When someone who works in the wine trade mentions spicy reds, theyre not talking about mulled wine. Instead they are referring to a type of red which has aromas and flavours of clove, cinnamon, vanilla, nutmeg and black pepper. None of this has been added in, of course. The spiciness has developed in the wine naturally, during maceration , during fermentation and then while ageing before bottling.

Its always intrigued me that wine so rarely tastes of the actual fruit it has been made from grapes. Instead, it delivers myriad other fruit flavours, as well as herbs, grass, flowers and sometimes vegetables like asparagus and green pepper. But perhaps the most intriguing are these spicy notes. They come from two sources: the grapes themselves and from oak used to contain the wine while its fermenting and/or maturing.

But this, and plenty of other varieties, can turn that way if put in oak barrels as the oak flavour gradually seeps out into the wine, providing vanilla and black pepper in particular. If the oak barrels are new, the spiciness will be stronger as the casks age through second, third and fourth fill, it becomes more subtle. And, of course, if you combine a spicy grape variety with oak use, you simply turn the heat up on the finished wine.
