As mentioned in the beginning of this article, opening a winery is not a cheap task. It takes large financial investments to open a winery, and does not offer immediate sources of income. Grapes take time to grow around five years and wine takes additional time to age.
Therefore, while you may have a great plan to make money in the long run, you have to be prepared to be at a loss when opening your winery. Your business plan is a great source to figure out your budget and how it will be distributed among all your costs.
Why Dont You Use Campden Tablets
If you have dabbled in winemaking, you may have heard of a frequently used additive called Campden tablets. They are sodium or potassium metabisulfite tablets that are used to sterilize wine at various stages during the winemaking process. They kill off all the yeast and bacteria.
Why would you want to do this? Well, for some people, they want to have a completely sterile process to start off with . Some people also use them to stop fermentation before its complete if they want to achieve a certain level of sweetness. And some people also add them to the wine just before bottling to make certain fermentation is over to avoid making bottle bombs.
I personally do not use Campden tablets. Mostly because I just dont find that I need them in my winemaking process, but also because I enjoy including wild yeasts and bacteria in my creations. There are tons of resources on the internet about using Campden tablets if stertilization is of interest to you.

Organize Your Portfolio Of Products
Your brand portfolio of products should be easy to understand and sell. For example, say that you are a winery in Sonoma. You might offer a Pinot Noir, a Cabernet Sauvignon and a Zinfandel. And then, for each of these, you might offer a Reserve version priced at a slightly higher price point. That leaves you a relatively simple portfolio of six red wines. Over time, you might add new wines, such as a Chardonnay, in order to appeal to a larger customer base.
When putting together your portfolio, just be aware that you will probably not use the same portfolio for every market you are trying to enter. For example, if you are a craft brewery, and you are trying to enter a market that is saturated with local craft breweries, you are probably going to need something new or exotic or even crazy in order to break through with local drinkers. The same is true if you are a Washington State winery trying to breakthrough in the nearby California market. What can you offer that California wine drinkers cant already find from local Napa or Sonoma producers?
Also, keep in mind that, over time, you will need to come up with the timing of new products in order to keep everything fresh in the minds of consumers. For example, the traditional timing involves a core portfolio , a seasonal portfolio , and a limited release portfolio of rare, exceptionally high-quality or just plain unique offerings.

Creating And Selling Your Unique Wine
Branding and bringing your wine to market as an independent company is a bit different from operating a winery. Laws regarding the licensing required to make and sell wine vary from country to country, so be sure to thoroughly check your local laws.
If you want to sell your wine commercially in the United States for example, youll need to apply for a permit to do so from the US Department of the Treasury Alcohol and Tobacco Tax and Trade Bureau. You can find all the information you need about this type of permit on their website.
Youll also need a facility to actually produce the wine. For most up-and-coming wine brands that are just starting out, the answer is a custom crush facility. A custom crush facility is a bonded winery that does the actual manufacturingand sometimes, the bottling and labelingfor you. Youre still responsible for obtaining all required permits to manufacture and sell wine all the facility does is provide the space and equipment you need to manufacture it.

How Do You Know The Alcohol Content Of The Wine
This is an arena of winemaking where I lean more toward the heritage winemakersI do not take alcohol readings on my wines. I never set a goal for how much alcohol I want my wine to haveI just like to let the wine develop into what it wants to develop into. I honestly have no idea how boozy my wines are other than to be able to take a sip and say, Yup, thats a strong one!
Many people who make wine at home take specific gravity readings using a hydrometer throughout the winemaking process to determine the fermentation levels and alcohol content. Ive done it in the past with batches, and its definitely interesting information to have, especially when you are starting out! However, my goal with learning how to make strawberry wine was to keep the process fun, simple, and light, and doing specific gravity calculations is not my brains idea of carefree.

How To Make The Best Mimosa
- Start with cold ingredients, and keep them chilled. Warm mimosas are not nearly as refreshing.
- Serve mimosas in Champagne flutes. Their tall design helps retain bubbles. If you dont have those, use wine glasses.
- Pour in the sparkling wine first. Otherwise, the wine/orange juice mixture might overflow and make a mess.
- When pouring the wine, hold your glass at a slight tilt to preserve carbonation.
- Dont stir your mimosas! The pouring action alone will mix your drink, and stirring them will release more bubbles.
- To garnish or not to garnish? I like my mimosas as simple as possible, so I dont garnish my drinks. You could, however, dress up the rims of your glasses with an orange twist or a cute little orange wedge, like Ali does here.

When your secondary fermentation is over, its time to taste that wine! In general, fruit wines need time to age before they are really delicious, so dont be too concerned about the flavor profile yet. What you are concerned about right now is sweetness. If you taste the wine and are happy with the sweetness, you can move onto Step #5!

How Do I Make Sparkling Wines
Country wines and fruit wines are traditionally still wines . Making a sparkling wine is a bit of an advanced technique that requires a good knowledge of how yeast works, the fermentation process, and advanced bottling techniques. We recommend tackling it only after youve mastered a still wine like this strawberry wine. When youre ready to move onto sparkling wine, Wild Wine Making has some great information about that process.
A Primary Fermentation Container:
The size is important. I recommend it be at least 40% bigger in volume than what youd like your final amount of wine to be. Why? Because your primary fermentation will have fresh fruit in it, which well later filter out. Also: during the initial fermentation, the yeast can get quite overzealous, and youll need room for all the bubblesplus, extra room gives the yeast extra oxygen to work with! The strawberry wine recipe below is for a one gallon batch, so your primary fermentation container needs to be at least 1.4 gallons in size.

Identifying Whos Drinking Your Wine
