Tej is a delicious Ethiopian honey wine that many families make at home. Most recipes for tej require only a few ingredients, and many of them you may already have in the pantry. The one ingredient that can be difficult to find when making tej is gesho, an ingredient that comes from the buckthorn plant. Your best bet for sourcing gesho is an Ethiopian grocer, or online. The fermentation process takes about 28 days, so give yourself a month to make the wine.

Classic Ethiopian Honey Wine Recipe
May 18, 2011 ·Tej, or tejj, is an Ethiopian sweet wine, similar to mead, that is typically made from fermented honey and a special kind of hops called gesho. It is traditionally served from a vase-like vessel called a berele. If you can’t find tej or mead in your neighborhood, this recipe is a rough approximation. I tried this once at an Ethiopian 5/5

Bee Dvine Benefits The Environment

  • Honey wine is a sustainable beverage. No land is uprooted to plant grapevines. No irrigation is needed. No chemicals or pesticides are used. No tractors with their suffocating exhaust.
  • Honey bees help to establish lush forests that create the oxygen we breath, store the water we drink, and sustain biodiversity: plants and trees, animals, insects, and microscopic organisms.
  • The food cycle depends on bees. Dozens of varieties of produce pollinated regularly by bees yield larger and more uniform crops.

What Is Traditional Food In Ethiopia

That’s because the foundation of the vast majority of Ethiopian meals is injera, a giant gray spongey pancake-like bread, upon whose strangely rubbery surface are served a vast array of foods, ranging from multicolored mounds of spicy stews to vegetable curries to cubes of raw meat. Wot is Ethiopia’s version of curry.

Sweet Tej: Ethiopian Honey Wine

History of Tej

Ethiopia, the only African nation that is still to be colonized, and it would probably never happen. This old county is even mentioned in the Bible. Legend has it that, Makeeda, the Queen of Sheba then known as Saba visited King Solomon and they toasted with Makeedas Tej. Whether this legend is true or just an old wife fable, it just helps us know how old the Tej wine has been in existence and the value it has to be offered to a great King. It is believed also that modern day Ethiopia was originated from the Kingdom of Aksum ruled by a great monarch called Yekuno Amlak in 1270AD and they drank Tej. There is much account of explorers, missionaries and historians of 16th century and beyond who confirmed the widely consumed honey wine called Tej. Tej simply means wine in Amharic, the official language of Ethiopia. Although popular among the different ranks of people, royal, elite, and poor alike, at that time, there was a restriction to the making and drinking of Tej and only the upper class and royalties had rights to enjoy this special wine. It was only affordable by the middle and upper class during those times. However, in the 20th century, the restriction was lifted and now everyone can make or drink Tej.

A part of the profits is being invested in converting the traditional Kafa beehives into the higher-yielding frame hives, to save the rainforest and increase quality of life. Also, Ayele hopes to source honey from Kafa to produce an exotic line of specialty wines.

Proceeds from Bee dVine help to create a five-fold increase in honey yields in Kafa and create jobs for women who have always been excluded from collecting honey the traditional wayclimbing trees.

Where To Buy Tej

Does anyone know if there’s an Ethiopian/Eritrean shop somewhere in Manchester that sells this? I’ve been substituting regular wine and sugar but it’s not the same.

There’s the Selam Habesha restaurant on Chapel Street, might be worth getting in touch with them.

I thought you meant Hungarian milk 😀

Not sure if they have it, but there js a really nice Eritrean/Ethiopian restaurant next to Picadilly Station in the centre. You can call and ask if they have it, or even walk in. The owners are very friendly so even if they don’t have it, I’m pretty sure they’ll tell you where you can buy it.

Meet The East Bay Maker Of Sweet Golden Ethiopian Honey Wine

This former Haight Ashbury Free Clinic CEO started Oaklands Enat Winery in 1999, inspired by his mother-in-laws homemade tej.

When Herb Houston retired in 1998, after a distinguished career in public health administration, he envisioned spending relaxing days on the golf course and at home. It didnt take long, however, for his wife, Debritu Gebeyehu, to feel a little cramped with Houston around so much. Go find something else to do, she urged him. Gebeyehu didnt realize she had just given her husband the impetus to embark on a new career producing tej, the traditional Ethiopian honey wine from her homeland.

The idea might have been buzzing around Houstons brain since he used to help his mother-in-law make tej in the cottage behind their house. But Houston, a wine drinker, did not fall in love with his first taste of his mother-in-laws honey wine many years ago. Its an acquired taste, he said and then smiled. But I acquired it pretty soon.

He started the business in 1999, after filing papers to obtain all the required licenses. I could have hired a lawyer, but I wanted to do it all myself, said the accomplished but modest man, whose last position was as the CEO of the Haight Ashbury Free Clinic for 12 years.

Cant tell you. Its a secret, he said. And the gesho plant do you use the leaves or the stems?

Thats a secret too.

Raising The Bar Of Ethiopian Honey

Many consumers see honey as a natural and healthy alternative to sugar. It is available on the market as table honey and also as a food ingredient, for example in sweets such as liquorice or in bakery products. Beeswax, another produce of honey bees, is used in cosmetic products like lip balms. But because the bee population is decreasing globally, there arent sufficient honey supplies to meet European demand.

European companies are looking for honey supplies elsewhere, a great opportunity for honey suppliers in developing countries, such as Ethiopia. Ethiopia has a strong tradition of producing and consuming honey. Honey is used in honey wine , a national drink. But the country was not on the map of European importers. The quality of Ethiopian honey was too low, and the level of entrepreneurship was limited.

Keeping honey bees offers additional income to farmers in Ethiopia. This is important in rural areas, where income opportunities are limited. Ethiopian farmers can combine honey production with other agricultural activities, such as coffee production.

Honey bees can also forage in Ethiopias wild areas , giving communities incentives to protect these areas and not exploit them for fire wood. For ProFound, this offers a strong basis to build capacities of the Ethiopian honey sector in order to supply international markets with sustainable, organic-certified honey.

With the support of ProFound we know how to facilitate poor beekeepers in Ethiopia to access sustainable markets for their honey. ProFound helped us to develop the honey value chain by improving the partnerships between our Ethiopian honey processors and international buyers. Western Experience With Tej

Making Tej, Ethiopia’s Honey Wine

One of the first western written accounts of Ethiopia was created by Father Francisco Álvares, a Portuguese priest that lived in Ethiopia with his mission for six years in the 1500s. He wrote of his experience with Ethiopian wine, specifically mentioning that ‘wine of honey’ was the best of all. He also recounted a celebration he attended which involved the consumption of Tej. He detailed the fact that they were encouraged to continuously drink copious amounts of the honey wine during the celebration.

Another Portuguese missionary, Jeronimo Lobo, had experience with Tej in Ethiopia in the 1600s. He wrote that the Ethiopian people commonly drank beer and mead, and people generally drank in excess when gathered together. He also mentioned that it was considered poor manners to allow guests to go without a drink and that the Tej was always served by a servant.

Hormuzd Rassam, an Iraqi-Assyrian Assyriologist, wrote of his own experiences with Tej in his book published in 1869. After a meeting with the Ethiopian emperor at the time, Emperor Theodorus, he was offered a large bottle of old and clear Tej. He was requested to drink it despite his aversion towards it, previously describing Tej as so sour it was undrinkable. He tried some and stated he enjoyed it more so than any other alcoholic beverage he had tried previously in Ethiopia.
