Typically brandy is made by distilling wine more than once. This means that you will put in a large amount of wine for a much smaller amount of brandy, but the brandy will have a higher ABV .
It is important to note that if you have tried to ferment wine in the past and it has not worked, it is not possible to turn that wine into brandy. However, it is certainly possible to use cheap wine to make brandy, especially since we will be flavoring it afterwards.
Whether you use white or red wine you will still end up with a clear liquid. This is because you are simply distilling the ethanol out of the liquid and leaving the rest in the still. These liquids will always come out clear.
Not Ready To Distill You Can Still Make This Recipe
Are you still with us? This process seems complicated but really is not. The more you distill, the more comfortable you will become fractionating. It will get easier and easier. Plus you will have the satisfaction of turning cheap wine into delicious brandy.
The other consideration is that it does take a lot of wine to make brandy. In fact, the distillation process will knock down your input so that it roughly takes 9 gallons of wine to make one gallon of brandy.
For this recipe, it will take three cups of brandy to make this infusion. If you want to diffuse it from wine, you will need to diffuse about 9 litre bottles. Of course, you can always cut down the recipe and make a smaller amount, or buy a cheap bottle of brandy. The important thing is that you have options and know how to make it yourself.

If You Dont Add Yeast How Do You Get A Good Wine
So if you dont add yeast to your blackberry wine than how would you end up with a good tasting wine? The short answer, which we mentioned above, is that yeast will be naturally added to the blackberry wine.
Once a few cells of the wild yeast make it to your blackberry juice, then it becomes party time. A wine fermentation will ignite with the natural yeast. Slowly, the yeast will start to consume the sugars and use that for energy to multiply themselves into a larger colony. As the colony becomes larger the growth will slow down and the focus will turn to the productions of alcohol. This is how a wine ferments without adding yeast.
Now with all of that said, when you make a blackberry wine without yeast your flavor could change from one batch to another. There are thousands of different yeast strains, and each strain can have varying mutations. Depending on which yeast strain starts the fermentation process has a large influence on the flavor profile youll end up with. You might see this as an advantage or disadvantage. Its kind of like the old Forrest Gump line: My mama always said, Life was like a box of chocolates. You never know what youre gonna get. Well, this is kind of the case with blackberry wine without yeast. You dont always know exactly what youre going to get for flavor.
Bottling The Final Product
The amount of time you let your demijohn sit, the drier your final wine will be. If you prefer a sweeter drink, you can start the bottling process two to four weeks after racking. For a drier wine, leave the demijohn to sit for longer. How do you know if you like the taste? Simple, its finally time to sample your creation! Taste your blackberry wine, to see if it fits your preferences. To sweeten the blackberry wine, feel free to add sugar syrup, or concentrated red grape juice.
If you prefer a drier blackberry wine, you can continue to let the mixture to sit for up to 8 weeks, until it reached your preferred flavor. Its not recommended to leave your wine for any more than 8 weeks, as at this point theres a chance an acidic taste will form. When youre happy with the way your blackberry wine tastes, complete the racking process one final time. Ensure you use proper sterilization as always.
Use a siphon tube to transfer your finished wine from the demijohn into bottles. With our recipe, you should have produced 6 bottles of delicious blackberry wine. Seal your bottles with corks or screw tops, and then its time for the final tantalizing wait. Make sure to label your wine bottles with the date and contents so they dont get mixed up in your collection. If you can manage it, wait a few weeks before opening your first bottle. Your homemade wine is ready to drink now, but hold back just a little bit longer to improve the flavors.

A good grape wine needs to start at a minimum of 20° Brix to generate about 11% alcohol and in addition will need at least 0.5 – 0.7% Titratable Acid for an acid balance in the finished wine. These amounts will taste good without overpowering the flavor or aroma with alcohol and tartness. So with those parameters, we can create our recipe to reproduce those conditions.
Always Remember To Sip With Caution
Most cocktails made with moonshine are extremely potent. As brandy is made from distilling wine, the ABV will go up with each distillation. The amount of output will go down with each run, but the strength of your brandy will go up. As this brandy will be infused with fruit and sugar, it may not taste as strong as it actually is. How To Determine Cuts And Fractions In Moonshine
Finally, it is important to note that fruit based distillations will produce more methanol than usual. If it is your first time distilling, be sure to familiarize yourself with our steps on how to fractionate your yield into foreshots, heads, hearts and tails. This is important as drinking methanol is not recommended and will cause a wicked hangover.
There are three different ways to determine whether your output is foreshots, heads, hearts or tails. You can examine the temperature of your still, the appearance of the output or the ABV.
Distillation will produce a few different elements, however, moonshine is only the hearts or ethanol. So keeping a steady temperature and monitoring temperature closely is essential in fractionating. By referring to the chart below you will be able to more or less pinpoint what the output could be.

Tips For The Best Wine
People arent the only creature that enjoy eating blackberries. If you have a problem with birds eating from your bushes, cover the bushes with a net before the berries grow in order to protect them from birds.
This is important because once the berry is open and exposed after an animal has gotten to it, the berry starts to ferment. If you have fermented or old berries picked for your wine, it will affect the taste.
This recipe can be used for a variety of berries! Strawberries, raspberries and blueberries are some of the best berries to make wine with.
This process is best done in a garage or area that can be stained. If you want, put down a tarp to protect the floor from stains. Also wear clothes that you can get stained whenever you work on the wine.
This wine will turn out dryer than you probably expect. While most good wines tend to be on the dryer side, some people have a bit of a sweet tooth. If you do want to add extra sugar, do so after fermentation is completely done.
If you add in extra before fermentation is complete, you could possibly cause an explosion in the 5-gallon bucket or cause secondary fermentation to occur within the bottle, creating sparkling wine. If you typically like sweeter wines, give this recipe a go as is. This will allow more of the blackberry and fruit notes to come forward.
Want a slightly darker wine? Leave your freshly blended berries in the 5-gallon bucket for 2 or 3 nights instead of just one before you strain out the cheesecloth.
