Tasting Notes For Josh Cellars Cabernet Sauvignon 2020
Our Cabernet Sauvignon was the first wine we made. This is the wine that started it all, setting the exacting standards that we hold ourselves to for all of our varietals. Round and juicy, our Cabernet Sauvignon has flavors of blackberry, toasted hazelnut and cinnamon, complemented by hints of vanilla and toasted oak.Our Cabernet Sauvignon is bold yet approachable, like my dad, Josh. Paso Robles Cabernet Sauvignon
As Paso Robles, California has soared in number of wineries and gained in popularity, Cabernet Sauvignon has firmly taken root as the regions number one varietal. Alone, it accounts for just over 40% of plantings and is grown throughout both the western and eastern sides of the appellation. Though viticulture here dates back to the 18th century, Cabernet Sauvignon didnt emerge as a significant grape here until the 1970s. But since then it has definitely made up for lost time.
Legendary winemaker and consultant Andre Tchelistcheff first recognized Pasos potential with Cabernet Sauvignon in the early 1960s. The calcareous soil and dramatic diurnal temperature changes of Pasos westside particularly intrigued him. Today modern winemaking techniques and focused experimentation with various clones, rootstocks and vineyard strategies optimize the region’s ideal combination of soil and climate to deliver the best fruit possible.
The results are evident in the glass. Paso Robles Cabernet Sauvignon can be mesmerizing, with rich aromas and flavors of blackberry, cassis, black cherry, graphite, toasty oak, vanilla and spice. The structure, balance and unbridled opulence of these wines impress from first sip to last. Not surprisingly, Paso Robles Cabernet Sauvignons have steadily grown in reputation, not just in the U.S., but around the world.

This well-structured, firm-textured wine is also supple, concentrated and very appealing for its good combination of black-fruit flavors and subtle oak spices. Its depth reveals slowly on the palate, gaining force and nuance with each sip. Jim Gordon

This is a good, medium-bodied, commercial style wine that has plenty of blackberry-fruit flavors and a seemingly sweet overlay of maple and mint, presumably from aging in oak. Jim Gordon

From the bottle:
My dad, Josh, taught me that the most important things in life take hard work. I created my Reserve wines with this in mind, taking care to craft them to the highest standards.
This wine comes from the central California’s Paso Robles region, which is known for its richly textured Cabernet Sauvignon. Aromas of red fruits are backed by powerful scents of black peppercorn. On the palate, the wine features flavors of raspberry, coffee, and vanilla. Bold tannins lead to a long, smooth finish.

The 2019 Josh Cellars Reserve Paso Robles Cabernet Sauvignon opens with a pleasing aroma of black cherry and assorted berry notes along with touches of baking spice, cola and vanilla.
It ends with a dry, long, tasty finish and was just as good on day 2.
