There are no hard and fast rules for pairing wine with pork, but rich whites and juicy reds tend to work well, contributing editor Matt Walls said in 2019.
Is pork a white or red meat? Nutritional studies class pork as a red meat, despite its relatively light appearance and a renowned advertising campaign by the US National Pork Board entitled the other white meat.
For wine pairing its important to think about the cut of the pork, the way its cooked and especially what sauce you are serving it with, said Jean-Baptiste Lemoine, head sommelier at the Goring, also speaking to in 2019.

My first rule of pairing food and wine is to eat and drink what you like. Beyond that, its useful to think about either matching or contrasting flavors, weights and textures and balance the intensity of the food and the wine.
That means that as with most foods, what you pair with pork depends on how its prepared and what its served with. Pork can mean anything from ham or bacon to tenderloin, chops or grilled ribs. That means the range of wines that pair with pork can range from crisp whites to lighter reds, medium-bodied reds or even rosés. I will say that outside of pork belly and sausages, most pork is considerably leaner than red meat, which means young, bolder tannic reds will typically not be a great match.

My parents recently went to a supper club organised by a former MasterChef contestant. They were sent the menu of slow-cooked pork belly in advance in order that they might take their own wine. Then add your chopped shallots, garlic, sage, and salt. Let it mix until the vegetables soften and the sage starts to fry . Then pour in the wine and let it simmer one more minute. Thats it! So simple and it adds incredible flavor to your pork chops. Total time is about 9 minutes.

Should You Pair Pork With Red Or White Wine
The general rule of wine pairing, with several notable exceptions, is that red wine pairs with red meat, and white wine pairs with white meat and white fish and seafood. Technically even though when cooked some pork, like porch chops can appear white, its technically pink meat. While both white and red wines can work in various cases, a general rule of thumb is that light red wines work for pork, so long as they are not overbearing.
However, with some cuts of pork, a sparkling white wine with a touch of sweetness like a sweet Riesling works, as does bolder, dry wines with a smooth finish, like Chardonnay. White wine either needs a touch of sweetness or a smooth richness to it.
