    The type of rice used in making sake is called sakamai. Sakamai has big and fat grains – of course this is different from your usual rice. Today, there are around 50 sakamai varieties that are used, with about nine basic types.

    Nishiki, Miyama Nishiki, Gohyakumangoku, and Omachi are some common types of sakamai. The type of rice used and the degree to which it is polished accounts for the final flavour and style of the sake. The kind of water used is also integral to the final flavour of the sake. Water contains many compounds that are vital to the production of sake. Some of these compounds also are detrimental to sake, this is why the kind of water used as well as its source is crucial to the making of sake. Most sake uses high-quality regional water, which gives sake its definite and unique style – just like terroir! Some of these regions have hard water, while others have soft water, as we have seen under the classification of sake, these two different kinds of water have their role to play in the flavour and style of sake!
