Shlomo’s repositions the classic Jewish deli from metropolis to mountain. Top dishes at the local Aspen favorite include challah French toast, white fish on a bagel, and matzo ball soup all are dependably delicious. You can also explore lesser-known Mediterranean delicacies, including the wonderful shakshuka poached eggs in a skillet under a sauce of tomato and spices.

Hydrate Like It’s Your Job

Altitude sickness is common, so plan on acclimating yourself appropriately to the different oxygen and barometric pressure levels. Some pros fly into Denver so that they can drive up to Aspen, allowing the body to adjust more slowly and naturally. Regardless of how you arrive, stay very well hydrated throughout the weekend to limit the effects both of the altitude and the abundance. If you are feeling thirst, you are already a bit under-hydrated, so your goal is to not get thirst! A pro tip is to think about keeping a refillable water bottle on you at all times, and sip consistently, which is better for you than chugging large amounts less frequently and be sure to have a glass before bed. Over the weekend of June 17 to 19, The Food and Wine Classic returned to Aspen for its 39th year. Dubbed The Summit of Innovation, the event continued its tradition of bringing together a downright obscene amount of talent from across the worlds of cooking, winemaking, distilling and entrepreneurship. While officially centered around multiple daily Grand Tastings and a lengthy list of cooking seminars, panels and sip-centered presentations, the festival effectively transformed the entire town into a bacchanal of endless possibility as basically every bar, restaurant and hotel played host to peripheral parties presented and sponsored by some of the biggest names in food and beverage. Attendees could be found careening from the bustle of Wagner Parks two tremendous pavilions to dinners, pairings and festivities of every description. Institutions like the Hotel Jerome provided some stellar programming with a blend of ticketed and free events supplying fodder for what amounted to nothing short of a labyrinthine choose-your-own-adventure. More than a few members of the crowd survived solely on a diet of ancillary soirees.

These are the stories that inspire me.”

Often these sessions are repeated at least once during the weekend, so if you dont get in on Friday, look on the schedule to see if there is a rerun session on Saturday. But also, be ready for the opportunities this presents. Almost everyone who has attended a Classic has had one unexpected magical experience where they wanted to do one thing and got scooted into another. The team at Food & Wine has put together a schedule that is thoughtful, interesting, and has worked very hard to ensure that the presenters are engaging and the topics fun and varied. Missing out on one of the more marquee sessions might just free you up to have a more meaningful and intimate experience elsewhere. Be open, and the Classic will have your back every time.

Dont be shy! There is no more horrifying anxiety-riddled silence like the silence when a presenter asks if anyone has any questions. Those moments before the first hands go up in the air are interminable. So, come prepared to be the hero and ask something, or offer a comment. The Classics full schedule of seminars and tastings is released months in advance, so put in the time to plot out a calendar before you show up. Pass-holders can now sign up for seminars ahead of time, so if theres a must-see chef or personality on your wish list, ink it into the agenda. Otherwise, make sure to arrive at venues with enough time to snag a seat before they fill up.
  • Drink lots and lots of water. Its already important at nearly 8,000 feet to stay hydrated, but combine that with alcohol and a steady diet of snackable bite-size foods that dont necessarily add up to a meal, and H20 is critical to weekend success.

  • Part of the Food & Wine fun is the people-watching, and the dressing up. But dont make rookie mistakes, like wearing high heels or uncomfortable dress shoes. Not only are they a bad match for downtowns cobblestone streets, but youll have a terrible time navigating the grass of the Grand Tasting Tent. Wear comfortable, walkable shoes, and pack layers. Its the Rockies, after all, and it can go from sunshine to downpour quicker than you can say cheers.

In mid-June, its normal to see people walking around Aspen wishing each other a happy Food & Wine! The three-day culinary festival draws more than 5,000 attendees to sip, sample and socialize in whats become a beacon of indulgence in the food and beverage industryand a beloved local holiday. Its evolved over its 39 years, but the enthusiasm around it is constant, and theres a special fervor this year as it fully returns after a pandemic hiatus.

The Food & Wine Classic was founded in 1983 by Gary Plumley, an Aspen-based oenophile who owns the Of Grape & Grain wine shop. Originally dubbed the International Wine Festival, it drew 300 people in its first year to attend events spread out in both Aspen and Snowmass. The fest quickly grew, and within a few years Food & Wine Magazine signed on as a lead sponsor.

Waffled Potato Blini With Smoked Salmon

For this recipe, Food & Wine’s Justin Chapple cooks a shredded potato mixture in a waffle iron until a crisp, golden blini forms, and then tops it with smoked salmon and a generous dollop of sour cream. Dill adds a double dose of freshness to the dish when mixed into the blini and used as a garnish, too. The blini make a satisfying breakfast or brunch if you’d like, pair them with a glass of Champagne to take things to the next level.

Tickets are now on sale for the 39th annual Food & Wine Classic in Aspen, taking place from June 17 to 19, 2022.

The three-day culinary event, featuring cooking demos, wine seminars, and exclusive tastings, brings together the biggest names in food and drink to celebrate in Aspen, Colorado.

This year’s all-star roster of cooking demonstrations will feature Andrew Zimmern, Maneet Chauhan, Kwame Onwuachi, Stephanie Izard, Brooke Williamson, Claudette Zepeda, Paola Velez, and Justin Chapple, with more to be announced. On the wine and spirits side, tastings will be led by Alba Huerta, Alpana Singh, Anthony Giglio, June Rodil, Leslie Sbrocco, Mark Oldman, Ray Isle, and more.

Throughout the weekend, the Grand Tasting Pavilion will fill up with hundreds of winemakers, distillers, and producers from around the globe.

Cornbread and blueberries are natural partners, especially in this French toast recipe by chef Erick Williams. Dipping cornbread into the blueberry-infused batter gives the bread a beautiful blue marbled pattern while retaining its texture. The cornbread and blueberry sauce can be made one day in advance use frozen blueberries if fresh ones aren’t available.
