Add Sachet 2 Stabiliser
Add sachet number two or one and a half teaspoons of potassium sorbate and stir with your sterilised stirrer. Some methods say to stir or shake the CO2 out of the wine at this stage, others say you don’t need to do this, particularly if you are planning to allow the wine to mature for some time. CO2 is added to the wine when it is fermented by the yeast. It increases the acidity as it is dissolved as carbonic acid in water. It easily leaves the solution into the air when stirred or shaken. However, if you remove all of it you can end up with a flat tasting wine. I decided to leave mine to stand so the CO2 left left slowly of it’s own volition.

Installing A Water Lock
In order to prevent your homemade grape wine from souring, you should secure it against air-influx and provide an outlet for the main fermentation product carbon dioxide. This can be achieved by installing one of the designs of a water lock on top of the juice container. The most popular one is a classic water lock consisting of a lid, a tube, and a jar .
A simple medical glove with a hole in one of the fingers proved to serve well at home too.
The design of a water lock is not critical, but installing classic water lock on bigger containers is much more convenient. Using gloves is good for smaller containers.
Why Bother Making Your Own Wine
I live in an Islamic country where wine is not a supermarket commodity. But in most countries, wine is a supermarket commodity, in which case, why make your own? You will have your own reasons for making wine from grape juice, but here are a few of mine:
- Its a fun time, feels creative and fills the kitchen with summery smells.
- Its very cheap, wholesome and surprisingly good.
Guaranteed! This wine will contain no chemical additives or artificial preservatives. That is a promise you will not hear from many commercial winemakers. Your wine is made with pure fruit juice and therefore , will do you nothing but good.

Homemade Grape Wine Recipe
Alright, now that we have all our ingredients and equipment ready, lets get down to it. Well explain all the itsy-bitsy details of how to make homemade wine without yeast.
Step 01 Sterilize
Apply light sanitizer over all your equipment and utensils. This makes sure that no unwanted bacteria or microbe is present within the fermentation process that might disrupt the wines taste. DO NOT sanitize the grapes, though!
Step 02 Crush the Grapes
Take the large glass or ceramic jar youre going to use as the fermentation chamber and place all the grapes inside. Now its time to get your hands dirty.
Use your hands or whatever means necessary to crush the grapes completely.
This will bring out all the sugary juices and extracts from the grape flowing outside and in contact with the wild yeast.
Repeat the process until you feel that the grapes have been crushed reasonably enough.
Leave the stems within the jar as they contain a compound called tannin. Tannins help in achieving a better wine texture.
Step 03 Add Sugar or Honey
If youre having trouble getting the wild yeast to start fermenting, adding a few helping hands is always a good idea. But that doesnt mean that well add extra yeast.
Adding a teaspoon of organic honey and sugar will work as excellent organic catalysts for the wild yeast and help kick-start the process.
Step 04 Cover and Wait
Use a piece of fine muslin cloth or something similar to cover the moth of the jar. Secure it further using rubber bands.
