David Duncan On Sustainability And The Future Of Silver Oak Cellars

Silver Oak Cellars is a family-owned, Napa Valley winery that was started by Ray Duncan and Justin Meyer in 1972. The company currently has two wineries, one in Oakville in the Napa Valley and one in Healdsburg in the Alexander Valley. Its devoted entirely to the production of cabernet sauvignon wines. It also owns the Ovid and Soda Canyon Ranch vineyards in the Napa Valley.

A sister company, Twomey Cellars, which the family established in 1999, is devoted to the production of Pinot Noir wines. Twomey has wineries in Calistoga, Healdsburg, Philo and Dundee, in Oregons Willamette Valley.

Today the company is run by Rays sons. David Duncan is the President and CEO and Tim Duncan serves as Executive Vice President.

Silver Oak is one of Californias most iconic producers. Its wines have achieved near cult status among enthusiasts. Its two wineries are considered the greenest wineries in the world, exhibiting a commitment to sustainability and minimizing its environmental footprint long before such objectives became fashionable. Its also the only winery to possess their own oak cooperage.

Recently I sat down with David Duncan to talk about Silver Oak and Twomey, their contrasting wine making philosophies and their future prospects.

Stewards Of The Land Benefit From Advances In Sustainable Technologies

1997 Silver Oak Cabernet Sauvignon Napa Valley

Silver Oak Cellars began as a partnership in the early 1970s and has been under the sole ownership of the Duncan family since 2001. Being stewards of the land, taking care of our vineyards, and trying to do all we can to protect what is our only home is something that is sort of in my heart, Silver Oak CEO David Duncan says. Water conservation and the lack of pesticide usage, all those things that go into what the general public thinks about sustainability, fit right in with what we do.

Sagan Piechota Architecture led the building design of the new Alexander Valley facility, with Cello & Maudru Construction serving as the general contractor. In addition to sustainability and functionality, aesthetics were important to Silver Oak. Plumbing and catwalks were laid out in a symmetrical, pleasing way, and the facility increased daylighting through skylights and other measures. Reclaimed redwood from 85-year-old wine-fermentation tanks was reused as external siding.

For task lighting, technology has advanced remarkably: Energy efficiency that would have been difficult or cost-prohibitive for a winery operation now is doable. Every task light in the facility is LED, for examplewhich would have been three times the cost just a decade ago, according to Duncan. The bulbs need to be changed so infrequently that its almost a nonissue going forward.

Making The Most Passionate Fans Feel Special

Last week, Yukari and I visited the beautiful Silver Oak Napa Valley winery. We got a tour, learned more about how the wine is made, tasted some amazing varieties, and had some wonderful food.

It was a fabulous experience!

Especially memorable was the fantastic four-course lunch prepared by Executive Chef Dominic Orsini together with a wine paring.

Chef Dominic began at Silver Oak in 2008 and has transformed what it means to be a winery chef. His philosophy centers on creating cuisine designed to enhance the enjoyment of wine.

Many of the ingredients the culinary team uses are sourced from the gardens on the Silver Oak property, creating a sense of place that is so central to the crafting of fine wine.

The Chilled Snap Pea Soup we enjoyed as a starter was especially amazing!

So how good was the meal?

Our Silver Oak lunch was way better than every other meal we enjoyed while we were in Napa. And that includes several dinners at well-known Michelin starred restaurants near Silver Oak from some of the most famous chefs in the world. Wow! Thank you, Chef Dominic. You are as superstar!

Meyer Family Cellars 2019 ‘spitfire’ Cabernet Sauvignon Oakville

Just released and sourced exclusively. Fashioned by Matt Meyer, son of Silver Oak Cellars owners Bonny and Justin Meyer. About as limited as Silver Oak Wines and equally delicious, this rarity is an irresistible offer at a fantastic price.

Tasting Notes: “Spitfire is a good old American Cabernet that is polished and elegant. The aromas spring to life with ripe plum and blackberries jumping out of the glass. Once open for a few minutes, we start to see the telltale American Oak vanilla along with hints of caramel and pepper. Two years in oak have softened the palate, making this a very approachable Oakville red wine. As with previous vintages we get hints of cardamom and other savory characters.

Unlike previous vintages, this wine does not seem to need extra bottle aging to settle down. The 2010 seems surprisingly drinkable for such a young cabernet, making it extremely enjoyable at the moment and an appropriate accompaniment to your next steak.100% Cabernet Sauvignon. 13.7% ABV.

A Devastating Fire Creates A New Opportunity For A California Winery

In 2006, a fire severely damaged Silver Oak Cellars winery in Californias Napa Valley, destroying its facilities and an estimated $2 million worth of wine. For this longtime family business, the immediate aftermath was emotional, as the owners surveyed the damage and absorbed this grievous loss. But the family soon realized that the fire had given them an opportunity to rethink their business and bring a proverbial phoenix out of the ashes.

The winemakers first major decision after the fire was to rebuild as soon as possible, and the second was to do it sustainably. The result of this effort was a redesigned facility in Napas Oakville region that achieved LEED Platinum certification, the first production winery in the world to earn that status. Now, a second phoenix has risen, 10 years later, to match the first.

In 1972, Silver Oak Cellars was founded in the emerging Napa Valley wine district of California to craft age-worthy 100 percent cabernet sauvignon at a time when people thought France made the best wines. Since then, the companys focus on its fans is as important as the quality of its wine in building lasting success.

The niche that Silver Oak launched was unique at the time. They didnt copy the French blends, rather, they created an American original by aging cabernet sauvignon for about 25 months using American Oak barrels to make an American full-bodied wine.

So important are the barrels to Silver Oak that the company became the first North American winery to own an American oak barrel cooperage to ensure a steady supply for wine-making.

An unheard-of price, $6 a bottle was more than many of the valleys wines that were around $3/bottle or less. On pricing alone, one could make the argument this was one of Napas first cult wines, developing a loyal following without being exclusionary. Luxury-like accessibility was born. Launched in 1972, Silver Oak continues to be one of the most popular American wines in the country and the world. Silver Oak is the exclusive wine partner of the San Francisco Giants and the Golden State Warriors, and counts the likes of Oprah Winfrey, Matthew McConaughey and Lebron James as superfans. We caught up with CEO David Duncan on Silver Oak’s silver anniversary to discover how the brand continues to thrive.

How does a brand stay true to its heritage while continuing to innovate?

Youve got to celebrate in a way that makes the roots proud but keeps moving the brand forward. First, were updating the bottle, but our fans are insiders on our journey, so we hid the est. 1972 as an Easter Egg in the mountain horizon of the illustration. We also updated the vineyard rows to reflect the more sustainable way we farm and irrigate today. It’s a nod to our Alexander Valley winery being the first LEED-Platinum winery ever built and the first winery to receive Living Building certification.

Silver Oak Cellars Buys Zinfandel Specialist Sausal Winery

2009 Silver Oak Napa Valley Cabernet Sauvignon

The owners of Silver Oak Cellars are buying Sausal Winery, a small Sonoma County producer that specializes in Zinfandel. The sale includes the winery, the Sausal brand and a 113-acre property planted to 75 acres of vines. The sale price was not disclosed.

Silver Oak CEO David Duncan, whose family owns the winery, said the goal of the purchase was to provide the winery with new sources of Cabernet Sauvignon. The Sausal property is located in Alexander Valley, about a half-mile south of Silver Oaks 80-acre Miraval Vineyard, a key source for Silver Oaks popular Alexander Valley Cabernet. We think this is an equally or possibly even a better site to grow Cabernet long term, so we were excited about the site and the opportunity, he said.

What will happen to the Sausal brand has yet to be determined. Sausals founders, the Demostene family, mainly focused on Zinfandel and the winery consistently turned out good values. The property includes some of the oldest Zinfandel vineyards in Sonoma, with histories that can be traced back nearly 130 years. Duncan said the Sausal tasting room and wine club will remain open for now.

There are no plans to add a Zinfandel to the Silver Oak lineup or its sister winery Twomey, which specializes in Merlot and Pinot Noir, Duncan said.

Twomey Cellars 2019 Pinot Noir Anderson Valley

Twomey’s small-production Pinot Noir from the folks at Silver Oak is now available in limited quantities. From two outstanding Anderson Valley vineyards, the estate-owned Monument Tree Vineyard and the Ferrington Vineyard, here’s a lovely expression of Anderson Valley Pinot Noir from the makers of Silver Oak. Aged 13 months in barrel, with 11 months of those spent on primary lees in 100% French Oak . This wine was made with 24% whole cluster.

The Twomey Anderson Valley Pinot Noir 2018 was sourced from the sustainably farmed Ferrington Vineyard in Boonville and the organically farmed Savoy Vineyard in Philo and Monument Tree Vineyard in Navarro. We began making wine from Monument Tree in 2007 and have been so impressed with the quality of the fruit that we purchased the vineyard in 2010, recognizing that it had become the crown jewel of our Anderson Valley bottling.

May 7, 2022 â Wow, amazing how its changed in just a few months. The latest bottle, when first opened was much better, but still very tight. Second half of the bottle was stored. I removed the air . Day 3, a completely different wine. Much smoother, better balance, and texture. Oak and fruit were much better, lots of vanilla, dried herbs, cherries, mint, coconut, and spice! But, and this is a Big But, this will definitely benefit from more time Many Years In Fact . I can only imagine what this will be like in 2 decades. Very impressed with the change in just a few months. Im going to do my damnedest to keep my hands off my remaining bottles.

DD:We are proud of our family ownership for 50 years. It has been the reason for many decisions that have come to define Silver Oak and our other wineries. For one, we age our bottle longer than any other California cabernet, and, if we had a bunch of shareholders expecting short term return, they wouldnt have signed off on not tasting the finished 1972 Silver Oak Napa Valley until 1977, like we did. We made 5 vintages before we sold our first bottle and found out if anyone liked it! We just knew, we did.

Family ownership is also the reason we have the two greenest wineries on the planet our Silver Oak Oakville and Silver Oak Healdsburg wineries are the first two LEED-Platinum wineries ever, and Healdsburg just became the first to earn Living Building certification.

We also trying to be one of the global leaders on viticulture, which is probably the most underestimated factor on what ends up in the bottle.

JM: Your two main expressions are the Silver Oak Napa Cabernet Sauvignon and the Alexander Valley Cabernet Sauvignon. Many wineries look to identify additional bottlings, either barrel selections or specific terroir driven offerings, which they can offer at premium prices. With 750 acres of vineyards, you certainly have an opportunity to pursue that strategy, yet you didnt. Why?
