  • 6 cups fresh Concord grapes
  • 1 Campden tablet
  • Bring water and sugar to a boil.
  • Crush grapes in primary fermentation container.
  • Add water, crushed Campden tablet, yeast nutrient, and lemon juice.
  • Let it cool to room temperature.
  • Add yeast, stir, and cover.
  • Let rest for 1 week.
  • Strain into secondary fermentation container and airlock.
  • Rack every month for 8 months. Place in bottles. Wine will be ready in 1 year.

Tip: It is best to start this recipe with fresh Concord grapes and not buy Concord grape juice.

So How Do You Actually Make Wine

A simple wine fermentation involves adding yeast to a mixture of fruit, water and sugar. Then the yeast eats the sugar, turning the mixture into approximately half alcohol and half carbon dioxide.

For example, if you had a gallon of juice with 2 pounds of sugar in it, and let the yeast consume it all, you would end up with a gallon of wine that had about 1 pound of alcohol in it.

Lets say a winemaker in the Lavaux region of Switzerland finds that a certain type of yeast or a certain fermentation temperature leads to an overly bitter wine, says Attinger. We could quickly test alternatives.

We can only hope that these experimenters step up their game on the home version of this research tool pronto.

    Every year we have new customers come into the store who have access to grapes growing on their property and want to make wine for the first time with them. The first question is always, which type of grape you have growing in your yard? One non-scientific way is by the size of the grapes you have. Table grapes are what you buy in the grocery store, and wine grapes are typically smaller grapes, about the half the size of table grapes.

    A more accurate way to determine what kind of grapes you have is to measure the sugar level and the acid levels of the grapes when they are ready to be picked. Ripe grapes intended for wine making will have a sugar level of about 1.085-1.090 , and table grapes have a sugar level of about 1.050-1.060 . Acid levels of wine grapes are about .70 to .80 on the titration scale when tested with an acid test kit. Table grapes are much higher in acid, with tests in the 1.2 to 2.0 range.

Top off the wine with warm water to about the 6 ½ – gallon mark on your fermenter.

    The Kosher Wine Standard

    Manischewitz is typically shared during religious ceremonies and holidays like Passover, Purim, bar and bat Mitzvahs, and weddings, and the wine has a long and illustrious history with Judaism that goes all the way back to biblical times.

    The modern Manischewitz as we now know it the uber-sweet concord grape-derived drink came to fruition in 1947 when Brooklyn-based Monarch Wine Company approached the Manischewitz Company and proposed a licensing deal. Monarch Wine wanted to use the well-known Manischewitz name on its new kosher wine. The Manischewitz Company was uninterested in pursuing winemaking on its own so it agreed to the deal, unknowingly cementing itself as the purveyor of kosher wine.

    The Manischewitz Company is known for its kosher standards and regulations, and it applies them throughout to the winemaking process, too, from crushing the grapes to bottling the final product.
