Tej simply means wine in Amharic, the official language of Ethiopia. Although popular among the different ranks of people, royal, elite, and poor alike, at that time, there was a restriction to the making and drinking of Tej and only the upper class and royalties had rights to enjoy this special wine. It was only affordable by the middle and upper class during those times. However, in the 20th century, the restriction was lifted and now everyone can make or drink Tej.

Not sure if they have it, but there js a really nice Eritrean/Ethiopian restaurant next to Picadilly Station in the centre. You can call and ask if they have it, or even walk in. The owners are very friendly so even if they don’t have it, I’m pretty sure they’ll tell you where you can buy it.

This former Haight Ashbury Free Clinic CEO started Oaklands Enat Winery in 1999, inspired by his mother-in-laws homemade tej.

When Herb Houston retired in 1998, after a distinguished career in public health administration, he envisioned spending relaxing days on the golf course and at home. It didnt take long, however, for his wife, Debritu Gebeyehu, to feel a little cramped with Houston around so much. Go find something else to do, she urged him. Gebeyehu didnt realize she had just given her husband the impetus to embark on a new career producing tej, the traditional Ethiopian honey wine from her homeland.

The idea might have been buzzing around Houstons brain since he used to help his mother-in-law make tej in the cottage behind their house. But Houston, a wine drinker, did not fall in love with his first taste of his mother-in-laws honey wine many years ago. Its an acquired taste, he said and then smiled. But I acquired it pretty soon.

He started the business in 1999, after filing papers to obtain all the required licenses. I could have hired a lawyer, but I wanted to do it all myself, said the accomplished but modest man, whose last position was as the CEO of the Haight Ashbury Free Clinic for 12 years.

Cant tell you. Its a secret, he said. And the gesho plant do you use the leaves or the stems?

Western Experience With Tej

Making Tej, Ethiopia’s Honey Wine

One of the first western written accounts of Ethiopia was created by Father Francisco Álvares, a Portuguese priest that lived in Ethiopia with his mission for six years in the 1500s. He wrote of his experience with Ethiopian wine, specifically mentioning that ‘wine of honey’ was the best of all. He also recounted a celebration he attended which involved the consumption of Tej. He detailed the fact that they were encouraged to continuously drink copious amounts of the honey wine during the celebration.

Another Portuguese missionary, Jeronimo Lobo, had experience with Tej in Ethiopia in the 1600s. He wrote that the Ethiopian people commonly drank beer and mead, and people generally drank in excess when gathered together. He also mentioned that it was considered poor manners to allow guests to go without a drink and that the Tej was always served by a servant.

Hormuzd Rassam, an Iraqi-Assyrian Assyriologist, wrote of his own experiences with Tej in his book published in 1869. After a meeting with the Ethiopian emperor at the time, Emperor Theodorus, he was offered a large bottle of old and clear Tej. He was requested to drink it despite his aversion towards it, previously describing Tej as so sour it was undrinkable. He tried some and stated he enjoyed it more so than any other alcoholic beverage he had tried previously in Ethiopia.
