How Is Champagne Made

Champagne starts as a still wine blendusually Chardonnay, Pinot Noir, and Pinot Meunierand it develops bubbles during a process called Methode Champenoise or the Champagne method.

Heres the most common way of making Champagne:

  • The winemaking process starts with picking grapes at the right time. For Champagne, grapes are picked earlier than for still wines because the winemaker wants fruit that has higher acidity and less sugar.
  • The grapes are de-stemmed, and then both white grapes like Chardonnay and Pinot Gris, as well as purple grapes Pinot Noir and Pinot Meunier, are gently pressed to extract the juice. The skins are thrown away.

That said, in my experience, this really depends upon how much is left in the bottle. The higher the fill, he explains, the longer the bottle will last once opened.

    Thanks to their stronger bubbles, traditional-method wines like Champagne will take longer to lose their fizz than Prosecco, but Sussman wouldnt recommend keeping either open in the fridge for more than 24 hours. He adds that it helps to invest in a specific gadget known as a Champagne stopper , designed to prevent an open bottle of bubbles from going flat. The process is incredibly simple, he says. You just clamp it down on the rim of the bottle and it creates a perfect seal, maintaining the pressure of the bubbles overnight .

    Nv Marquis De La Mysteriale Cuvee De Grand Esprit

    Unlike still wines, most Champagnes are a blend of several different vintages. You might see “NV” or “MV” on a label, which stands for “Non-Vintage” and “Multi-Vintage,” respectively. Champagne houses keep some wine from each harvest in reserve for the sole purpose of blending it down the road. It’s the job of the cellarmaster of a Champagne house to maintain continuity in style with each new release, and he does this by blending the older reserve wines with younger recently-harvested wines to achieve the Assemblagethe unique flavor profile that is the mark of the Champagne house.

    This Marquis de la Mysteriale Cuvée de Grand Esprit is made by Florent Gauthier, a French-born winemaker who was schooled in Macon.     A few blocks down from Air’s Champagne Parlor is sister restaurant Niche Niche, where sommelier Hugo Wai pours from a rotating list of idiosyncratic wines often organic, biodynamic, or sustainable in some way selected by guest wine pros to accompany tasting menus from various chefs-in-residence. His favorite Champagne of all time? Vincent Couche’s Sensation 1999 vintage.

    “I tasted this Champagne for the first time back in 2019 when it had just been released after chilling and hanging out on the lees for 20 years,” says Wai, who has long since been an avid fan of Couche’s work. “I am a true believer that tasting notes are subjective, and that you get what you get, but here’s what I took from this vintage: honeyed yellow apple, the faintest hint of mushroom, lemon meringue, lemon yogurt, freshly baked brioche, and wow, the acid it’s as zippy as Kramer’s hair from Seinfeld ,” he shares.

    “As you can imagine, these wines are very limited truly unicorn Champagnes so if you happen to see this on a wine list or at a wine store, please do yourself a favor and get it.”

    How To Open Champagne

    When opening a bottle of fizz, remember it will behave far better and more predictably if it has been left to sit and chill for a few hours. Warmth and/or rough handling both make for an explosive cork situation and the likelihood of more mess and waste. Champagne should go into glasses, not onto ceilings.

    • Make sure you have your glasses ready and within easy reach. Then, take your bottle and remove the foil there should be a tag or perforation line to make this easy and neat.
    • Once this is done, grip the neck of the bottle in one hand with your thumb over the top of the caged cork.
    • From here on in, keep the bottle pointed away from yourself and anyone present, especially people’s faces about a 45 degree angle is good.
    • With your other hand, untwirl the cage fastening. Uncover your thumb, lift off the cage and replace your thumb over the cork.
    • If you can feel the cork pushing to leave the bottle already, get a glass ready. Otherwise, with the bottle gripped in one hand, slowly pull up the cork with the other. It may be quite stiff at first if so, alternate pulling and twisting motions but as you go you’ll start to feel the pressure from within helping you out.
    • Ease it up, always with your hand over the cork in a firm grip and, as you hear a pop, you know you’ve opened it.

    Now return to the first glass and, tilting it also at around 45 degrees, top up slowly, until no more than two-thirds full.

    Champagne and sparkling wine has long been associated with celebrations. That means people often think the meal they eat with their wine needs to be special, too. That’s not the case, according to Chevonne Ball and Crystal Hinds.

    “I dare you to find one thing that doesn’t go with Champagne,” Ball said. “You can’t it goes with everything.”

    Hinds agrees. Unlike red or white wines that pair well with select foods, “everything goes with sparkling wine,” she said. “You can go through your entire meal with sparkling wine.” But you can also open a bag of potato chips. At her sparkling wine lounge, Effervescence, Hinds takes housemade chips and pairs them crème-fraîche, chives, and caviar. The bar also serves popcorn with nutritional yeast, paprika, and olive oil. “Even plain popcorn with a little salt and butter is delicious with bubbles,” she said.

    Hinds also recommends pairing sparkling wine with fried foods. “The acid in the bubbles cut through the grease and the fried tastes and the fat, and it goes beautifully with the fried chicken,” she said. “I would have a glass of something with a big plate of onion rings and be just fine.”
