Making A Raspberry Wine
There is perhaps nothing quite as refreshing and delicate, yet full of flavour as a Raspberry wine. The delicate berries lend themselves to wine making very easily and give up their flavour, juices and colour readily. This makes raspberries an ideal fruit to use to make your first wine with.
For my wine I have chosen to use frozen raspberries because its deepest winter at the point I am making it so I dont have much of a choice. You can of course use fresh berries. There are benefits to using frozen fruit in wine though as the fruit is already partially broken down for you. If you are using any berry to make wine its a good idea to freeze it first anyway even if you have picked them fresh. Their cell structures get broken and the juices pretty much free themselves once they thaw.

Making The Most From The Raspberries
So for our recipe we are going to make 3.75 litres of wine from a kilo of raspberries. The recipe is for a dry wine of around 11%. Below is a list of the ingredients used:
1kg of Frozen Raspberries
1kg of White Sugar
1 Campden tablet
1 teaspoon Mixed Acid
1 teaspoon Yeast nutrient
1 Sachet of Wine Yeast

Why Dont You Use Campden Tablets
If you have dabbled in winemaking, you may have heard of a frequently used additive called Campden tablets. They are sodium or potassium metabisulfite tablets that are used to sterilize wine at various stages during the winemaking process. They kill off all the yeast and bacteria.
Why would you want to do this? Well, for some people, they want to have a completely sterile process to start off with . Some people also use them to stop fermentation before its complete if they want to achieve a certain level of sweetness. And some people also add them to the wine just before bottling to make certain fermentation is over to avoid making bottle bombs.
I personally do not use Campden tablets. Mostly because I just dont find that I need them in my winemaking process, but also because I enjoy including wild yeasts and bacteria in my creations. There are tons of resources on the internet about using Campden tablets if stertilization is of interest to you.

The Length Of The Fermenting Process
If you are fermenting no more than 2 quarts of berry juice, the first stage of fermentation will take anywhere from 3-4 weeks, a time during which your ferment will omit a light alcohol-like aroma.
Not so with the second stage! When acetic acid bacteria arrive on the scene, youll notice a distinct, pungent, vinegar-like aroma wafting up from the liquid. This aroma will continue to grow, until all the alcohol has been consumed!
And when it has? Youll have nothing but a pure, raw fruit vinegar, ready to be put to use in the kitchen!

A Carboy For Secondary Fermentation
This is really just a big glass jug! You can purchase one gallon carboys in a bundle with an airlock and cork, or you can get them in larger sizes if you want bigger batches. Make sure you choose a carboy with a narrow neckit makes it so that there is less surface area of the wine exposed to oxygen, which is a good thing!

How To Make Your Own Wine From Grapes At Home
We are lucky enough to have a beautiful grape vine which gifts us with kilos of grapes every year. I love making my own wine from grapes at home with them; it feels like magic turning the fruit into a delicious wine. It’s hard work but is also a labour of love. Homemade wine makes a wonderful gift, particularly if it tastes surprisingly good! Friends I have gifted the wine to have told me it tastes excellent.
I used the wonderful Hedgerow Wine Kit from Better Brew which contains everything you need, ready measured out . It’s all sealed in individual packets so you don’t need to worry about it going off. You can get it here on Amazon; . I will list the alternative ingredients in case you don’t have one of these. I am using grapes but the kit gives you recipes for other fruit as well.
All the bottles and homebrew kit have been reused for this Instructable, and will be reused again. Using home-grown grapes gives homemade wine a much better environmental profile and carbon footprint than drinking wine which has been imported.
This recipe made 26 bottles as you can see from the pictures it came out a beautiful rosé.
Preparation time; 9 hours.
- 10kg of grapes
- 4.5kg sugar
- Hedgerow Wine Kit or 1g pectolase, 1 sachet/5g yeast, 5 tsps citric acid, 2 tsps bentonite, one and a half teaspoons of potassium sorbate, isinglass 28g .
- Campden tablets
- 6 deimjohns or another bucket
- Long handled stirrer
- 26 bottles + corks/screwcaps
How Do You Check The Alcohol Level
Easy! A hydrometer will do the job. Unlike store-bought wine, a homemade wines exact alcohol content is much more to tell.
But here are key points to remember:
- Higher sugar level means higher alcohol
- Freezing wine after fermentation will lead to a mixture thats close to a brandy in terms of alcohol levels
- To lessen wine, add more fruits or grapes

Nearly all the herbal wines Ive seen in shops have been made by soaking herbs in a commercial grape wine. Thats certainly a quick and simple way to impart an herbal flavor to wine, but its completely different from starting from scratch and fermenting herbs into wine. That is what I call herbal wine. Ive been making wine from wild and orchard fruit for years, and since I started making herbal wines, Ive become really hooked.
When I first began investigating herbal wines, I found a few published references, some with recipes, on wine made from the flowers of dandelion, elder, and rose. These may be herbs, but they arent usually used in cooking, and so I had to call upon my experiences in making herbal jellies and fruit wines, along with a healthy dose of experimentation, to come up with workable recipes for wines made with culinary herbs such as thyme and rosemary. The field is wide open: we herb lovers can go crazy experimenting with our favorite varieties and combinations.
I make at least 100 gallons of wine every year now, 5 gallons at a time. This may seem like a lot of wine, especially to someone who doesnt drink it, but it allows me to use herbal wine daily in cooking, build a collection of aging bottles, share generously with my friends, and give personalized gifts.
Youll probably want to start by making one gallon at a time, but Im guessing youll be surprised at how quickly it disappears.
How To Make Homemade Grape Wine Recipe

You can purchase them in a bundle with an airlock and cork. They also come in much larger sizes if you want to do big batchesfive gallon is a common carboy size. The shape of the carboy is importantthe narrow neck reduces the surface area of wine exposed to oxygen during secondary fermentation, which is good!
