Most chefs are rarely, if ever, using a product that says ‘cooking wine’ on it. It is a dying thing, says sommelier John Laloganes, director of beverage management at Kendall College in Chicago, where he oversees the wine professional program. These are just low-quality products. If they care about food, theyre not going to use that.

In addition to sporting the term cooking wine, these wines might tout words like Burgundy or premium quality that make them sound fancy or at least sound legit. Its just branding, marketing, and garbage, says Laloganes, who adds that as the market for decent wines at lower price points has grown in recent years, giving consumers more choices, makers of the bottom-of-the-barrel stuff have had to find other things to do with their products. What Is Shaoxing Wine

Shaoxing wine, or shàoxng ji , is a type of Chinese rice wine that hails from Shaoxing, a city in Chinas Zhejiang Province famous for rice wine production. Its a key ingredient in many dishes and will create that authentic restaurant flavor you may have found difficult to replicate at home.

With early records mentioning it over 2000 years ago, Shaoxing Wine is one of the oldest forms of rice wine in China. The production process involves fermenting rice, water, and a small amount of wheat . Clear rather than cloudy, it has a dark amber color, with a mildly sweet, fragrant aroma.

Aged Shaoxing wine can be consumed as a beverage, usually warmed beforehand. For cooking, however, we use lower grade Shaoxing wine with added salt to 1) avoid an alcohol tax and 2) allow it to be sold in regular grocery stores.

This amber-colored rice wine differs from clear rice cooking wine, or mji , in that it has a more complex and deeper taste.
