  • Siphon off the mix into a carboy
  • Let the carboy site for about a month
  • Siphon into another carboy, this time add potassium metabisulfite and let it sit for about another month
  • Once the wine is clear you are ready to bottle
  • Take a measurement with the hydrometer. Use it to calculate the amount of alcohol in the wine.
  • Taste the wine and determine if you need to add any sweetener. Sweeten with sugar to taste.
  • Add potassium metabisulfite and potassium sorbate
  • Bottle your wine.
  • Let it sit for 2-3 months before trying it.

    Start with at least 5.25 gallons of white grape juice to end up with five gallons of wine. Pour the juice into a carboy or other closeable container larger than the volume you will ferment, as the wine can foam or expand and ooze out the top.

    White grape juice is actually green or golden at first, but it will turn a brown color after its pressed and as it starts to ferment. Dont worry, it will lighten to pale yellow or gold later. Use an airlock to keep oxygen out and allow the carbon dioxide produced by fermentation to escape.

    Add wine yeast, according to the instructions on the packet. Keep the juice at a comfortable room temperature, as advised on the yeast instructions. It should begin to emit a light foam of carbon dioxide within a day or two, which signals the start of fermentation.

    Remove the stopper once a day, or as needed, to stir the juice and the lees that will begin to settle to the bottom. If the fermentation speeds up and the wine foams out of your vessel, just mop it up and cool the container slightly.

    What you require?

    Black Grapes and sugar: one kilo each

    Yeast: Two tsp for fermentation

    Cinnamon stick: one

    Water: 250 ml

    Cooking instructions

    You must clean and dry the ceramic jar. Boil the water and let it cool, then wash grapes and remove seeds and set aside. Dissolve yeast in the warm water and then leave it for about 10 to 15 minutes. Crush grapes with your hands and place them with the skin in the dry jar. Add sugar as well as yeast. Then add cinnamon and cloves for aromas and flavour to the wine. You must mix all ingredients after adding some water.

    You must try to keep the jar tightly closed for about 45 days, stir the mixture once a week using the wooden spoon but you must leave it untouched for the last 15 days, so that sediments do settle down a clear liquid is obtained. After 45 days, you must strain the liquid using the clean cotton cloth. Store the wine in a clean dry glass bottle.

    You can also use glass jars instead of ceramic, following the same procedure you can replace rose petals or gooseberry and make wine.

    Now you have your future alcoholic beverage ready to go, it just needs to ferment and then your innocent fruit juice will transform into a delicious, homemade adult beverage. You just need to put on an airlock and let it sit.

    To put the airlock on your container it is very easy, simply take your cap from the fruit juice and put the center of it under a flame for a few seconds, just so that it becomes soft and you can easily puncture it. Take a knife and begin to carve a small hole so that you can stick the end of the airlock through it. You want the airlock to be as snug as possible while in the hole in the cap so you may have you make the hole slightly bigger until it fits tightly.

    Once you have achieved this then you can either make the cap a permanent airlock by sealing it in with some super glue or you can simply put a little bit of tape on top of the cap to make a temporary seal .

    Once the airlock is attached to the cap screw the cap to the fruit juice. All you need now is to add a little bit of water to the airlock and you are ALL DONE! If you are not using an airlock then simply place a balloon or condom over the mouth of your container, after a few hours it should begin to inflate, at this time you simply poke a few holes into the balloon or condom with a needle.

    Congratulations, you now just have to sit back and relax and let nature work by fermenting your homemade wine. You are very close to completing your simple wine recipe!
