And finally, Ill share my thoughts for when you like your meat not just rare, but raw.

But, firstly, there are some basic things to consider. Steak is generally fleshy and fatty, and hopefully not too chewy, but tender. And this requires a type of wine with strength, and freshness.

That means, ideally, opting for a red wine, and one with a high level of tannin to clean the mouth, and leave one salivating, ready for another slice of marbled red meat.

One doesnt want tannins to be green or harsh, but ripe, and gently drying and they work to refresh the mouth after a glass of red, playing the equivalent role of crisp acidity in white.

Why Is Red Wine Good With Steak

If youre not a connoisseur of wine, you probably have heard that rule that red wine is perfect with red meat and whites are excellent with fish.

To keep it short, steak goes with red wine because molecules called tannins soften the meats fat to release its flavor.

This fat then mellows the wines astringency, releasing more of its fruit flavors.

What To Consider When Pairing Italian Red Wine With Steak

A steak that has a good deal of fat or sear generally lends itself to a bold red wine high in tannins. This is why Cabernet Sauvignon is a typical choice, because they tend to be very tannic. A wine high in tannin works well with a fatty cut of beef because the strong tannins will soften with the fattiness of the meat, and the bold flavors of the wine will stand up to the intensity of the juicy flavorful meat.

The longer you cook the steak the more the fat will render out, affecting the pairing.

When you do a;reverse sear for example, and smoke it for an hour or more, much of that initial fat will render out. Your pairing options open up, as a tannic wine will be less necessary.

In general:

  • Pair fatty cuts that are grilled fast with bold red wines high in tannin.
  • Slow smoked or reverse sear with medium tannins.
