Whats it really like to work in the wine business? Is it all glamorous private tastings, fancy lunches, and lush vineyard tours? In most cases, absolutely not. This week, I caught up with former New York Sommelier Christopher Walsh, who made the jump to wine production in 2014.

Today, Walsh works as a cellar hand, the proverbial cellar rat, scurrying between barrels day after day at Easton Wines, a family-owned winery in rural California. Though the term cellar rat often conjures images of dank, moldy European cellars and lots of tasting, the job rarely takes place in a classic underground cellar, and is more likely to involve removing mold than reveling in it. And as Walsh pointed out, theres shockingly little tasting.

    Like all Cellar Rat wine, POCO LOCO is made with 100% Texas fruit. Its a blend of 50% Sangiovese from Alta Loma Vineyards + 25% Counoise + 25% Cinsault, both from Farmhouse Vineyards. This blend of grapes is not very common, which is why it may seem a little crazy.

    What weve created is a blend that is fruit-driven, great with and without food, dry, drinkable red.

    What To Expect

    Varying Temperatures

    It is Texas, afterall. However, some tasting rooms are kept at cool temperatures throughout the year. We recommend wearing layers so youre comfortable along the way.

    Standing Tastings

    Not all tasting experiences require guests to stand however, some are so we recommend wearing comfortable shoes, just in case.

    Punctuality

    Because we make appointments and arrangements in advance in order to receive the highest level of experience, we will adhere to a set schedule. Out of respect for the wineries and other guests, punctuality for your scheduled pickup time is paramount to keep us on track.

    Behavior

    We want to ensure your time with us is a great memory, not a fuzzy one. We also want to show the utmost respect to our friends at the places we visit. If anyone in your group is asked to leave, is cut-off or is disrupting our other tour guests we will conclude your time with us and youll be responsible for finding a ride to your pickup destination.

    Were not a party bus

    We want to ensure everyone in the tour group gets the best experience possible. Although we take having fun very seriously, we will not allow any open alcohol in our vehicles.
