This is a great question and one that has perplexed many winemakers. Choosing wine yeast is part of the art of wine making. What wine yeast you choose makes a difference.
When you ask the question: what type of wine yeast should I use? there is a lot to think about before answering. In fact, there is more to think about than most people realize, and this is where some home winemakers can fall just a little short in their wine making. Many are under the impression that wine yeast is just wine yeast and making a selection is not that big of deal. Sometimes the result can be pitching whatever yeast happens to be on hand. Some even contemplate adding bread yeast, but the wine yeast vs bread yeast thing is a whole other story.
In reality, there are many different wine yeast strains, each bringing its own to the wine. Some will ferment to higher levels of alcohol than others. This is called alcohol tolerance. Other wine yeast strains may not ferment to higher alcohol levels but are effective at fermenting down the residual sugars. This is referred to as wine yeast attenuation.

How Can You Tell If Your Wine Is Fermenting
You can quickly tell if your wine has started fermenting just by looking at it. For starters, observe your wine and look for bubbles forming. If you see tiny bubbles rising from the bottom, then your wine has successfully started to ferment.;
Furthermore, your wine is actively fermenting when you hear fizzy noises and pieces of fruit are being thrown. Using a hydrometer to determine if your wine is still fermenting is recommended if it is near completion.
What Should I Do If My Wine Fermentation Is Not Bubbling
Wine yeast is sensitive to temperature, which is primarily why it wont bubble in some cases. Your fermentation temperature should be between 68 – 86°F for reds and 59°F or below for whites.;
If it doesnt reach within this range, you can still save your wine by heating it. You can either transfer it to a warmer location or heat the wine fermenter.

What Kind Of Airlock Should I Buy

How Do You Make A Dry Wine Versus A Sweet Wine
The final sweetness of your wine is determined mostly by two factors: how much sugar you add and how much sugar your yeast can eat. Different strains of yeast can consume different amounts of sugar before they peter out and die in the alcohol that theyve made.
For an example, lets walk through two different kinds of yeast in a wine batch.
- Yeast A can survive to 12% alcohol content. This yeast will eat some of the sugar you add, die off once the wine reaches 12% alcohol, and then the rest of the sugar will be leftover for the wine to taste sweet.
- Yeast B can survive to 18% alcohol content. It eats all three pounds of that sugar before dying off , and you end up with a dry wine.

Not all yeast strains can produce a well-rounded, interesting wine. Some yeasts, in fact, arent recommended unless you blend the resulting wine with that of another strain. With the remaining wine Ill be blending in varying proportions. So perhaps a few bottles of 50/50, 25/75, and 75/25 the other way. The main objective is to understand the impact yeast has on wine.

Picking A Winemaking Yeast
To give you an idea of how to pick a wine yeast Ill walk you through my own decision making process.;My next wine is going to be a Riesling kit and Im going to do a little experiment. Im going to pick my own yeast to replace whatever the kit comes with.
Ill be using two different yeast strains in a split fermentation. Half of the grape juice will be fermented with one strain of yeast and the strain will ferment the other half. This way I can directly compare how the same wine tastes when made from two very different yeasts.
Here are the yeasts Ive chosen and why.
The first yeast is W15. This yeast is known to produce citrus flavors, heavy mouthfeel, and can stand up to aging. Aging is an important characteristic for a kit wine for reasons well explore here in a minute.
Th second yeast Ive picked is R-HST . This yeast can produce rose and peach flavors, some mouthfeel, as well as minerality. Minerality is a quality that also lends itself to aging.
