Ive made a lot of cheese boards for you guys. I know! I just love them so much. Styling them and photographing them, and eating them, of course.

But Ill never make the same cheese board twice. Im always looking for new and fun goodies to add to my boards, and new ways to pair the ingredients with beverages.

What Cheese For A Cheese Board For Wine Tasting

It might be an unconventional approach, but rather than struggling with cheese decision paralysis, I just did a flight of cheddar cheeses for this board!

Just as there are subtle differences between different varieties of wine, its the same for cheese.

Hard cheeses like cheddar are generally the easiest types to pair with wine, and cheddar works well with both white and red wines.

In particular, cheddar pairs very well with an oaky Chardonnay, as well as Syrah and Malbec.

So, this one platter can be a cheese board for red wine AND a cheese board for white wine!

What Foods Go With Wine

To throw an impromptu party, you wont want to spend time preparing food. Think simple foods that dont require any cooking or baking. I like to build a cheese board to serve everything from. You can even build on different cheese boards to go with different types of red wines, sparkling wines, and white wines!

Here are a few ideas:

Snacks and Apps that pair well with both a light RED WINE or a WHITE WINE like a caramel-y Chardonnay!

And, of course, a variety of cheeses that go with wine. I should also note, that light berry fragrant Rosé and Sparkling White wine are just about good with ALL THE THINGS. In my my humble opinion. Either way, they are ARE A MUST at wine and cheese parties. Why? Because these lightly sweet wines are the perfect intro wine to those who may not be frequent wine connoisseurs. Aka wine newbies. I say that with no snobby wine face. Mmm k?

Blended Red Wine Pairing

For those lovers of South African meat BBQs and the meat lovers pizza, youll be familiar with the balance that blended reds;like Cabernet Sauvignon, Merlot, Tempranillo and Malbec bring to the proteins and fat in meat.;

Match with: cheese and meat platter

Next time youre serving one of these great wines, put together a selection of cold roast beef, spicy cooked bierstick, Spanish chorizo, beef pastrami, hot pork and thinly sliced salami on a platter. Add mustard, spicy tomato chutney, olives and a soft blue cheese like gorgonzola along with lots of sliced ciabatta.

Wine Pairing: Moschofilero / Riesling

Dolmadakia is one of those classic Mediterranean vegetable-based dishes that makes all Greeks homesick. Spring onion, garlic, mint, dill and coriander wrapped up in fresh vine or grape leaves. Some recipes even call for minced meat. Whats not love?

The sheer amount of herbs that take centre-stage in this dish make white wine the best pairing for dolmadakia. Especially floral, aromatic white wines. Think Riesling or Vinho Verde, or even a classic Sauvignon Blanc.;

If youre keeping it Greek, though, we strongly suggest Moschofilero.

Moschofilero comes from the region of Mantinia, towards the east of the Pelopponese. During the growing season it becomes very hot in the day, but quite cool during the night. This means that Mantinia wines are ripe, concentrated and somewhat sweet, whilst being able to retain their acidity thanks to the lower temperatures in the evening. Moschofilero is the most well-known example of Mantinia wines, and pairs wonderfully with Greek vegetable dishes like Dolmadakia. This is really one to be enjoyed on balmy summer evenings!

Oaked Chardonnay is known for its buttery taste while the unoaked chardonnay is zesty with more floral and citrus notes. Oaked chardonnay can add a layer of richness to your meal while unoaked chardonnay will keep the meal light and refreshing.;No matter what type of Chardonnay you choose, its bound to taste excellent with any delicate chicken or pork dish.

A Few General Guidelines For Pairing Wine With Appetizers:

Sparkling wine

A good choice if the appetizers are performing their traditional role as pre-meal nibbles – particularly good with anything crisp, crunchy or deep-fried. Prosecco will be most people’s favourite these days though there are many other good sparkling wines including cava, franciacorta and, of course champagne.

White wine

Think fresh, unoaked whites rather than a rich white like chardonnay which is better with a meal. Sauvignon blanc is generally popular but a crisp Italian white like pinot grigio or gavi generally go down well too especially with Italian antipasti. And although many people think they don’t like riesling in practice they generally do, especially with spicy snacks. If you enjoy it, go for it!

Red wines

More challenging as although many people like full-bodied reds like cabernet sauvignon and shiraz they can be a bit heavy at the start of the evening. Think more in terms of medium-bodied reds like pinot noir and merlot and lighter styles of zinfandel.

Rosé

A great option and not just for summer. Dy rosés from Provence and elsewhere in Southern France are hugely versatile and can stand up to big flavours. A good choice for charcuterie, cheese and tapas.

Sherry

Not for everyone but if you’re into tapas you can’t beat a chilled fino or manzanilla sherry. I’d offer the choice of one or two other wines – either white, rosé or red – too though

Shiraz / Syrah Pairing

Its no accident that the flavours of ripe Shiraz go so well with cured salami, olives, sun-dried tomatoes and feta cheese, as they all share strong influences of the Mediterranean.

Shiraz refers to varieties grown in Australia, while New Zealand and the rest of the world call this dry, very dark red wine with plum and spicy black pepper flavours Syrah.;

Match with: pepper steak

A great food pairing with Syrah is steak, especially if youre serving with a pepper sauce. The black pepper notes of the Syrah match the pepper sauce and the tannins in the wine balance the steaks natural fat.;

Even a slow cooked steak improves dramatically with just a little wine added.;

For a different take, try a full flavoured venison steak with a Shiraz or Syrah for a beautiful match.

Match with: cheese

An aged Parmigiano Reggiano is delicious, as is aromatic and blue cheese.;

Match with: bitter chocolate

Nothing goes better with an Australian Shiraz than dark, bitter chocolate. It just works.

Crisps & Tortilla Chips

Were presuming theres a lot of salt and /or flavour going on in this bowl. Off-dry whites or slightly sweeter Prosecco styles are a very easy match for the salt. For jalapeno spice however, dial up the fruitiness and sweetness in the wine to foil it. Try a Sauvignon blanc from New Zealand or a light, bubbly red, slightly chilled such as a . dry Lambrusco. It will provide a really interesting, quirky match too.

How To Pair Wine With Greek Food

Having a wine tasting party, or just feel like having some wine? People have no problem cracking their favourite beer and drinking it with whatever snacks are around but for some reason, we get intimidated when choosing a wine with our food or we feel guilty drinking wine with something we might not feel is suitable.

Wine Pairing: Xinomavro / Sangiovese

Moussaka is like lasagna. A juicier, more vegetal version of lasagna, with cinnamon, cloves and thyme. Greeklasagna.

A true Moussaka recipe is loaded with beef or lamb mince, potatoes, eggplants and spices, creating a juicy, softly-textured melange that goes perfectly with a ripe red wine like a Sangiovese or aged Montepulciano. You could also opt for an orange wine from Georgia the exotic, tannic fruit flavors pair really well with eggplant.;

If possible though, you would be better off sticking with the Greek options. In this case, I recommend Xinomavro. Its a red wine grape grown in the mountainous areas towards the North Macedonian border, and it pairs incredibly with Moussaka.

Sometimes called the bastard son of Nebbiolo and Pinot Noir, Xinomavro has eclectic tasting notes like sundried tomato, red berry and prunes. Pair it with the thick, meat-and-veg texture of a good Moussaka, and this combo really is a winner.

Since pizza, pasta, and other tomato-based dishes are Italian, it only makes sense to pair these foods with a glass of good Italian wine. Wine Pairing: Retsina / Vinho Verde

A real Greek chicken wine pairing will take into account the subtleties in how the Greeks prepare chicken. Lemon juice, olive oil, white vinegar, oregano, paprika and thyme all feature. This isnt unusual for Mediterranean-style chicken dishes. The difference here is that Greek Gyro also uses yoghurt, which really infuses the marinade within the meat.

Gyros is an aromatic chicken dish with a strong finish, so a complex Vinho Verde from Portugal, which can cut through the chicken in its fresh acidity whilst standing up the bold flavors is a great choice.

On the Greek side of things, consider reaching for a Retsina. Its an ancient Athenian wine that was traditionally kept in resin-covered amphorae jars. Retsina has a uniquely salty, lime-like finish, which helps it stand up to the Gyros flavorings without overpowering the soft yoghurt-marinated chicken.
