Paso Robles Cabernet Sauvignon

Francis Ford Coppola Winery: Director’s Cut Cabernet Sauvignon

As Paso Robles, California has soared in number of wineries and gained in popularity, Cabernet Sauvignon has firmly taken root as the regions number one varietal. Alone, it accounts for just over 40% of plantings and is grown throughout both the western and eastern sides of the appellation. Though viticulture here dates back to the 18th century, Cabernet Sauvignon didnt emerge as a significant grape here until the 1970s. But since then it has definitely made up for lost time.

Legendary winemaker and consultant Andre Tchelistcheff first recognized Pasos potential with Cabernet Sauvignon in the early 1960s. The calcareous soil and dramatic diurnal temperature changes of Pasos westside particularly intrigued him. Today modern winemaking techniques and focused experimentation with various clones, rootstocks and vineyard strategies optimize the region’s ideal combination of soil and climate to deliver the best fruit possible.

The results are evident in the glass. Paso Robles Cabernet Sauvignon can be mesmerizing, with rich aromas and flavors of blackberry, cassis, black cherry, graphite, toasty oak, vanilla and spice. The structure, balance and unbridled opulence of these wines impress from first sip to last. Not surprisingly, Paso Robles Cabernet Sauvignons have steadily grown in reputation, not just in the U.S., but around the world.

Where In California Is The Wine Country

The Californian wine country is in the North San Francisco Bay area, with over 800 wineries located all along this scenic route. The Bay area encompasses some of the world’s most famous wine regions, including Napa Valley and Sonoma.

The success of these famous regions within the Bay area is largely to do with the sound soil composition and ideal climatic conditions. Each region is fortunate to have a wide range of temperatures and soil types, allowing the brilliant variety of grapes to thrive here.

Francis Coppola Cabernet Sauvignon Review

Starting off, the cork was in very tight. However, it came out fine with a normal saturation of wine on the end.

Appearance of the Francis Coppola Cabernet Sauvignon was deep ruby in color.

For such a bold appearing Cabernet Sauvignon, it was not at all leggy in the glass. More so, a sheeting action was noted.

What I found most interesting about this wine was its aroma. It was typical of a Cabernet and had little sting of alcohol. However, it seemed to have an aroma of clove and melted butter mixed in. Some of the melted butter aroma could have been due to aging in oak.

I later read other reviews and noted that other people had noticed something similar. Not unpleasant in any way, but interesting nonetheless.

On the palate, the wine gave forth a burst of blackberry and spice. It was somewhat dry and with a velvet like mouthfeel.

Tannins were evident and enjoyable.

Finish of the Francis Coppola Cabernet Sauvignon was short to medium.

Overall, I thought this was an enjoyable wine. The wines unique aroma was my favorite part of this wine. Admittedly, I was hoping for a longer finish. However, all in all Id say give it a try!
