What Is Residual Sugar And Why Is It In Wine

Wine is a fermented beverage and begins of course with a base of grapes, which are naturally high in carbohydrates due to their sugar content . During the fermentation process, the yeast eats the sugar, and produces alcohol, heat and CO2 . Any leftover natural sugar creates the overall carbohydrate content of the wine. Sweet wines, such as Port or dessert wines, have a high carbohydrate content. The sweeter the wine , the higher the carbohydrates. But dry wines, with little or no residual sugar, have lower carbs. These wines that are fully fermented, where virtually all sugars are consumed, have the lowest carbohydrate count. There are some sweet wines that have added sugar, or dosage that causes secondary fermentation in the bottle such as in a sparkling wine, but most of the sugar content in a wine is residual sugar. For the driest sparkling wine options, look for wines that are marked brut or extra brut.

How Much Sugar Is Typically In Wine

Sugar content in wine can vary dramatically. Some wines are completely dry, with zero grams of sugar per liter, while especially sweet dessert wines can have more than 100 grams of sugar per liter. While there are no official definitions for sugar content in wines, this is an approximate range of sugar content based on wine style:

Dry wine: 0-11 g/L sugar

Semi-dry wine: 12-35 g/L sugar

Medium wine: 36-70 g/L sugar

Dessert wine: 71+ g/L sugar

Fermentation is the biggest determining factor in wines sugar content. As wine ferments, yeasts convert sugar to alcohol. With enough time, the yeasts will eat up all the sugar, leaving nothing left. This process is called full fermentation.

Full fermentation is fairly uncommon. Most producers stop fermentation early by adding sulfur dioxide to wine, killing off yeasts before they can convert all the sugar into alcohol. Allowing wine to ferment completely takes time. For the sake of faster production, many commercial winemakers cut fermentation short by sterilizing their wines, killing off yeasts before they can ferment all the sugar in wine. Shorter production cycles allow more profits. Cutting off fermentation is also one way to control alcohol content, and lower-alcohol wines are taxed less. Many producers stop fermentation early to minimize the tax rate on their wines.

This time of year, a lot of people are watching their sugar intake. If thats you, here are some fabulous low sugar wines and a few that taste dry but arent.

First some basics. Wine is obviously made from grape juice that has been converted into wine through fermentation. Fermentation happens when yeast consumes that naturally occurring grape sugar, leaving behind alcohol. Any sugar that remains after the fermentation process is called residual sugar. And winemakers sometimes add sugar or grape juice concentrate to achieve better balance in a final product.

A wines sugar contact is measured in grams per litre . A wine with say, two g/L of sugar is obviously drier than one with 10 g/L. But theres a catch. The latter may still actually taste quite dry if the acidity is high. Thats because acidity hides sugar. Its why many sparkling wines labelled brut, for instance, taste dry but can have as much as 12g/L of sugar.

Even some bold red wines can seem dry despite containing a whack of sugar. The wildly popular Apothic Red Winemakers Blend from California clocks 16g/L, making it technically semi-sweet. Same thing for the popular Meiomi Pinot Noir from California with its 17g/L. But many people, when asked, would say theyre dry. The other structural components can give that impression.

With that out of the way, here are some wines in a range of styles with very low levels of sugar, starting with a sparkling wine from Ontario.

Natural Wine 101: How can wine be sugar free?

Statistically Sugar Free Wine

They test their wines in a lab or fructose and glucose, the two sugars found in wine. All of their wines are < 1g/L of total sugars, statistically sugar free. These low/no sugars are naturally occurring, nothing added or taken away. Ethyl alcohol is carb free. Carbs in wine come from the sugar content, as their wines are statistically sugar free, they are also statistically carb free.

Mycotoxin/Mold Free

All of their wines are tested for the mycotoxin Ochratoxin A. All of their wines meet the E.U. standard for screening at less the 2 parts per billion of OCA. There is no standard or testing of U.S. Wines for OCA. OCA is a known carcinogenic. To give you a reference point, the E.U. allows OCA in coffee up to 10 parts per billion.

Low Alcohol

Wines can range in alcohol from 7 24% alcohol by volume. However, the US Government does not require alcohol levels on the label to be accurate. It is simply stated and there is ZERO U.S. enforcement for accuracy. Dry Farm Wines test every wine to verify it is at or below what is stated on the label and their wines do not exceed a naturally occurring 12.5% alcohol. They do not select wines that have been processed with artificial alcohol reduction techniques.

Sulfites

The US government restricts added sulfites in wine to 350 ppm . For now, they have created a standard not to exceed 75 ppm in their wines. Actually most of the wines they represent are below 50 ppm.

In fact, its one of the best we tasted, this wine has a complex flavour. We picked up aromas of apple and honey, but it also has a refreshing finish. It would pair well with chicken and fish. Despite being having only 84 calories in a glass it certainly doesnt compromise on flavour.

Oddbird Sparkling Rose

Another lovely French rosé, but this time with the alcohol removed so everyone can enjoy it. Oddbird Sparkling Rosé is described as having Sophisticated tones of Granny Smith apple, Citrus and Summer berries. With a very fresh taste of berry with a touch of sweetness there are hints of strawberries, red currants and citrus.

Why Choose A Low

While the sugars found in your favorite glass of wine may be natural, there are many reasons to monitor your sugar intake.

Those who have diabetes, follow a keto or low- carb diet, or experience chronic hangovers may benefit from seeking out a bottle of wine with less sugar. While many wine aficionados point to studies that show wine in moderation can be good for your health, that’s not an excuse to drink with abandon.

The 2015 Dietary Guidelines for Americans recommends limiting sugar intake to no more than 25 grams a day. An average glass of red wine contains about 0.9 grams of sugar, so if youre going to have 1-2 glasses a day , choosing a low-sugar wine could be the way to go.

Its also possible that high-sugar wines are making your hangovers worse. Because sugar and alcohol are both processed through the liver, studies have found that consuming alcoholic drinks with higher sugar content could cause worsened hangovers.
