Not clear if this is a long-term ager, but you definitely want to give it a good decanting of at least four hours. You should even pour the glasses and let them to stand for an hour. The interaction with oxygen will open the wine up and allow it to express its herbal, soft deliciousness. Cellar for up to 30 years. Decant 2 hours before serving. The story of Silver Oak began in the 1970s with two friends, Ray Duncan and winemaker Justin Meyer. From the very beginning the duo had a vision to only make the finest quality Cabernet Sauvignon, producing their first vintage in 1972 at the Christian Brothers Winery in exchange for Zinfandel grapes growing on the Silver Oak estate.

Our 2017 Napa Valley Cabernet Sauvignon is ruby in color with notes of blackberry, blueberry, roasted coffee beans, coriander and a hint of nutmeg. Smooth upon entry, this wine is broad and plush on the mid-palate. It has an elegant density throughout and a long, generous finish. Given proper cellaring conditions, this wine will show beautifully through 2041.

The 2016 Silver Oak Cabernet Sauvignon wine finishes with notions of savory umami and fruit with a medium tannic grip. The wine has a dark garnet color and is bursting with fruit even as it is poured. It has a nose of cassis, violets, licorice, allspice, and roasting coffee. On the palate, it has an extraordinarily rich attack, a satin texture, and an exuberant expression of fruit on the mid-palate that comes from picking grapes at the peak of their ripeness. The 2016 Silver Oak Cabernet wine finishes with notions of savory umami and fruit with a medium tannic grip. Given proper cellaring, this wine should give drinking pleasure through 2036. Silver Oak Napa Valley Cabernet Sauvignon comes from Silver Oak Cellars and their Napa Valley Winery in Oakville, California, USA.

Their Napa Valley Winery is one of two main wineries operated by Silver Oak. They also operate their Alexander Valley Winery in Healdsburg, California.

Silver Oak got their start in 1972, operating out of a dairy barn in Napa Valley and producing just 1,100 cases of Cabernet Sauvignon their first year.

They were founded by Raymond Twomey Duncan and Justin Meyer.

As the years went on, Silver Oak grew their reputation as one of the premier producers of Cabernet Sauvignon.

Nowadays, Silver Oak is run by the Duncan family whove been operating the winery as a family business since 2001.

Silver Oak Cabernet Overall Opinion

Overall, while we certainly enjoyed this wine, we had high expectations that werent quite met.

While this Cab was certainly tasty and had an excellent aroma, tannin structure and finish, we were hoping for more complexity and variation of flavor.

We were also hoping the flavors would evolve more on the palate than they did.

I argued at the time that we should be expecting what we were getting from a pure Cabernet.

But it wasnt a pure Cabernet, only 80% with a 20% blend of other varietals. At the time of tasting the wine, we thought it was 100% Cabernet Sauvignon.

Often times its those other varietals that bring the complexity.

However, flavor complexity is what this wine was lacking, given the price and reputation.

So bottom line, very enjoyable but didnt meet the very high bar we had set for this wine.

Warm and inviting, it has notes of red currant, cassis, ripe plum, cardamom and toffee. Theres depth and weight on the palatea harmonious intensity. Mother Nature made a memorable impression on the 2017 vintage. In January, we welcomed epic winter rains that brought an end to the enduring five-year drought. The generous precipitation filled our water tables and woke up the vines. After an average bud break, prolific shoot and vegetation growth early in the season required close observation and much weed control and leafing to open the dense canopies. Bloom proceeded at a steady pace and set us up for a healthy crop size. In June and July, three extended heat events tested our vineyard team and culminated with high temperatures around Labor Day.

A hot summer relented in August, when cool temperatures allowed Cabernet to hang longer and slowly ripen to perfection. Before the wines were even in barrel, winemakers and critics were hailing 2016 as a landmark year for Napa Valley. And when it was all said and done, Robert Parkers Wine Advocate deemed the 2016 vintage as perfect as any in Napa history, awarding it a rare 98 points.

Incredibly rich and perfectly integrated, the 2016 is overflowing with aromas of blackberry, currant, chocolate, and crème caramel, supported by hints of earth, allspice, violets, and sweet tobacco. Silver Oaks storied reputation across decades is a testament to its ability to remain focused, while evolving with the times. While many wineries try to expand their portfolios once they become successful, Silver Oak only produces two wine labels each year. This focus has allowed it to continue producing critically-acclaimed wines with an enthusiastic following, year after year.

While the distinctive profile of Silver Oaks wines may not have altered much over the years, its winemaking certainly has. Tasting Notes

Deep ruby in color, 2016 Silver Oak Napa Valley Cabernet Sauvignon is an opulent wine with notes of cassis, ripe raspberry, toasted coconut and shiitake mushroom. This wine has a rich entry, depth through the mid-palate, great structure without being heavy and exceptional length on the finish. Fresh cherry flavors balanced with floral notes and a subtle hint of black pepper add a beautiful complexity. Plush tannins lend to its ageworthiness. Given proper cellaring conditions, this wine will show beautifully through 2040.

Blending and Aging

2016 Silver Oak Napa Valley Cabernet Sauvignon is comprised of 78.9% Cabernet Sauvignon, 15% Merlot, 3.5% Cabernet Franc, 2.3% Petit Verdot and 0.3% Malbec. In early 2017, the final blend was transferred to American oak barrels from our cooperage, The Oak, where it aged for 24 months. Of these barrels, 84% were new, providing a layered expression of bay leaf, coconut and vanilla to our wine. Blending before barrel aginga signature of our winemaking styleallows blends to be based on the inherent qualities of their vineyard components before oak influence. Vintage to vintage, the resulting Cabernets emerge integrated and ready to drink upon release.
