Add Airlock Top Up With Cold Water
Boil the airlock for a couple of minutes, getting some of the boiling water to run through the lock. Remove with tongs or a spoon, leave a small amount of boiled water in it and stick in the hole in your bucket, leave for 3 hours then top up to 23 litres with cold water.
The instructions with the bucket said to leave the edge of the bucket lid lifted to let the CO2 out instead of using an airlock but I was worried about backflow and contamination so I drilled a hole and added a rubber gasket so I could use an airlock. My friend Mike said that his elferflower brew used to ferment so violently it would blow all the water out of the airlock but I haven’t had this happen with grape wine.
Installing A Water Lock
In order to prevent your homemade grape wine from souring, you should secure it against air-influx and provide an outlet for the main fermentation product carbon dioxide. This can be achieved by installing one of the designs of a water lock on top of the juice container. The most popular one is a classic water lock consisting of a lid, a tube, and a jar .
A simple medical glove with a hole in one of the fingers proved to serve well at home too.
The design of a water lock is not critical, but installing classic water lock on bigger containers is much more convenient. Using gloves is good for smaller containers.

What Equipment will I need?
Virtually all the equipment I describe in the process up to when the wine is transferred into a demijohn is included in our Basic Starter Kit.
- Lid for bucket with hole and grommet
- Syphon Tubing with tap and sediment reducer
- Mixing Paddle
I do mention some other things too, like non-specialist buckets, muslin, demijohns and straining bags. Some of them you’ll already have in your kitchen.
How To Tell When The Grapes Are Ready To Make Wine
The grapes are ready to make your own wine at home when they are ripe, but not too sweet. If they taste bitter they aren’t ready yet. You can go by taste but I tend to check the sugar level by measuring the density using a hydrometer . You want the starting starting specific gravity between 1.070 and 1.100 so the grapes need to be somewhere near this. When you add the sugar the SG will increase. Mine was 1.062. Water has an SG of 1.000 the measurements are relative to this. Sugar is denser than water, alcohol is lighter. This means you can calculate the alcohol content by measuring the density at the beginning, after the addition of sugar, and at the end of fermentation. The density at the end was 0.990. There are various online calculators you can use , I calculated the alcohol content of my wine to be 9.8. I am happy with this as it tastes excellent you can get a higher alcohol content if you want by adding more sugar.
There is a lot written on the internet about how to check when grapes are ready, all of them say something different! I would suggest reading around it and doing what feels right for you.
Wash your hands thoroughly, twice, up to your elbows before handling any of the grapes or equipment which will come into contact with them. Wash them again if you touch anything else door handles/kettle/dog etc.

Crushing And Primary Fermentation
Most red wines derive their color from grape skins and therefore contact between the juice and skins is essential for color extraction.Red wines are produced by destemming and crushing the grapes into a tank and leaving the skins in contact with the juice throughout the fermentation ” rel=”nofollow”> maceration). It is possible to produce white wines from red grapes by the fastidious pressing of uncrushed fruit. This minimizes contact between grape juice and skins .
Most white wines are processed without destemming or crushing and are transferred from picking bins directly to the press. This is to avoid any extraction of tannin from either the skins or grapeseeds, as well as maintaining proper juice flow through a matrix of grape clusters rather than loose berries. In some circumstances winemakers choose to crush white grapes for a short period of skin contact, usually for three to 24 hours. This serves to extract flavor and tannin from the skins as well as potassium ions, which participate in bitartrate precipitation . It also results in an increase in the pH of the juice which may be desirable for overly acidic grapes. This was a practice more common in the 1970s than today, though still practiced by some Sauvignon blanc and Chardonnay producers in California.
Alcohol of more than 12% can be achieved by using yeast that can withstand high alcohol. Some yeasts can produce 18% alcohol in the wine however extra sugar is added to produce a high alcohol content.
How To Make Wine From Pink Grapes
- Remove the stems from the grapes and put the fruit in the vessel.
- Dissolve the sugar in water and pour a clear solution over the fruit.
- Put the lid with a tube onto the jug and put it in a warm place for one and a half of month.
- Strain the grapesthrough a gauze, wash the jug and pour the liquid back into it.
- Store the strained wine for minimum 3-4 weeks before you can consume it.

Are Muscadine And Scuppernong The Same

Drink No Homemade Wine Before Its Time
You can age wine in carboys in a cool, completely dark place, or in a barrel in a cool place. Make sure the carboys or barrel are topped off. If you dont have your own wine left to top off with, use a similar wine.
Check the level of the wine monthly, adding enough similar wine to top off the carboys or barrel so no air can enter. Most home winemakers bottle after one year, but I think aging wine two years is better. In essence, many guides suggest that all you need to do is:
- Pick your grapes.

- Leave them to ferment using the natural yeast.

Whilst this is more or less accurate, not all grapes are actually suitable for wine making straight from the vine, not all have sufficient levels of sugar or acidity and, depending when you pick the grapes, you may or not have any natural yeast present to undertake the fermentation. Using the method above gives you a 50/50 chance of obtaining fermentation and a less than 50% chance of obtaining anything that is either a) drinkable or b) repeatable.
Whilst requiring a bit more effort, you are more likely to obtain better results if you use the following method, though, if you have never made wine before, I would heartily recommend that you make up a wine kit first in order to learn the “processes” of fermentation, clarification and storage, before you embark on using your own ingredients.
