Check the ABV and RS

Sweetness is measured by calculating the residual sugar left in the wine after fermentation. If all the sugar in the wine has been transformed into alcohol, then the alcohol by volume tends to be high and the RS will be low . This wine will be at the driest end of the spectrum. On the other hand, if after fermentation the wine still has some sugar, then the ABV tends to be lower and the SR is higher, resulting in a sweeter wine. If you want a sweet wine, look for bottles with 11% GLA or lower, and for dry wines usually 14% or more. This is a good rule of thumb, but like any wine, there are exceptions.

Bone Dry is a technical term meaning theres no more sugar in the wine. Styles that normally land in this category include Bordeaux, Pinot Grigio, Tempranillo and Albariño. The term sweet wine can be applied to any off-dry wine and above, but is generally reserved for wines of 20 g/l or more. Regardless of where a particular style fits on the wines sweet map, it is good to remember that residual sugar content and perception of sweetness are two different factors that are both related to the sweet taste of something. While residual sugar refers to the actual sugar level of the beverage, the perception of sweetness is more complex and can also occur in dry wines. For example, when a wine has tastes or aromas associated with sweetness , our taste is more often read as sweet. Other characteristics of wine, such as high levels of alcohol, can also increase the perception of sweetness, while factors such as acidity and tannins can reduce it.

Appearance, aroma and mouthfeel

When appreciating wine, all of the senses are employed.

Formal wine judges and critics will appraise the appearance, aroma and taste of a wine, and anyone who has heard the pop of a cork from a bottle of sparkling has appreciated the sound.

A wine should be clear: free of any haziness or solids .

The colour of a wine is also important. A young white wine should be a very pale yellow or straw colour, and a young red may have purple notes. Brown tinges of a young wine indicate that the wine may be spoilt possibly premature ageing due to poor storage.

Notice the different flavours derived from both the grape and the winemaking process.

After Feeling The Wine In Your Mouth

Try to chew it. Yes chew! Chewy wines are usually high in tannin, a chemical that is added to wines to make them taste drier. However, too much tannin can make you feel thirsty and render the wine too bitter. Once you think youve had enough, swallow the wine and savor the aftertaste over the few seconds when it passes down your throat. This is another period where a wine tastes different at the start and end.

Sip The Rest Of Your Glass Slowly

It seems obvious, but chugging your glass doesnt help you taste the subtle flavors any better.

A really good wine will change its characteristics as it sits in the glass. The longer it is exposed to air, the more flavors emerge.

I find this especially true of white wines, which often develop a more tropical, fruity flavor the longer they are left out to warm up and settle.

This is a great area to experiment and see if different temperatures and different breathing times affect your appreciation of the wine.

What Makes A Wine Dry Or Sweet

The term dry, when talking about wine, refers to the taste it leaves in your mouth because of the amount of sugars remaining in the wine after fermentation.

During the winemaking process, the sugars in the grapes are converted into alcohol using a fermentation process. The longer the sugars ferment for the less residual sugar that will be left in the wine in the end, thus making the wine more dry.

In short dry equals little to no residual sugar in the wine.

Sweet wines are just the opposite.

A sweet wine is a wine that retains some of the residual sugar from the grapes during fermentation. The more sugar that is left over in the wine, the sweeter the wine will be.

One common misconception with dry wines is that they tend to dry out your mouth, or make your mouth feel strange when you drink.

This actually has nothing to do with the being dry itself, and more to do with the level of tannins in the wine.

Red wines like Cabernet Sauvignon, tend to have a higher level of tannins, which is what gives your mouth that strange feeling when drinking .

So while the tannins in a wine may make your mouth feel dry, thats not what makes a wine dry. High level of tannins and low levels of residual sugar do not necessarily go hand in hand, even though it seems like high tannin red wines also have a dry taste to them.
