Ruby Or Tawny Port For Cranberry Port Vinaigrette

Easy Homemade Blue Cheese Dressing for Salads Chicken Wings

You might not keep Port in your cupboard so heres my quick overview and ways to use it. Port is a fortified wine with brandy added during the fermentation process. Port, also called Port Wine, come in ruby and tawny. Ruby Port is young and has a deep, ruby colour. Tawny Port is aged and is a brownish, tawny colour. Its less sweet and is often served with a cheese course after a meal. Its the perfect drink to accompany a charcuterie board.

Organize For Success Cranberry Port Vinaigrette

Im all about homemade salad dressing so Im set up for that. Ive got a variety of Mason jars with plastic lids and make dressing in the 1-cup and 2-cup sizes. I also like the little 1/2-cup size for a small amount of leftover dressing. I can even pop that into my lunch bag.

For more on my system for jars , check out Organize for Success with Mason Jars.

Face it, all salad dressing looks the same once its in the fridge. The darker ones are likely Asian and the lighter ones arent, thats my best guess most days. So, as often as I can, I label them. Ive got little sticky labels from the Dollar Store just for this purpose. Sometimes Ill even use my Dymo label maker. And even today, Ive got at least three jars of salad dressing in my fridge with no label.

In the comments below Id love to hear if you made a version of this salad.

How To Make This Recipe Your Own

Like any dressing recipe, you can play around with the ingredients and make the dressing to your taste. Thats the beauty of homemade. Like I mentioned earlier, add as much blue cheese as you like. Omit the fresh parsley, or add dill instead, or another fresh herb of your choice. Swap out sour cream and use yogurt instead. I personally love to add lots of coarsely ground black pepper.

Is White Wine Sauce Alcoholic

Does white wine sauce contain alcohol? Yes. But only trace amounts per serving . We felt comfortable serving this pasta to our 3 year old. But you should do only what youre comfortable with! If youre sensitive to alcohol, pregnant or serving this kids, heres what to know:

  • You may have heard that when cooking food with alcohol, all the alcohol burns off. This is false: typically after cooking a food with wine for 15 minutes, about 50% of the original alcohol remains.
  • This sauce is simmered for 5 minutes, so about 85% of the alcohol remains.
  • The recipe uses ½ cup or 4 ounces of white wine for 4 servings. So this would be 0.80 ounces of alcohol per serving.

Ingredients For This Blue Cheese Dressing Recipe

This easy blue cheese dressing recipe has just 5 simple ingredients , but is packed with so much delicious flavor. Heres what youll need:

  • Sour Cream & Buttermilk These two ingredients provide the creamy texture of this dressing. For a low-calorie version, use plain yogurt instead of sour cream and low-fat buttermilk. Sour cream will definitely give you a richer, more flavorful dressing, but you can still have a tasty dressing using yogurt.
  • Red Wine Vinegar The vinegar adds a little tang. You could also use white wine vinegar or another favorite vinegar.
  • Shallot Adds fresh flavor to the dressing.
  • Salt & Pepper To bring out all of the delicious flavor.

Chestnut Pasta Gnocchi Or Spaetzle By The Fire

Chestnuts can be bought in airtight bags, prepared and ready to use. Especially enjoyable as a holiday dish, added to many recipes.

Mash the packaged chestnuts or put them through a potato ricer into your flour and eggs. Roll like a long sausage and cut in one-inch portions to make gnocchi. Simmering takes just seconds.

Heres an old seasonal long read that can be adjusted many ways. Scroll all the way down at any of my gourmet recipe columns as often there are add-on additional recipes.

A different use: prepare your favourite spaetzle and incorporate the ready-to-use chestnuts, gently whisking in. I like to dredge the chestnuts package in either almond flour or maybe chickpea flour before adding to any mix to stop clumping.

Slip into softly boiling water. When spaetzle floats to the top, it is ready to eat.

Lightly brown the gnocchi or the spaetzle in noisette in a single layer in a wide skillet with low sides. Sprinkle with nutmeg, kosher salt and crushed pink peppercorns. Deglaze the residual little bit of unsalted butter in the skillet using Asbach Uralt brandy, flambé to reduce and drizzle over whichever chestnut pasta you chose.

You might like to mound the pasta generously on a large soup plate heated with hot water as cooked pasta doesnt retain heat well.

Scatter fresh grated delicate parmesan cheese just when ready to eat. You might like to use Sartori BellaVitano Raspberry Ale cheese, from Canadian Goat Cheese Celebrity Cheese company.

Homemade Blue Cheese Dressing Recipe

I used to work at a dive bar. I used to frequent dive bars. Now I work in my PJs at home and spend more time at fancy wineries drinking expensive Pinot rather than in dark bars drinking pints.

But deep inside me, that dive bar girl still exists.

And this dive bar girl loves her buffalo wings and cheap iceberg lettuce salads. I love a classic green salad with canned black olives, cheddar cheese, croutons and a duo of blue cheese and thousand island dressings.

Today Im sharing my recipe for what I believe to be the BEST blue cheese dressing.

  • Add flour: like a quick roux! The flour acts as a thickener. Its like a quick version of a roux, a way to thicken creamy sauces like in our Easy Cream Sauce.
  • Simmer with the wine and cream for 3 minutes.

How To Make Port Wine Reduction Dressing

Ok, so Port wine is a fortified sweet Portuguese wine, thats typically served as a dessert wine or as a digestive. Being Brazilian, Port wine was a very common thing in my house, and my mom usually used it to make special steak sauces and desserts. Porto also one of the first wines I drank because it can be so sweet and dangerously easy to drink. If you havent had a good Port wine, I really recommend you try it.

For this recipe we dont need a great drinking Port wine. Real Port wine is imported from Portugal, and while its not unreasonably expensive, its also not cheapsy wine. If youre on a budget, you can totally just use cooking Port wine that you can find at grocery stores, usually where vinegars are. Generally, you can get it at whole foods for under 10 bucks.

To make the port wine dressing, add the port wine to a sauce pan and bring to a boil.

Then, let it simmer uncovered until the wine is reduced to about 1/4 cup and is syrupy . Like this!

Let the wine reduction cool, and meanwhile grill the cheese.

If you are curious about queijo coalho you can learn a little more on this other post, but to sum it up, queijo coach or coalho cheese is a salty Brazilian cheese from Northeastern Brazil.

To grill the queijo coalho, remove and discard the skewer that comes with it. Then, cut the cheese into little cubes. Like this!

NOTE: You can use these same instructions to grill Halloumi or Panela cheese.

Until they are nicely golden like this.

A Versatil & Festive Pear Salad Recipe

I love how versatile this salad is. The Port wine reduction vinaigrette and the grilled cheese make it a special and elegant salad to have as a holiday starter and side option.

This is also a great make ahead recipe! I love that I can grill all the cheese, and make the reduction vinaigrette a day or two in advance. This really helps me maximize my time preparing for a special event or just the week ahead. Plus, the fact that you can make some stuff ahead makes it a wonderful side dish salad to bring to cookouts, potlucks, and holiday parties!

This pear salad recipe is a fantastic side dish that pairs great with roast turkey or chicken, and even with a juicy steak. But honestly, I also love to eat it as a meal, just by its delicious self.

I hope you love this salad as much as I do!

Beijinhos xx

Bom Apetite!
