In 1856, Perrier-Jouët became the first Champagne house to create dry Champagne. This idea resulted in them making their famous “brut”type of Champagne known today all over France and abroad.

This famous French wine has been crafted from carefully chosen vineyards across the country to ensure that it displays both quality and diversity. The blend features 50 different crus or portions that represent their winemaking tradition.

How To Drink Ace Of Spades

The Cattier Champagne house recommends a serving temperature of 6-8 centigrade. This can be achieved by placing the bottle in the refrigerator overnight or place in an ice bucket for half an hour before opening.

Its a Champagne thats fussy in the best way possible, only releasing bottles in the years when its vineyards are of optimum quality and selling on its grapes to other brands when they dont quite make the mark. Its also a vintage Champagne, meaning each bottle of Dom Pérignon contains grapes only from a single year.

And you cant forget that Richard Geoffroy, chef de cave of Dom Pérignon, only releases the wine in vintages that will age more than 20 years. Each bottle is aged for a minimum of seven years, while others are hidden away for much longer. If you come across a bottle with P2 or P3 on the label, its a vintage thats a second or third release, respectively.

Typically, a bottle goes on sale after nine years, before a second wave comes at around 18 years and a third at around 25 years.

The Armand de Brignac more commonly known as the Ace of Spades was launched in 2006. In a video by Jay-Z Show Me What You Got released in October of that year Jay-Z is seen refusing a bottle of Cristal before he accepts the lavish gold Armand de Brignac bottle presented in a case.

A Brief History Armand De Brignac

Armand de Brignac is a prestige Champagne produced by the Cattier family who has a history as an elite Champagne house in the tiny village of Chigny Les Roses. They have owned and cultivated the family vineyards since 1773.

The original de Brignac name was registered by the Cattier family in the late 1940s. Jean-Jacques recalls that it was chosen by his mother who had been reading a novel featuring a character named de Brignac.

It remained dormant for decades until at the turn of the 21st century the Cartier family began to set aside parcels of reserve wines for a new prestige Champagne Project. The first bottles of Armand de Brignac Brut Gold left the cellars in France in 2006.

The original registered name de Brignac was changed to Armand de Brignac for the new Champagne. This was required by the French Industry Group Comite Interprofessionnel du Vin de Champagne to avoid confusion with the village of Brignac just outside the Champagne Region.

Industry sources cannot agree whether Jay-Z had a financial stake in Ace of Spades from 2006 when Armand de Brignac Brut Gold was first introduced to the market, but he bought the company outright from Sovereign Brands in 2014. In 2021 he sold a 50% stake to Moet Hennesy the wine and spirits arm of LVMH.

The five Cuvee in the Armand de Brignac use the traditional Champagne grapes: Chardonnay, Pinot Noir, and Pinot MeubRnier.

Pairing With Dark Chocolate

The dry tannin profile of a bittersweet 70 percent or higher dark chocolate may be even more challenging to pair with champagne because of its lack of sweetness. But if you are looking to give it a try, a Brachetto dAcqui or a sparkling Shiraz are good choices both are slightly sweet with a bit of bubble.
