This honey baked ham is a classic dish, to be added to any holiday menu. Pair it with a Riesling or Pinot Noir.

Ingredients

  • 1 10-pound bone-in, fully-cooked smoked ham
  • 1 cup honey
  • 1 6-oz can orange juice concentrate, thawed
  • 2 Tbsp mustard
  • Preheat oven to 325 degrees.
  • Place ham on rack in shallow roasting pan.
  • Mix together remaining ingredients in medium bowl set aside.
  • Bake ham for 30 minutes.
  • Pour glaze over ham and continue to bake until ham is heated through, about 1 to 1-1/2 hours.
  • Slice and serve with a good Riesling or Pinot Noir.
  • Ham should be refrigerated within two hours of serving.

    Riesling wines, in general, are an excellent choice for ham dinners because they are versatile. They are typically light and can seem very similar to other varieties of white wine, like chardonnays. Both dry and sweet rieslings will go with whatever type of ham youve made.

    You could even bring a variety of them and let your guests choose what they want to have with dinner. This German wine family will not disappoint, and your guests will be clamoring for more.

    Wines To Serve With Ham Dinner

    White wines: Brandon Seager, a wine consultant and educator from Elmira, notes that Easter dinners can have side dishes like asparagus and deviled eggs, which are tricky to pair with wines.

    “Riesling is the answer,” he said, with conviction.

    Seager was not alone in this opinion. When it came to white wines, dry and semi-dry Rieslings were the most popular recommendation this may have had something to do with the Finger Lakes region being renowned for its Rieslings. The judges’ recommendations included Rieslings from Dr. Konstantin Frank, Hermann J. Wiemer Vineyard and Ravines Wine Cellars.

    A reason the pairing works well is that Rieslings are high in acid.

    “That saltiness needs some acidity,” said Kristin Kraft, an American Wine Society certified judge and president of the national organization.

    Holly Howell, a Rochester-area certified sommelier and wine educator, plans to take both a Finger Lakes and an Alsatian Riesling to her Easter celebration because it is fun to taste and compare the two.

    Another white wine recommendation was Gewürztraminer, a grape that grows best in cooler climates like the Finger Lakes. The aromatic wines are known for the sweet smell of lychee. Gewurtztraminers from McGregor Vineyard in the Finger Lakes and Flat Rock Cellars in the Niagara Escarpment in Ontario, Canada, are good choices, judges said.

    “They have a bit more texture to them,” he said.

    Rosé wines: Dry and off-dry rosé wines also can pair well with Easter ham dinners, the judges said.

    Doris Miculan Bradley, a wine judge, professor, wine buyer and certified sommelier has planned an Italian feast, complete with a wine for each course.

    With battered and fried seafood, she will serve a sparkling wine from Benjamin Bridge winery in Nova Scotias Gaspereau Valley “one of the most interesting regions in Canada.”

    With grilled lamb, she will serve Ripassa Valpolicella Ripasso DOC Superiore, an Italian wine made with dried grapes. And with her burnt sugar crema dessert, she will serve Moscato di Pantelleria, from the Italian island of Pantelleria “one of the most beautiful little wines that you’ll find from Italy.”

    If the weather cooperates, Rick Cusker, an AWS certified wine judge and a wine educator, will grill salmon outdoors. He plans to start the meal with a Santa Margherita Prosecco, a sparkling wine from Italy. The salmon will likely be paired with a Pinot Noir-based wine from the Côte de Nuits, in the French wine region of Burgundy.

    Jonathan Link, sales consultant for The Winebow Group, is taking a breather from ham and instead is getting a dry-aged ribeye from McCann’s Local Meats in Rochester. With it he will serve a Chateau de Saint Cosme from the Cote du Rhone region of France. He enjoys the spice notes of the wine, and says the fat in the beef will play well with the tannins in the wine.
