If youre wondering which wine to pair with curry, youre not alone. There are probably more opinions about the matter than there are types of curry from wine is never a good idea* to *any wine you like*.
3 tips to bear in mind when you’re pairing wine and curry
There are three things to think about
* How hot the curry is. Clearly its easier to match wine with a mild curry than a searingly hot one.
* How many other dishes youre serving and how hot they are. Its easier, in other words, to think about a wine that will go with the whole meal rather than one element of it.
* and what type of curry youre talking about – Thai and Malay curries, for example are different from Indian curries with their warmer spices. And home-made curries tend to be hotter and pokier than shop-bought ones or ones made from a bought curry sauce.
What you need with curry – and this is why cold lager and lassi work so well – is a refreshing contrast to the heat of the food. A touch of sweetness helps, particularly with hotter curries and green curries as does a fresh, palate-cleansing acidity.
What doesnt work so well – in my opinion at least – is tannin and high alcohol which can emphasise and unbalance the spice in a curry. So although ripe fruity reds can work – especially with meaty curries like rogan josh – you dont really want a 15% oaky monster.

Today is International Grenache Day, a celebration of a grape which is responsible for some of the most generous and appealing reds in the wine world.
As usual its hard to pin down a definitive style but its fair to say grenache is usually full-bodied, soft and low in acidity. Some grenaches are pretty powerful – usually due to natural bedfellows like syrah and mourvèdre being blended in – others, like Côtes du Rhône, are easy-drinking.
Its natural homeland is the Southern Mediterranean, especially France and Spain where it is called garnacha but there are some fine examples from Australia, California and Washington State. Its a great wine for this time of year.

How Is Ros Made
Rosé sits in the middle of the white-red wine spectrum.
Many people mistakenly think that rosé is a blend of finished red and white wines. It is not. In fact, in France, such practice is illegal – except in the Champagne region. And even there, this blending is rarely used.
Rosé is instead made by altering or shortening a key step in the making of red wine – the “grape skin contact” stage. The winemaker incorporates the red-color of grape skins during winemaking, and stops that process before it fully goes to red-wine levels.
Here’s the thing — nearly all grape varietals yield clear juice. The color in nearly all wines comes from the skins, not the juice. With a rose, the color usually comes from grape-skin-contact with the juices, but the process is aborted before it would qualify as a red wine:
As a result, a great Rosé has the body of a red wine. But it’s served chilled, and is extremely refreshing.
Common varietals used are Grenache, Pinot Noir, Zinfandel and Tempranillo. The most common terms used to describe the flavor profile are grapefruit, strawberry, raspberry and blackberry.
