You might not keep Port in your cupboard so heres my quick overview and ways to use it. Port is a fortified wine with brandy added during the fermentation process. Port, also called Port Wine, come in ruby and tawny. Ruby Port is young and has a deep, ruby colour. Tawny Port is aged and is a brownish, tawny colour. Its less sweet and is often served with a cheese course after a meal. Its the perfect drink to accompany a charcuterie board.

Like any dressing recipe, you can play around with the ingredients and make the dressing to your taste. Thats the beauty of homemade. Like I mentioned earlier, add as much blue cheese as you like. Omit the fresh parsley, or add dill instead, or another fresh herb of your choice. Swap out sour cream and use yogurt instead. I personally love to add lots of coarsely ground black pepper.

This vinaigrette is absolutely to DIE for on my pear, blue cheese, and candied pecan salad, but works great on any leafy green salad.

Chestnuts can be bought in airtight bags, prepared and ready to use. Especially enjoyable as a holiday dish, added to many recipes.

Mash the packaged chestnuts or put them through a potato ricer into your flour and eggs. Roll like a long sausage and cut in one-inch portions to make gnocchi. Simmering takes just seconds.

A different use: prepare your favourite spaetzle and incorporate the ready-to-use chestnuts, gently whisking in. I like to dredge the chestnuts package in either almond flour or maybe chickpea flour before adding to any mix to stop clumping.

  • Add flour: like a quick roux! The flour acts as a thickener. Its like a quick version of a roux, a way to thicken creamy sauces like in our Easy Cream Sauce.
  • Simmer with the wine and cream for 3 minutes.
  • Add the Parmesan cheese and whisk the sauce until it melts.

How To Make Port Wine Reduction Dressing

Ok, so Port wine is a fortified sweet Portuguese wine, thats typically served as a dessert wine or as a digestive. Being Brazilian, Port wine was a very common thing in my house, and my mom usually used it to make special steak sauces and desserts. Porto also one of the first wines I drank because it can be so sweet and dangerously easy to drink. If you havent had a good Port wine, I really recommend you try it.

For this recipe we dont need a great drinking Port wine. Real Port wine is imported from Portugal, and while its not unreasonably expensive, its also not cheapsy wine. If youre on a budget, you can totally just use cooking Port wine that you can find at grocery stores, usually where vinegars are. Generally, you can get it at whole foods for under 10 bucks.

To make the port wine dressing, add the port wine to a sauce pan and bring to a boil.

Then, let it simmer uncovered until the wine is reduced to about 1/4 cup and is syrupy . Like this!

Let the wine reduction cool, and meanwhile grill the cheese.

If you are curious about queijo coalho you can learn a little more on this other post, but to sum it up, queijo coach or coalho cheese is a salty Brazilian cheese from Northeastern Brazil.

To grill the queijo coalho, remove and discard the skewer that comes with it. Then, cut the cheese into little cubes. Like this!

I love how versatile this salad is. The Port wine reduction vinaigrette and the grilled cheese make it a special and elegant salad to have as a holiday starter and side option.

This is also a great make ahead recipe! I love that I can grill all the cheese, and make the reduction vinaigrette a day or two in advance. This really helps me maximize my time preparing for a special event or just the week ahead. Plus, the fact that you can make some stuff ahead makes it a wonderful side dish salad to bring to cookouts, potlucks, and holiday parties!

This pear salad recipe is a fantastic side dish that pairs great with roast turkey or chicken, and even with a juicy steak. But honestly, I also love to eat it as a meal, just by its delicious self.

Change up my Waldorf salad recipe made with apples and walnuts using chunks of firm cored Bosc pears and homemade candied hazelnuts from your pantry supply. Dust the chopped pears with a pinch of nutmeg and fresh ground pepper.

If you love a little extra crunch, drain a tin of water chestnuts and chop very coarsely. Perhaps spritz with Bacardi Fiero. Or a little fresh orange juice. Add to the chopped firm Bosc pears.

For another boost, drain a tin of sweet mandarin orange segments and gently fold into your salad after you have drizzled with my warm blue cheese dressing. This whole mixture turns an otherwise boring iceberg lettuce into something really delicious.

Shred iceberg lettuce wedges and add to the salad bowl. Drizzle with my warm blue cheese dressing just when ready to serve.

Greek salad dressing is an oil and vinegar based dressing made with these basic pantry ingredients:

  • Extra-virgin olive oildont use a light olive oil for salad dressings or vinaigrettes because you want the entire depth of flavor to shine through
  • Red wine vinegaradds acidity and flavor. In a pinch, you can substitute white wine vinegar instead.
  • Fresh lemon juicealso adds acidity, but also brightens up the over all taste. Both the red wine vinegar and the lemon juice contribute to the tanginess of the dressing.
  • Garlicminced so that it mixes well in the dressing
  • Freshly ground black pepper
  • Kosher salt
