The University of California researcher Carole P. Meredith, along with assistant John Bowers, a doctoral candidate in genetics, conclusively determined that the Cabernet Sauvignon vine is the offspring of Cabernet franc and Sauvignon blanc.

This was a groundbreaking discovery, as up to this point, it was not known that a red grape variety could be conceived from a white grape variety. The crossing that gave rise to Cabernet Sauvignon was a natural crossing, meaning that it occurred naturally in the wild.

Like many breedings, Cabernet Sauvignon took on the best characteristics of each of its parents the acidity of Sauvignon blanc and the structure of Cabernet Franc. According to Jancis Robinson, who wrote in the Oxford Companion to Wine , Cabernet Sauvignon is The worlds most renowned grape variety for the production of fine red wine.

The grape is not one of the ancient varieties. In fact, it is thought to be just over 600 years old and most widely planted after the phylloxera pandemic. Although it is best known for being the major contributor to the left bank wines of Bordeaux, it is not the most widely planted variety in the region.

How To Serve And Drink Cabernet Sauvignon

Most people have wines opened prior to drinking hours before serving. There is a moral way to live that most people arent aware of. Most red wines are served at room temperature or just a little chilled. Cabernet Sauvignon needs to be served at 59-64° F Decanting your Cabernet Sauvignon helps soften the tannins. Most Cabernets need about 30-60 minutes to properly sit in a decanter. Of course, it matters how many years the Cabernet Sauvignon was bottled. If it’s a bottle that was 15 years or over decants only for 30 minutes. Airing out the wine gives the texture of the tannins to expand which gives it more taste on the palate. Lastly, one should use wine glasses that are shaped for the full-bodied flavor. This allows the oxygen to touch the surface and helps infuse the wine, giving it that full-bodied flavor.

J Lohr Cabernet Sauvignon Wine Review

The cork was in quite tight and barely any wine had penetrated it.

In the glass, J Lohr Cabernet Sauvignon was a deep purple color and it appeared thick and hearty. Swirling the wine revealed large bubbles of wine suspended in the glass.

On the nose, the wine was very aromatic. Some alcohol was noticed but the primary aromas were of violets and cherry. According to the bottle you may also notice hints of blueberry and vanilla. Also, the aroma was noticed from afar. Overall, quite pleasant.

J Lohr Cabernet Sauvignon alcohol content 13.5% by volume per the bottle.

The wines taste gave forth a well balanced flavor of pure Cabernet Sauvignon. Overtones of dark cherry and perhaps even a hint of sage or maybe toasted wood were also noticed.

Firm mid tongue tannins were felt, as promised by the bottle. The mouthfeel was velvety in texture.

The finish was medium length and enjoyable.

Overall, J Lohr Cabernet Sauvignon was a great straightforward and uncomplicated Cabernet Sauvignon. Definitely drinkable now and likely even better with age.

My favorite element was the lofty aroma.

Is Cabernet Franc The Same As Cabernet Sauvignon

Woodbridge by Robert Mondavi Cabernet Sauvignon Red Wine, 1.5 L Bottle ...

No. They are similar in many respects, but are two different grape varieties. Cabernet Franc is a parent variety of Cabernent Sauvignon. Cabernet Franc has a thinner skin, so the wines made from it tend to be lighter in color and less tannic. It can also seem a little more leafy and peppery. Warm climate Cabernet Franc in particular can be mistaken for in blind tastings. In the vineyard, Cabernet Franc ripens one week earlier.

Introduction Of Cabernet Sauvignon Wine

If you see a hillside adorned by grapevines, there is a strong likelihood you are looking at Cabernet Sauvignon grapes. As one of the worlds most popular grapes to grow and produce wine from, there is no shortage of Cab Sauv sightings.

Most attribute this popularity to the presence of the grape in the popular wines of Bordeaux. Cabernet Sauvignon took a backseat to Merlot for a brief time but regained its crown as the most popular grape in the world quite quickly.

As with most wine grapes, the history of Cabernet Sauvignon is a bit convoluted. However, science has stepped in and declared the grape a cross between Cabernet Franc and Sauvignon Blanc.

Cab Sauv is grown in virtually every grape producing region in the world. While clearly popular, great expertise is required to ensure a high-quality grape is produced. Cabernet Sauvignon will grow virtually anywhere but its needs are highly different depending on the climate of the region.

Cab Sauv can be found standing on its own as a varietal and blended with a variety of different grapes. The high volume of offerings can lead to some drastic swings in pricing.

So what makes one Cabernet Sauvignon so much more costly than another? Can a cheap bottle possibly be good? Find answers to these questions and more below.

Cabernet Sauvignon: A Brief Introduction

The popular red Cabernet Sauvignon grapes originated from the red Cabernet Franc grape and white Sauvignon Blanc grape back in the 17th century. Because of its unique history, the grapes thick exterior, and impeccable fruity flavor, it rose into popularity among winemakers in the region of Bordeaux.

Aside from Bordeaux, it grows in any region or state with a warm climate, as a rule of thumb. This grape variety has plenty of tannins, allowing it to age in oak for longer years without compromising its quality and flavor.

The Most Expensive Bottle Ever

The not-so-humble Cabernet Sauvignon holds the distinction of being in the most expensive bottle of wine ever. One might assume that it was some ancient bottle of wine from one of the best Bordeaux vineyards. They would be wrong.

A 1992 Cabernet Sauvignon from Screaming Eagle of California went for a cool half-million dollars. It was an imperial-sized bottle that was sold at a charity auction in 2000.

As you can see on the wine pricing chart, there are plenty of Cabernet Sauvignon options for any budget. Just remember, not all bottles are at their best right after purchasing them. If you find yourself spending up on a nice bottle, you may have to exercise patience to ensure it is at its top quality!

What Makes Cabernet Sauvignon Special

Woodbridge by Robert Mondavi Cabernet Sauvignon Red Wine, 1.5 L Bottle ...

Cabernet Sauvignon berries are extremely small. They say good things come in small packages and this is true when it comes to fruit. The small berries flavors become super concentrated, gain refined textures and complex aromatics as they ripen.

The vines are slow to ripen, allowing the vineyard managers to harvest them later in the season. This is a positive and a negative, as waiting too long can lead to a potential for hazardous weather conditions.

In addition to its fame in Bordeaux, France, Cabernet Sauvignon is currently harvested in every major wine-growing region. It is found as both a single varietal wine and as a blend. This is not by sheer chance. Cabernet Sauvignons small berries are pretty resilient.

Although the vine prefers warmer climates, it is capable of surviving through a multitude of poor weather conditions, pests, and diseases. Another aspect of the grape loved by its producers is its ability to age.

Cabernet Sauvignon grapes contain many tannins. This can be difficult for some drinkers to swallow, but thanks to its affinity for oak, these tannins are tamed during fermentation and aging.

The marriage of Cabernet Sauvignon and oak make it ideal for assembling a wine that is not only age-worthy but provides structure to the wines it is blended with.
