used.

Racking means youre moving the wine from one container to another without a pump. Instead, youll be using gravity.

To do this, place your currently-filled demijohn onto a countertop or other raised surface, then position the new demijohn under it, on the ground.

  • Unseal the bung, and stick the siphon tube into your wine. Put the other end into the empty demijohn.

But before that, dont forget to take a gravity reading with the hydrometer so that you can calculate the final ABV of your blueberry wine.

How To Prepare Them

Attempt to start the process as soon as you have collected your berries.

If one or some of your berries start to turn mouldy this poses a great risk on spreading to the rest of your stock.

Firstly, go through your berries and remove any debris such as dirt, bugs, and twigs

Also search for berries with mold and any berries you accidentally picked and may not be ripe enough yet.

Once youve sifted through your berries and are happy with them, wash them with cool water.

Place the berries into a large pot and crush them with your hands .You could also grab a potato masher if you want to avoid getting blue stained hands which can be stubborn to remove.

The aim is to ensure all berries have been split and their juices are seeping out.

You may hear some other tips on the grape vine. One recommendation we strongly discourage is to blend your berries using a processor or a juicer.
